Welcome back to cooking gluten and dairyfree with Dave D today on the menu is some roasted chicken with potatoes I love this meal right here because it costs about $10 tastes absolutely delicious and can make about four meals whole chicken is a lot more economical than chicken parts but gets a bad rep for being too much work so we’re going.

To show you how to simplify things by doing it spatchcock style as you know I can be a little extra so we’re going to inject this thing with some of our homemade injection to guarantee juiciness but that step is completely optional the potatoes will act as a bed for the chicken and soak up all the deliciousness rendered by the chicken.
