Indulge in Decadence: A Guilt-Free Delight for Every Sweet Tooth!
Let’s Make My Vegan and gluten-free chocolate cupcakes these are moist and absolutely delicious gluten-free vegan baking can be tricky often times you get really dry result because of either the flowers that you’re using or the recipe gluten-free vegan can lead to a lot of dry because there’s no gluten holding all of that moisture together to.
Counteract all of this we add a lot of air to the batter just before baking you also add a lot of moisture in your fat sometimes I also bake by putting a parchment sheet on top of the batter to reduce the moisture R during baking there are four ways you can add a lot of variation to the batter just before it goes to bake one is to add some citric.
Acid to the dry ingredients the citric acid will immediately react with the wet ingredients when you mix the batter and add a lot of air to the batter and then you immediately bake that batter you can also use Aqua Faba you can RP up some aqua Faba to make nice Peak and then fold all of that a and mixture into your batter and then bake you can also add.
Some vinegar in the middle of the batter and then sprinkle baking soda right on top and then they both will start reacting and you fold all of those bubbles into the batter and the third one is to add club soda or any fizzy drink and then fold that into the batter just before baking I’ve tried Aqua FAA before I haven’t liked the inconsistent.
Results with aquaa I’ve tried citric acid before I’ve also tried baking soda and vinegar but uh the baking soda also tends to add a little more of the baking soda flavor to the baked goods so my current favorite way of making gluten-free vegan baked goods is to use some some kind of irated drink or club soda in the batter I replace some of the.
Liquid with the club soda and this gives fabulous results every single time today we are making a batter with some almond flour and potato starch and some non milk oil and club soda and making this really Airy batter that we add to a mini muffin tin or a regular size muffin tin to get these really tall cupcakes if you’re using old muffin liners don’t.
Forget to brush them with oil before adding the batter that way they will release much more easy easily you want to do this with uh gluten-free vacan baking because the cupcakes are a bit more delicate than your regular cupcakes so you don’t want to be struggling to remove the cupcake liner and then destroy the cupcake in the process so.
Definitely all your cupcake liners if they’re pretty old to make the gluten-free chocolate cupcakes just add almond flour potato starch oat flour all of the rising ingredients and salt and cocoa powder and mix really well press and mix so that you can break all of the almond flour lumps as well as any lumps in the cocoa powder.
And mix really well until it is a homogeneous mixture then add in your non-dairy milk and oil and then pour in a third cup of your club soda open the bottle just before using so that you get maximum Iration then mix and make into a batter if the batter is not flowy enough add in another tablespoon or so of club soda and mix in then scoop this latter.
Using a cookie scoop or a large spoon into your line muffin tin and then bake this batter will bake really quickly 11 to 12 minutes for a mini cup cup cake and about 16 to 17 minutes for regular size cupcak test with a toothpick in the middle and then remove them as soon as they’re done you don’t want to overbake these cupcakes because one gluten-free.
Two it’s chocolate everything is going to dry out as soon as you overbake it even if you do dry them out a little bit brush them liberally with some simple syrup and then Frost them with a nice moist frosting and everything will be fine you can put some whipped coconut cream frosting on top or a buttercream frosting or you by chocolate cream.
Frosting which uses just three ingredients some chocolate chips coconut cream and sugar just melt the coconut cream and sugar then add your chocolate chips whisk it all up Let it stiffen in the fridge for a little bit then pipe it however you like this frosting doesn’t need too much sugar but it’s still stays put really well at room temperature as.
