And today we are going to make an oatmeal mug cake. Now, I like this.

Recipe because it only uses oats. There’s no flour in it. And it can be served as a breakfast treat or a dessert treat. If I’m going to serve it for dessert, you can do chocolate chips, coconut, peanut butter. If you want to use this as a breakfast snack, you can put fresh berries in it. So, most mug cakes that I found have a tendency to be.

A little bit rubbery because of the egg mixed in, but I use an easy trick to eliminate that problem. So, let’s make your gluten-free life a success and not a hot mess. So, we’re going to start with a greased mug. I just used non-stick cooking spray. And yes, I realized that.

This is not a mug, but I wanted to use something that was big enough that’s going to hold the ingredients. So, when you use your mug, make sure that it’s at least 8 oz. And I’m just going to use my fork and kind of combine all that up in your mug. So when you’re whisking the egg, make sure that you get the yolk in completely. So whisk the the Jesus out of it. And.

Then we’re going to add the dry ingredients. So I have a half a cup of quick oats, which is a more finely ground oats. And I’m using gluten-free oats here, but you can use whatever. Let’s see if I can make all this in here. Oh boy, it’s going to be close. A half a teaspoon of baking powder. just help it rise. A4 of teaspoon of cinnamon.

For flavor. And then just a pinch of salt. And I’m going to use my fork again and just kind of combine that all together. If you’re using a mug, it won’t be as dangerously high to the top like this one is. So, here’s the trick. How we don’t get a rubbery egg mug cake. I’m going to cook this for half the time in the microwave for 45 seconds. Then.

Take it out, whisk it again with a fork to kind of break everything up and break up that egg, which has a tendency to settle to the bottom. At that point, I will add in any mixins, like if you want nuts or chocolate chips or anything like that, and then we’ll finish cooking it in the microwave. So, like I mentioned, I use quick oats for this recipe, but.

You can also use rolled oats or even oat flour. It’ll just affect the texture. So oat flour, it’ll be more like a cake- like. And then rolled oats, it’ll be more like baked oatmeal. Even though it’s an individual serving, I have a hard time eating all of this. So if you have leftovers, you can just cover it, refrigerate it, and when you’re ready to.
