hello and welcome back to my Channel or if you’re new here I’m so happy you’re here my name is Britney and I cook all things gluten-free so let’s get in the kitchen and start cooking in the kitchen today we’re making Mexican casserole I have a cast iron skillet on medium heat and I’m.

Going to Brown 2 lbs of ground meat while you’re cooking the ground meat go ahead and preheat your oven to 350° I’m going to add some spices to the ground meat I’m going to add ground cumin chili powder garlic powder onion.

Powder I’ve mixed those spices up and I’m going to add 3 tablespoon to the ground meat I’m going to stir the spices around on the ground meat and finish cooking it up until it’s well done I’m going to add a can of corn no need.

To drain the corn just add the juice and everything into the ground meat a can of diced green chili stir that in and mix it around I diced up one whole onion add that to the ground meat I diced one green bell pepper add.

That in also stir that in evenly with the ground meat I’m using the mission brand white corn tortillas that are gluten-free I’m going to put them into a pan on medium to high heat we’re going to heat these up until they’re just a tiny bit crispy to go on the bottom of the casserole.

We’re going to make about 12 tortillas to go into the casserole while that’s heating up I’m going to grade about half a block of cheese in a large Pyrex we’re going to add the crispy tortillas to the bottom once you’re done lining the Pyrex.

We’re going to scoop out half of the ground meat mixture and place that on top of the crispy tortillas and then on top of that sprinkle some cheese next we will add another layer of crispy tortillas.

Now I’m going to add the rest of the ground meat mixture sprinkle the rest of the cheese on top we’re going to put this in the oven and bake for about 20 to 30 minutes it’s now out of the oven and it’s ready to be cut.

And served the full recipe is in the description box down below this goes great with some guacamole if you want to add some spice to it drizzle a little Chala on top.
