All right here we are in Vincenzo’s kitchen it’s a cooler day today and all of my plum tomatoes uh were ripe enough to pull a basket up and uh dice those up and put them in a pot and we’ve cooked them down now and we have speed Blended those after cooking for an hour with my handy dandy.
Ooster immersion blender right inside the pot you can see the pot in the right hand side and to that since I’m making a chunky sauce here we’re gonna spice this up while it’s on the stove and then probably a half an hour before finishing up we’re going to add some green pepper yellow pepper red pepper orange Peppers which were freshly harvested previous.
Video on YouTube about that and to that we’re going to add one whole onion and a can of uh mushrooms right to our mixed and for processing the spaghetti sauce marinara sauce pasta sauce depending on what verbage you use I’ve also run my pint jars into the new dishwasher as well as with fresh.
Lids and fresh rings and so what I’ve done now and I’m going to kind of just look over here this way you can see the nice texture of that immersion blender and I blended everything I don’t run it through a strainer and then put it back on the stove.
So I want to mention the Oster immers immersion blender because I’ve gone through so many immersion blenders this one happens to have a metal spout and Metal Blade which do a fine job that was courtesy of my youngest son I’m always telling him every time I use it what a great gift that.
Was just so that he knows and so what we’re going to do is we’re going to load up our basically uh crushed tomatoes that are fully cooked and we’re going to start adding our spices and our spices we’re going to add some chopped Chive.
Cuz I like that onion garlic taste that’s about a half a teaspoon we’re going to add some parsley for the nutritional benefits and we’re going to give that several shakes in there I want to flavor this nicely and have it be healthy and we’re also going to add about a teaspoon teaspoon and a half Italian.
Seasoning give it that nice Aroma earthy earthy flavor we’re going to give it some black pepper some fresh BR black pepper we’re going to give it just a splash of turmeric that way it’ll actually be anti-inflammatory and if you mix the pepper and the turmeric it works so much.
Better I’m going to take some basil probably two tablespoons of the basil and since I didn’t grow garlic again I’m taking this exact half half of this little jar worth of garlic and I’m putting that in there also the whole half a jar love the garlic one of my favorites we’re going to give this a stir that’s our.
Seasonings these were San Marzano Romas West Virginia number number 23s some black Russians some Fireball and some beef steak but mostly plum tomatoes they’re meteor you end up with a thicker sauce which I’m stirring in and you can already smell the burst.
Of seasonings that’s in there I’m going to put a lid on that let that cook for oh I don’t know 10 15 minutes and then towards the end of my sauce what I’m going to do is add my varying colored green peppers which are fresh a nice sweet white onion and some mushrooms and there you have it we’re.
Going to put them up in Pint jars do a a water bath on them for probably 40 minutes or so I like to go over a little bit some people say 30 I’m going to say 40 45 put the lids on them make sure that you go around the rim with that wooden spoon before you put the uh the lidden ring on it and uh boil them in the water bath.
Make sure that they’re covered take them out after 40 minutes I’m going to stick them back in the original uh balls smooth jars uh that way I can get a full uh dozen here and this will probably be the only batch that I’ll make for the season because of the rans sacking of the tomato plants by the raccoons and they were eating them green I mean I.
