Pastry the town of Benson is charming with an Oldtown American feel it was incorporated in 1887 and grew on account of its location along a railway line this Transportation Focus drew the attention of early 20th century entrepreneurs fast forward to today and one local entrepreneur saw the need for delicious gluten-free baked goods and.
Comfort Foods his name is Joe Parker and he’s a dentist turned pastry chef and the Creator and owner of JP’s pastry we had the pleasure of catching JP at his Bakery so I stopped into JP’s pastry shop or Bakery and uh the owner JP is here hey guys and this is 100% gluten-free pastry or Bakery and um JP.
Was so gracious to be available to give a quick interview so I wanted to ask you JP um how long you’ve been in business how you started and I we’re currently in Benson North Carolina why did you choose Benson okay so uh we’ve been here about 10 years uh we are certified gluten-free uh very strict protocols that go into this facility and uh I have a wheat.
Allergy um diagnosed gosh in the late 90s so not Celiac you have no my it’s very it is severe my throat will swell oh okay I don’t talk about everyone has across the beer right I don’t really talk about it too much but I can eat meat right right so um that’s why we kind of started this and it just has grown and grown and grown over the years.
Uh we have a great contract with Whole Foods we’re in you several stores we’re known specifically for our Hawaiian rolls or gluten-free and dairy free uh because no one else in the country really makes Hawaiian rolls like us we have original Hawaiian rolls that we make uh we ship them all over the country uh we have a great mailing uh.
Mail order business as well so we are in vinon because I grew up here I’m from here and the building was available it’s a beautiful town oh thank you yeah it’s a great place yes so uh so you mentioned when we were talking off camera that you started in your kitchen at home oh yes yeah started in my kitchen at home uh just playing around I have a chemistry.
Background so it was kind of for me it was more science experiment um but I think understanding the properties of what you’re using to bake with really comes into play yeah gluten-free bakery is 100% a science because the gluten is not there to create the elasticity and the rise that you get when you have gluten so it’s a real challenge it is.
And it’s funny when I hire people here if they classically trained Bakers I have I have to instill in them forget it all the rules for making gluten-free and gluten-free vegan are completely different than classical baking yeah so um this channel uh includes those who are interested in both gluten-free and vegan so it looks like you have a good.
Selection of uh vegan items so you like for example I saw well there’s cupcakes there’s I saw macaroni and cheese yes cake squares we have vegan bread as well uh vegan uh brownies vegan crumb bars have a whole vegan line it does very very well um we’re happy to our mission saving is to include everyone at the table so um I talked to your partner and.
He had mentioned that you guys are having so you do do shipping nationally we do we have a great website um once a year we do a sale it’s coming up in September um second week of September stay tuned it will be 20% off the website and we do national shipping and what is your website again J pastry.com okay and uh so you do ship the year.

Florida frequently on the wonderful drive on 95 and we discovered you and we were so thrilled because my son and I have celiac disease and we couldn’t you know we can’t find many places to stop and your place was kind of like uh an oasis on the uh Highway 95 of like Wendy’s and like Taco Bell we have a lot of customers that say oh my gosh this is.
Like Emerald City like you’re in the middle of nowhere and you find this gluten-free uh you know it’s like a Mecca almost people come from all over yeah and we’ve I mean being here for 10 years it’s just been a great location so we’re really happy to be here we’re happy to help all the people traveling on the freeway it’s a big um big relief.
To find something you can eat do you have anything um planned you know exciting that you think of for your expansion of your business do you think of opening maybe another location we are working on that it’s actually in the works I’m not I’m not releasing any information about it yet but something is coming okay well thank you you’ve.
