Unraveling the Mystery: Is Sourdough Truly Gluten Free
Is sourdough glutenfree well that’s what we’re going to talk about in today’s video so recently I got a question asking if sourdough when it’s long fermented is it gluten-free and the short answer is no but it’s kind of a little bit more complicated than just saying no so let’s talk about what.
Happens during long fermentation when you make your salad bread now when I’m talking long fermentation I’m talking over 18 hours up to 24 hours so a really extended fermentation what happens is that sourdough starter that process of the sourdough starter feeding on the flow and and what the dough is made out of it.
Breaks down the gluten and it does make it easier to digest now for celiac patients this doesn’t matter you can’t have even a trace of gluten but the ones that it does matter for are those of you who are Gluten Sensitive which means you can eat gluten but it causes you bloating and stomach upset if you do a long fermentation on your sourdough.
Starter I have had great um testimonials and different people tell me that they can eat sourdough if it is fermented for at least like 18 hours to 24 hours so I suggest if you have problems with eating bread not Celiac never try um even a long fermented sourdough without the advice of your doctor because you could become very ill and you know that but if.
You’re only Gluten Sensitive and you want to give it a try I think that the process of fermenting the dough for a really long time makes it much easier on the digestive tract and you can start enjoying your breid again so I find that the very best combination is a long fermented dough with freshly miled flour because what happens is when you make.
Sourdough and it starts breaking down the gluten the phytic acid and all those things it makes the nutrients a little more available for your body to more easily uh take in and process well if you use freshly miled flour and sourdough think of all that nutrition that you’re going to get from that freshly miled flour freshly mil flour.
Has the germ and the Brain intact that’s where the V the vitamins and the minerals the vitamin E the good fats all of that is in there so can you imagine when you take take sourdough and the freshly milled flour do a long fermentation it’s like a super red in a way it’s it’s so good for you it’s easy on your system and plus you’re really.
Getting those vitamins and minerals more readily available by doing that process of long fermentation so sourdough is not gluten-free unless you use a gluten-free starter and gluten-free flour then it’s truly glutenfree but it does make a difference in the digestibility of the bread so I just.
Wanted to make this short video to address that question for anybody who maybe is wondering if they can eat sourdough bread if they’re Gluten Sensitive and I would say definitely give it a try of course as I said I want to make sure I caution this at least three times in this video not if you’re Celiac.
Obviously you you want to stay away from gluten at all costs but if you’re Gluten Sensitive or you’re wheat sensitive I would definitely try some long fermented sourdough bread and see how your body can handle it and even better if you can make that from freshly milled flour because then you’re going to get all the benefits of that as well.
