About what happened to me a few weeks ago thank you guys so much for watching now in today’s episode we are going to be making a cottage cheese apple crisp that sounds kind of crazy doesn’t it but it’s going to go perfectly with our cottage cheese series that we’re doing and it’s kind of amazing now this recipe is completely sugar-free and it’s.
Gluten-free and it’s a lot healthier than a normal apple crisp would be so you’re definitely going to want to check this out before we get started though would you do me a huge favor and hit that like button only because it’s going to help the algorithm send this video to more people thanks so much here is all the ingredients that you are going to.
Need so we’re going to start with one cup of some cottage cheese then we’re going to be using four apples and we’re going to dice those up you’ll need a half of a cup of some oats and a half of a cup of some peans now that is for the mixture with the cottage cheese but then we’re going to also put a topping on this of an additional four.
Of a cup of oats and four of a cup of peons then we need a third thir of a cup of some sweetener now I’m using this boka sweet which is delicious and it’s low carb friendly and then I’m going to be making it into a brown sugar substitute by adding in some yakan syrup now you could also use molasses if you have that however your yakan syrup has a.
Lesser carb count um it’s I always keep it in my fridge it’s just something great to have on hand it tastes very similar to molasses but like I said with less carbs so we’re going to be doing probably about two teaspoons of that then you need a couple of tablespoons of some butter about one teaspoon of some.
Cinnamon and about a half a teaspoon of some nutmeg all right let’s get started put some water in a bowl I’m going to just put a little bit of apple cider vinegar in it it’s going to help it not get brown when it’s in the water so we’re just going to be cutting our apples up you could do it however you prefer so some people like to do it kind.
Of like that I don’t prefer it like that I like to chop it up into really small pieces just makes it easier for everybody to eat the one thing that I love about apple crisp is that it is so easy to make you can whip this up really quickly at the end of the night or if you’re going to a holiday.
Get together this would be something really simple to bring along with you so I have my third of a cup of sweetener I am going to be adding in my yakon syrup now I actually use Yan syrup for a lot of my recipes because it’s so convenient to just have this this in the refrigerator I can use it for any type of sweetener that I want to make this.
Like a brown sugar and it just works out perfectly I’m just going to drain my apples I’m also going to just rinse them off a little that apple cider vinegar off of there throw that in your baking dish I am using I think this is an 8 by8 now I am going to be taking a couple of chunks.
Of butter and adding it into the apple slices I’m going to be cutting it as small as I can like that and then I’m going to take half of this and kind of mix it into the apples so that we get that nice sugary Apple taste that we all love also going to be sprinkling some cinnamon over this and then tossing that.
Again then we’re going to be adding in our nuts our cottage cheese and our half a cup of oats now you could do a whole cup of nuts mixed nuts or you could do a whole cup of oats whichever you prefer is fine by me we’re going to blend this up I’m going to kind of push down the edges make sure that it’s nice in there here is what it looks like I’m going to.
Just kind of smooth this over the top so now this mixture is pretty smooth so in so I’m going to be adding a little bit more crunch to the top of it so I’m just going to be adding a couple more nuts about another four of a cup little bit of Oats the rest of the sweetener and then I’m going to just add a little bit of butter maybe like one or.
Two tablespoons don’t want it super powdery so you want to just make sure to check it here is how that looks now I’m going to just be lightly sprinkling this on the top kind of spreading it out love this brown sweetener on the top it gives it that really traditional look here you go now we’re going to bake this.
In the oven 350° for about 30 to 35 minutes so I just took this out of the oven it cooked for about 37 minutes you just want to touch the top to see if it’s crispy enough for you I’m going to let it completely cool down before I give it a taste test though we are going to Plate this of course there’s all that juice at.
The bottom yum this looks so good okay here it is let’s give it a taste test oh man so good perfectly sweet totally hits the spot if you are craving an apple crisp what do you think it tastes like apples well that’s true.
It does taste like apples good job you like it what do you like about it um it’s cheese in it and his apples apples is healthy for me apples is good for you yeah okay and yep there is cottage cheese you would not be able to tell that there’s cottage cheese in this it turned out amazing it is a better alternative to a regular apple crisp I.

Winter months it’s been staying dark longer so that means I’ve been walking completely in the dark and I also walk in the park reserve so there’s not a whole lot of anything there so about 3 weeks ago I was walking and I was actually editing one of my videos and my airpods were in I’m looking down it’s completely dark out and I got hit in.
From behind with a guy riding his bicycle and um I actually lost my memory for about 3 hours chunk of time where I mean I knew my name and stuff but I didn’t remember anything that happened so thankfully he found me a couple of days later and was able to explain a lot of it so when he hit me I was knocked out cold blood is everywhere and he’s.
Like oh my goodness I just killed her so he’s trying to call 911 and he’s bleeding as well and um when he finally got hold of 911 and I was like we need an ambulance we’re in the park reserve there’s been an accident and I I finally woke up came to Consciousness and I was like no no I’m all right it’s okay I I’m fine and um so he ended up walking me.
Home just to make sure that I got home okay which was so nice of him and then uh my husband took me to the emergency room I got three Staples in the back of my head did find out that I had a concussion but I know this sounds really crazy but it was not as bad as it could have been and the other cool thing is for the past couple of months you know.
When I am on my walk in the morning it’s my prayer time and I am um you know just see uh speaking out what I want to see happen for my day kind of like a positive affirmation um except as a Christian I base that off of scriptures that are in the Bible and one of the scriptures that I kept praying over and over and over I would say God I just.
Thank you that you are my shield and I would say that like hundreds and hundreds of times God I thank you that you’re my shield and as was as I would be walking I would be saying that now now as I look back at that I totally know that God gave me the prayer to pray that I would need in the future so I really think that his hand of protection.
Was completely on me and that brings me to another point A lot of times you may be asking well why do bad things happen to good people well first of all no matter who you are everybody’s going to go through the storms of life because we’re human and that happens and so when you have a relationship with God he helps you go through that storm a lot.
Faster and then the other point was how many times do we go through the storm of life that maybe was partially our own making so like for me should I have been wearing a light probably should I have been walking in the dark probably not so um you know I definitely learned a lot from this situation my husband was like uh you’re getting a gym membership.
You’re not doing this anymore which I mean I enjoy walking outside but it is winter time so it’s fine I will do the gym membership for now but it it it was awesome to see God God’s hand of protection over this whole situation and then even for like you know the financial aspect of it because I was out of work for a week I had hospital bills.
Now that are coming in like just the one ER visit was so expensive and I was like okay well how is that going to all work and the guy actually found me a couple of days later and offered to pay for all of my hospital visits which was so nice of him I was just like God you took care of this whole situation from start to finish and then my muscles you know I I.
Like to do a lot of more homeopathic type of Remedies when I get sick so I took something called arnica which helps your muscles and you know after you get into a car accident sometimes you your muscles are just like in so much pain and I did not have any of that my muscles were totally fine I did have to go to the chiropractor for like my neck.
And my lower back but you know what I have not had nearly the amount of pain that I should have um I didn’t even have to take Advil that’s how much not pain I was in um anyways but I just wanted to share that with you guys it’s kind of a cool story I love that God saved me from so much of it that could have been so much worse and I appreciate it but thank.
