Beyond Gluten: Unmasking the Hidden Triggers of Celiac Disease

Hi it’s Aaron welcome to Brewing Better Living um today is the second to last day of May and it also marks the end of celiac awareness month so I’m going to talk a little bit about um a question that somebody asked me on my YouTube channel I had posted a short regarding um I’ll I’ll read you exactly what it is gluten-free minimally processed food for.

Celiac disease what I eat in a day and I basically just went through um a day of you know what I eat most of it being um like Whole Foods based minimally processed things like that and uh somebody asked a question on that short and said how do you feel on it and I apologize you’re going to hear some doggies in the background because I.

Believe um some sort of a repair truck just showed up in my neighborhood so they need to bark at everything but anyway so somebody posted how do you feel on it me and my daughter have Celiac I’ve lost so much weight and feel so sick and not good haven’t been able to shake the feeling of being sick for years like eight years where do you shop.

Okay so couple questions in there asking um how I feel eating the way that I do and then as well as um where I shop now I’m going to get into how I feel so basically um I have been glutenfree this time around for um over a year now in fact May 17th marked my one-year anniversary so that was a.

Really big deal for me um I had in the past been strict gluten-free for four years um after being diagnosed with sibo and non- Celiac gluten sensitivity but this is the one-year stretch since um finding out about my celiac disease so basically um if you don’t follow me and you haven’t seen any of my content I I pretty much.

Um of course gluten-free but mostly Whole Foods minimally processed I know I’ve said the same thing in like the last couple of minutes but anyway I feel really good doing this um I have found that for me I need to go further than just merely being gluten-free gluten-free I can actually pinpoint certain symptoms that the.

Gluten-free alone has helped me with and that I noticed that these particular symptoms do not come back as long as I’m gluten- Fray knock on wood however there are other symptoms that I experience even when I eat um gluten-free foods particularly gluten-free grains I need to be careful of if I have um products that contain corn especially if I eat uh.

Eat it for a couple of days or if I’m eating it regularly or large amounts I start to not feel great um just in the last couple of days I had had ear earlier in the week uh a couple of things I had had one night where I was in a rush and I had grabbed some some corn tortilla chips and had them with like some shredded cheese over them it.

Was like a really quick like I need to eat type of dinner thing um my family was out of the house and it’s just what I grabbed and I had and then there was another night um my husband and I had gone grocery shopping I saw these tortilla chips they were actually sweet potato tortilla chips and I don’t usually buy stuff like this um like I.

Said I’m pretty much doing the whole food things making things from scratch sticking to you know Meats dairy products sometimes um like vegetables fruits things like that so I am sorry I am kind of like losing my concentration here I have concentration my concentration I have a u a stuffed toy.

An Elmo stuffed toy that was my daughter’s and um when she was little and we still have it because it’s the cutest thing it moves its mouth if you like hit it or move it it goes like what’s up hi hi Elmo blah blah blah all this stuff my dogs found it after it um fell off a shelf in my office and um I had to put it in another room behind a.

Closed door but apparently it uh is in there talking on its own with nobody in there so it’s haunted Elma or something and now my dogs are going they’re crying by the door because they hear it so I’m sorry if I just like lost my train of thought there but going back to the the to the corn situation so I had already had like.

The corn tortilla chips one night and then we bought these um these sweet potato tortilla chips and the first ingredient was corn and I it was like Memorial Day weekend so I’m like what the hell like it’s gluten-free so I’m not going to be eating like gluten foods but um let’s just get this I’m going to have it with my lunch whatever we had.

And so I ate those for two days in a row like not a ton of them but just enough that I had them a couple days in a row so we’re talking about three days um during the course of this past week where I had a corn product and I noticed that um just that I was feeling like off which I used to feel a lot prior to changing my diet particularly going.

Gluten-free and cutting out these other grains and whatnot and um like a lot of brain fog and stuff like that so I realized like I really can’t be I can’t be eating this stuff hold on hold on this is what it’s all about right here people almost so giggly my dogs are crying and I can’t give this to them because I mean it’s.

Got like a battery pack that’s hooked up with velcro in the back I mean it’s not I can’t get it to shut up it’s not a dog toy okay and my dogs now want this so let me get them out of here real quick okay I’m back and uh I can’t get my dogs to leave so hopefully Elmo will stay quiet where Elmo is sitting next to me right now so now that I’ve been.

