Whip Up a Tropical Delight: Indulge in These Irresistibly Soft and Flavorful Mini Cakes!

Hello everyone today I’m going to show you how to make mini vanilla mango cakes because these are mini cakes you’re going to need to get out five mini cake pans to prepare the cake pans Grease the bottoms and the sides with coconut oil then line them with parchment paper rounds to create the parchment paper.

Rounds what I do is cut out little squares that match the size of the cake pans and then I fold those squares in half and then the half in half again to create a quarter and then using one of the corners of the cake pan cut out a curve uh to match the cake pan and then when you once you unfold it you’ll find that it matches the same size as the.

Bottom of the cake pan and that’s how you line them with parchment paper it’s a bit complicated but it’s also quite simple so uh yeah and if they’re too big you can also trim them a little bit and just do this to the rest of the cake pans to fill the mini cake pants that you worked so hard to line with parchment.

Paper um you’re going to make the vanilla sponge cake first thing you need to do is to separate four egg yolks with four egg whites place the egg yolks in a medium bowl and the egg whites in the bowl of your stand mixer I recommend to separate the egg whites one by one in case a yolk breaks and if a yolk breaks it kind of kills the egg whites so you.

Don’t want to ruin all the egg whites you work so hard to separate um so yeah first do that and then you’re going to add the sugar to your egg yolks add in 1/4 cup also known as 4 tbsp of granulated golden cane sugar add in a pinch of salt and half a teaspoon of vanilla.

Extract with your electric hand mixer wh the egg yolks until nice and fluffy and much paler then to your egg yolks that you have thoroughly whipped beautifully you’re going to add in 1/3 cup of white rice flour oh oh and also you can see on the side that my El that my electric stand mixer is whipping so before you.

Whisk in the white rice flour whip the egg whites on high speed and when it’s frothy drizzle in 2 tablespoons of granulated golden cane sugar until it’s nice and fluffy white and soft just like that then gently fold in the egg whites into the egg yolk mixture to form your cake batter e.

With an ice cream scooper um once your batter is finished and complete you’re going to scoop the batter into each cake pan place the cake pans onto a cookie sheet tray and bake it at 350° f for 15 minutes once the cakes are ready and cooled release them from your cake pans and.

Place them onto a cooling rack since these are vanilla mango cakes you’re going to top them with canned or fresh mango chunks and then you’re going to make the coconut whipping cream that goes in between the sponge cake and the mangoes and it’s very delicious first scoop in 1 can of coconut whipping cream into a.

Bowl half a tablespoon vanilla extract and sift in half a cup of powdered sugar whip it all together until nice and fluffy and smooth transfer the coconut whipping cream into a beautiful star tipped Piping Bag and pipe it onto your mini cakes however you like e.

Top them with mango and what you’re done you just made mini mango vanilla cakes and um yeah I hope you enjoy this recipe and this video and yeah uh thanks so much for watching bye
