Bienvenidos and welcome to another episode of Spain ona fork today we’re going to grab some avocados dried lentils and a couple other heart-healthy ingredients and create an incredible recipe we’re talking stuffed avocados with lentil salad and let me tell you these stuffed avocados have layer upon layer of so many amazing flavors the recipe is easy to make where there’s no tricky techniques or weird equipment needed andthe best part it’s all done in about 40 minutes folks serve these stuffed avocados as a side dish next to some grilled fish or chicken or even as a main course as it certainly has enoughprotein either way it’s the kind of food that with each bite it’s going to fill you with so much goodness really quick before we start a shout out to a couple of my patreons Jim Schallert, Barbara Eastman and Alex Z again guys thank you so much for.

Being patreons of Spain on a fork you know howmuch I appreciate you alright let’s just dive right into this i’m going to add in one cup of dried green lentils into a fine sieve which is 190 grams and rinse the lentils under some water andlike I’ve told you in the past when you’re working with dried lentils they’re not like other dried beans where you have to soak them overnight just give them a quick rinse and they’re ready to go then we’ll add the lentils into a stock pot along with three cups of water which is 720 ml and one bay leaf and then we’ll turn it up to a high heat and give it a gentle mix once it comes to a boil we’ll place a lid on the stock pot and lower the fire to a low heat and we’re going to simmer the lentils between 15.

To 20 minutes or until they’re just cooked through important to check the package instructions on the lentils you’re using that way you cook them right on the money after about 15 to 20 minutes and the lentils are perfectly cooked I’m going to remove the stock pot from the heat and drain the lentils into a colander then we’ll rinse thelentils under some cold water this is not only going to stop them from cooking but it’s going to bring them to room temperature and we’ll then shake off any of the excess water and finally we’ll transfer the lentils into a large bowl then we’ll add in 1/3 cup of chopped red onion over the lentils.

Which is 50 grams along with half a cup of chopped red bell pepper which is 75 grams half a cup of chopped English cucumber which is 50 grams and two tablespoons of chopped parsley which is 8 grams then we’ll season with sea saltand a generous portion of freshly cracked black pepper and we’ll give it a gentle mix until it’s well mixed together for the next step let’s make the dressing i’m going to add in 3 tablespoons of extra virgin olive oil into a bowl which is 45 ml important to use the good stuff here as this is the base fat of the dressing and what trulymakes the difference in the flavors link where you can get the Spanish one I’m using in the description box below we’ll also squeeze in 1 tbsp of fresh lemon juice which is 15 ml finely grate in one clove of garlic.

As always if you don’t have a grater you can just finely chop it add 1 teaspoon of dried oregano which is 1 gram and season with akiss of sea salt and just a dash of freshly cracked black pepper and we’ll give it a whisk until it’s well mixed together then we’ll pour the dressing over the lentil salad and give it a gentle mix until it’s well mixed together for the final step let’s start prepping the avocados and I tell you when you go to the supermarket to pick them up you want to give thema gentle squeeze and they should be slightly soft if they’re too soft they’re overripe which means they’re going to be brown inside and if they’re hard they’re not ready yet and I tell you if you can only find hard avocados.

In your area just purchase them and then place them in a paper bag and leave them for about 24 hours and they should be ready to go anyways I’m going to cut the avocados in half lengthwise and then remove the pit from each one and using a spoon we’ll gently remove some of the pulp to make the hole bigger but you don’t want to remove too much as this is what holds the shell together and then we’ll rub each avocado with some lemon which will prevent it from browning and finally we’ll stuff eachavocado with a generous portion of the lentil salad and check it out folks our stuffed avocados with lentil salad are done easy to make simple heart-healthy ingredients.
