I’m going to make a lemon and blueberry panda cake I really like this cake because a it’s like really yummy but also it’s so easy to make I love the recipes where you just check in everything into one uh Bowl mix it all up and then it’s ready for the oven so there’s pretty much one step which is check all the ingredients in and then.
We’ll cook it so I’ve got my Bowl here and I’m going to start with one cup of sugar 25 G of butter fully melted so I’m going to melt it in a saucan on the stove just cuz I always find that um kind of easier and just nicer than doing it in the microwave so 125 G half a cup of.
Penta so here’s my Penta so Penta is like corn um and I actually really enjoy using Penta there’s quite a few recipes that I do that have it and yeah it’s just really yummy kind of changes the texture a little bit and it’s glutenfree obviously so it’s really yummy so half a cup of blenda next is half a cup of corn.
Flour um so next is ideally a cup and a half of almond meal um unfortunately I don’t have enough so and this happens pretty frequently as well so if I if I could I would do a cup and a half of almond meal but because I can’t I’m just going to put whatever I can’t whatever I don’t have for almond meal I’ll just use normal um gluten-free plain flour.
So half a cup that’s one cup of almond meal so I’m going to put in half a cup of plain flour next I’m putting in half a teaspoon of baking powder so next is three eggs 3 tablespoons of lemon juice I’ve got some that I’ve have Juiced earlier I.
Don’t think that’s going to be enough though so I’m just going to juice another one and then three tablespoons or two to three tablespoons of lemon juice into the mixture I love lemon I’m like the more lemon the better that’s just so good lemon and cakes like lemon cordial lemon.

That’s pretty much all the ingredients for now so the mixture is quite liquid which is fine um so instead of actually chucking the raspberries in sorry the blueberries in there um I put it into the pan first and then the blueberries on top and then kind of like press them into the underneath because if I mix.
Them in now the whole mixture is going to go like purply blue so to try and avoid that I’m going to do it when it’s in the pan so you could do it in like this a square pan or a round pan I really like using like my pie one I don’t know why I just really like it so I’m just going to use uh this one so I’m just going to spray it with.
oil and then one cup of blueberries so I’m just using frozen blueberries I’m also a little bit low so I might check in some just um mixed berries as well um this will work great with any berries I think I’ve done it with blueberries and raspberries so good um so yeah so as many blueberries as I’ve got and I think.
I’m just going to CHP it off and then put it in so yummy so I’m going to put it into the pan quite yellow from the penta and the eggs and the butter I’m just going to sprinkle the berries on top and then so using a finger.
Or my cake tester you could just like poke them under a little bit summer is okay to be up the top just want to try and hide a few more before putting it in the oven great so that is ready for the oven it goes in for about 45 minutes and I’ve.
Got the oven at 170° C the timer has gone for the lemin and blueberry palenta cake so I’m going to get that out of the oven it smells really good it’s got some cracks on the top oh yum that looks great so good LED cake and sprinkles some icing sugar on top and it just.
Makes it really pretty and then I like cutting this one cut it into um like triangles and I’m serving it tomorrow so yeah it looks really good nice and toasty smells really good and you can see some of the berries so yeah it’s always a winner delicious
