I mean I just feel so right at home I feel like there’s nowhere else I’d rather be we are here with Rossy Ross Matthews hi hi hi and Drew creu who we have done this show with since the very beginning it’s Danny SE Danny and it smells good in this kitchen you know what a big fan I am of your magazine this is issue of Danny steo.
Naturally is one of my favorite ones ever and I’m really in love uh with the lab grown Diamond story and um how to eat in a very sort of clean Japanese presentational and ingredient way you are a fan every issue every issue but this one I just it’s like one of my favorites so far and I also love your design issue for Drew magazine it’s.
Well we always talk about how to make a magazine I’m still so new at it it’s like very humbling it’s fabulous what you do oh God Danny all right well and Ross when you have a magazine oh yeah one day one day going to be called I got you girl I got you girl and it’s just going to be pictures don’t worry about it you don’t.
Have to read all right so I got you girl so do you know one of my favorite foods ever Danny is chili it is it is I love cooking chili I like making chili for friends I call it chili with my homies all right and and that’s what we’re cooking today chili we are doing a plant-based chili this is from the new issue of the magazine it is gluten-free.
Plant-based so it’s a crowd favorite you can use it as an appetizer imagine like a cute little like mugs as an appeti matters as a side dish vessels do matter yeah vessels matter and what I love is that use teeny tiny Skillets tiny little Skillets whatever you want to do with it but it’s so versatile anyone can eat this and Ross is already doing the very.
First step all you got to do is olive oil and some onions um in a beautiful pot like this and just get them sauteed and really soft with a secret ingredient you see this beautiful corn over here wow I love corn you want to char it Char it why Char it for at all it’s there’s sugar and corn so it really caramelizes giv an extra layer of flavor but also.
That charred means you don’t have to cook this chili for hours it’s a 20 minute dish that’s what I’m talking about you can make by Charing so Char it under a broiler okay 20 it on an open flame once it’s cool you just cut it with a knife into a bowl like this can I ask a question if it’s not corn season or you want to use a bag of frozen corn.
Is there an approach to that let it thaw add a little sugar on top and then put it in the broiler and get it all charred up than or the air fryer oh too could be really great too all right dry it out a little air now all we want to do is add a little bit of salt into here and then we’re going to dump so let’s all dump some things in here in this pot we’ve.
Got cooked brown rice and wild rice dump it in in here and did you know that wild rice is not real rice did you guys know this no what is it it’s actually a seed from a certain type of grass it is higher in protein Less in carbs Less in calories in traditional rice um so it’s a more nut nutritionally complete item to have where do I get this magical rice.
Right wild rice just look for wild rice like in the box at the store yes yes did anyone know wild rice was this healthy alternative a couple people back there all right there’s a woman um hello hello hi what’s your name Sana Lana I live in Minnesota and we go you can go up North and actually get in canoe and have this wonderful experience.
With rice well you actually go through the through the high grass and you swoosh it right into the Cano and next you process it you can process it near the Indian reservations and next it goes to the grocery store or your home wow who are you and what life are you living because this is all true this is.

We’re going to add some black beans has a lot of flavor it’s and uh pumpkin pumpkin pure all from cans guys so we’re going to do canned pumpkin and oh good that’s why I asked about like the frozen corn cuz sometimes times you know you got to work from Pantry yes now is the pumpkin like in L of like a tomato sauce you would.
Have in a red chili yeah it’s just like it’s just a different flavor profile it’s more of a fallen Hatch Chili good binder too very good binder which is why this is great to stuff in squashes also as a stuffing as well but we have the uh we’ve got the hatch chilies also so hatch chilies are grown in the hatch Valley in New Mexico beautiful flavor.
Profile and then one more thing while you do that Ross I’m going to pour in some vegetable stock this is what makes me nervous very a couple cup you do it Danny you can do it cups CLE cups and you let this cook for 20 minutes remember I said 20 minutes will all be done and it’s going to cook all the way down into.
This and then you’re going to like plate with all the garnishes because I love like a baked potato bar or a cob salad bar I love I do this is listen this is what gets me off in life yes I me reason to decorate right and I get hot over a condiment B this is my truth we don’t judge bro we don’t judge you we’re going to um I’m like oh my God.
Shredded cheese and onions and avocados she’s not kidding I’m not you’re not well your dream is coming true because we have a condiment bar here for you oh I’m all over it and then Ross I’m going to give you this one okay great let’s decorate what do we have here to we’ve got avocado you can add we’ve got some beautiful uh Red Onion.
You can take some of the extra corn oh if you want that on top pulling no punches get in there I’m not going to get some chips in there it’s a fabulous fall chili that you can make and again it takes minutes to make right oh my goodness really really good Danny and look how much it makes it makes 20 servings too I mean 12 servings.
Okay we’re going to go to a quick commercial break and we’re going to um use these leftovers um for a DIY we’re going to go to a commercial break and we’re going to and by the way I think we should keep that in because who wants to be perfect who who wants this next we’ll be using leftover rice.
Instead of we’re going to do something with rice that’s going to blow your mind get back here that was like a Meg moment
