Hi guys how’s it going Caitlyn here and welcome to my kitchen for another week of meal prep got an awesome lineup here for you guys this week so we got um chicken alfredo Buffalo stuffed sweet potatoes uh cold cut Subs bang bang chicken bowl and chicken fingers sound good okay so I got three varying levels of prep here based on your motivation.
Level and how much you uh feel like doing at the moment um although it was a very short prep day so I really think that you could get all three steps of these done if you’re if you’re feeling up to it but let’s start and let’s see uh like so many times I’m going to start with level three which is the stuff that gets done while I am doing other things.
So I’m going to prep the sweet potatoes the baked sweet potatoes um for the uh Buffalo Ranch stuffed sweet potatoes so I’m going to do it in the pressure cooker you can do it in the oven you can do it in the microwave there are many ways to soften a potato um but any of these methods whatever you’re doing you’re going to.
Want to give it some love by love I mean stab it with a fork it’s not how we usually show love but for a sweet potato that’s how we’re doing it really that is not the way that you show love in general okay so poke poke poke four of them with a fork I’m dropping them in here um for sweet potatoes and pressure.
Cooker generally you put it in for somewhere between like 12 and 15 minutes and then you let it off gas for around 10 minutes is and release the pressure and then it should be good it should be good to go if you if they weren’t good to go you can always finish them off in the microwave or something like that nobody.
Says you got to stick to like you know one thing there’s no rule to it really it just they get done right so I’m just going to put it on custom here I’m going to put it to I going to go lucky number 13 minutes W like that and just pressing run on there so that’s going to do its thing.
While we’re doing our thing and um yeah now I’m just going to go on to level one which is basically just prepping some simple veggies um going to start with slicing a pepper so for doing the pepper usually I cut down the little the little creases this is weird though this pepper only has two creases usually they have.
Three or four so I’m just going to go with one that’s right in the middle and just make it up okay there we go so when you slice it that way you can usually just pull it down and it separates um very minimal very minimal waist that way and pretty easily done pull that middle out there.
And then I have this little contraption that I’m going to use it’s called a quick slice it can be quite nice for slicing things like Peppers um mushrooms anything that’s like fairly soft it’ll do good quick work on and it’s all very even slices and I.
Don’t have to risk cutting myself with a knife yeah I am that clutzy you know that person that can hurt themselves on anything me there we go beautiful so that’s my pepper all sliced I’m also going to slice an onion and I’m going to store it in the same.
Container I just have a little divider in my container I’m in love with this prep board by the way have been since the day I bought it I’ve remain in love with it I will probably always remain in love with it and it’s like a it has pockets so it keeps my um keeps my space really clean which I.
Enjoy um yeah so slicing the onion really you can slice it any way you want to it’s just going in pasta and if you’re a texture person which I’m kind of a texture person then I like my things to kind of match a little bit that might sound weird to you it it either sounds really weird to you or it makes total sense to you I think so I am.
Just cutting my onion in slices working towards the middle now I know I said I could hurt myself with anything um so ironically I’m using a very sharp knife because a sharp knife um you’re less likely to slip and slide around with you’re not going to be making as much of.
A sawing motion so uh you’re actually way less likely to cut yourself with a sharp knife than you are with a doll knife doll knives are ironically more dangerous so I like this one it’s a santoku um people with bigger hands might prefer a chef’s knife or it might.
Just be a preference thing there we go so I I do do usually put my Pepper or my onions in a different container than the peppers but where these are going in the same dish I figured good enough um so that is all prepared what are we doing next uh.
Slicing some mushrooms so I’m going to use my quick slice for the mushrooms as well cuz it’s a nice quick way to cut those and just kind of rock it back and forth a little bit and it does its own thing um I bought like 20 lb of peppers during Harvest time last year cuz they were on at a wicked deal um I processed all of.
Them using this thank goodness saved me like a million years and um I had peppers for forever I just I froze them in uh silicone freezer bags and use them for forever there’s my uh there’s my mushrooms okay now we’re actually on to uh level two I’m telling you today is going to be an easy prep day like you literally can get all of this done and.
You’ll be just fine and you’ll still have plenty of time but uh the best thing about prep is that it spares you for the rest of your week cuz if you’re relying on motivation you’re never going to get anything done um going to chop half an onion by the way that’s what I want to um so I’m just chopping this straight up.
In half take the end off so uh we all know the meal planning saves you money right like uh stats say I’m not a mathematician but statistics that you save between um $100 and $500 a month just by meal planning however a lot of people have tried meal planning and it doesn’t work for them and a big.
Part of that is just the human part like you get home from work you’re tired you don’t feel like putting a bunch of crap together but if you already like prepared some of these ingredients in advance even just chopping the veggies it makes such a huge difference cuz you go to your fridge and it’s it’s there it’s ready.
You can use it rather than prepping it and it’s just those little things that make a big difference so if you’ve ever tried meal planning and it has not worked for you I would encourage you to try it but try it with a little prep first let just see cuz it’s working with your with yourself.
What you know is going to happen and avoiding that problem so going to chop up three sticks of celery and also one carrot and this is all going for the same meal so it’s all going in my same dish that onion got me you know onion celery and carrot.
Together is one of my favorite like little side dishes it can be a delicious side dish just fry it up in some oil and oh it’s so good just those flavors match perfectly together so if you end up with like too many veggies to actually fit into your sweet potatoes that’s not a problem that’s a blessing like just eat it and you’ll.
Love it here we go celery all chopped up yeah I’m going to just peel up my carrot beautiful now when you have the sweet potatoes already cooked for this like your stuffed sweet potatoes are going to go so quick um it may become one of your favorite little meals to make just.
Because it’s so easy okay so I’m going to chop up this carrot I’m actually going to chop up a clove of garlic at the same time to go in it the peel off there take a little knobby end off go there we.
Are got my veggies all chopped there and that’s it guys like that so easy so that is that’s got 10 minutes left then I’m going to let it off gas for 10 minutes let the pressure out and then that’s going to be done if you want to take advantage of that and use that for into dinner tonight heck you could but um oh last thing um if you want to.
Look through your fridge now see what’s going to go bad so figure out if it’s going to go bad how can you incorporate it into one of these dishes can you throw it in with um the pasta maybe use it as a side dish if you can’t use it this week any of these meals or in any of the lunches or breakfast or snacks maybe you could process it now and.