Distracted multiple times by a little red Elmo toy and two rescue dogs that you can often see behind me if you’re watching the video footage of this you can see them if you’re listening to the podcast you can only imagine that um it’s the uh Wild Kingdom of doggies and Elmos here apparently so these symptoms would.

Return for me just eating like um you know corn in particular some other gluten-free grains if I have too much of it I have noticed a correlation with soy so and also like if I eat like a lot of um processed foods I have noticed that I don’t do great keeping in mind that a lot of processed foods contain things like corn and soy especially if they’re.

Gluten-free ones which are the ones that I would have to eat because I have Celiac and I am gluten-free so my point being in telling you all of this is that even going glutenfree for me was not enough and that is what I responded to um the person who left me this comment um that I had found that you know it wasn’t just all about the gluten-free I.

Had to start to avoid other things as well so the easiest thing to do when you’re trying to um you know avoid a lot of the stuff is to just concentrate on making your own foods from scratch and doing going the Whole Foods routes and doing the meats and the cheeses if you can tolerate Dairy and um you know fruits and vegetables again depending on.

What you can tolerate and if you have any other restrictions and whatnot so like I said that was my answer to her it’s not always it’s not always just going gluten-free oftentimes there are more things um and I didn’t get into other things with her I mean obviously I am not an expert at this I’m not a medical professional I I can only talk.

To people based on what I have personally been through what I have learned over like my now five plus years of being gluten-free um in total for the first time one plus this time so you know I I can’t give anybody any specific medical advice um but things that I have learned yes sometimes you have to go beyond just eating gluten-free sometimes.

You have to avoid other grains even the quote unquote um you know gluten-free grains corn um oats that’s a big one and in fact some people like will just stay away from oats in general because oats are very very very often contaminated with gluten to begin with and then for some reason oats I guess the protein in them is very similar to the gluten.

Protein in like wheat barley and Rye so people really tend to have an issue with that it seems so there’s that there’s also the possibility that you know there’s other issues that someone might have going on that are undiagnosed that might be causing them to feel poorly and maybe it’s not simply the celiac disease or gluten intolerance or whatever um one.

Thing that I have learned is that since celiac disease is an autoimmune condition a lot of people with this condition often have other issues you know there are people that are also diabetic that have Lupus that have you know autoimmune thyroid issues and like Hashimoto and and stuff like that um so there are a lot of um variables and.

Things that come into play you know and another thing is what if you’re not really paying that close attent close of attention and maybe you live in a house that is not strictly gluten-free or you eat out a lot you know there’s always a possibility that you’re still coming into contact with gluten and not even realizing it you know if you have dealt.

With this for any period of time you have probably learn that it’s um it’s not very easy to go and eat gluten-free outside of your own home and it’s very easy to have things contaminated or to even buy a product that you thought was gluten-free or maybe at one point it was and they changed an ingredient or something like that so you know it’s not.

An easy thing to deal with there’s always so many things that are factoring into it now the second part of our question is where do I shop and the answer to this is is unfortunately only going to apply to people that live um predominantly in like the Northeast United States down to the Mid-Atlantic and I think I think um I shop at.

Wegman’s I think they have shops down as far as like North Carolina now out to maybe Western Pennsylvania um I know for sure they’re in Virginia because I have shopped in their Virginia stores before so they they are around and um if you’re fortunate enough fortunate enough to have one of these chains these um these Wagman stores near you take advantage of.

It because even if you’re not um let’s say that you choose to eat like me and you’re not eating like a lot of processed stuff um but maybe you still want to have like your ketchup or your condiments or like you know other little things um they’re very very very good as far as their brand name products go like their Wagman’s Brand Products they’re.

Very very good with labeling them so they have a very good system of gluten-free labeling there it makes it very easy and I always laugh because for instance even like their bags of like that are branded they’re like Wagman’s apples will have a gluten-free logo on it you know so I laugh at that as someone that’s been gluten-free for a.

Long time um and you know get a chuckle out of it I do think that it’s helpful because if there is somebody that’s like new to this and they really don’t know and they haven’t figured it out you know then that that can be helpful helpful I mean I cannot tell you how many times people have been like oh um it has potatoes in it you can have them right.

And I feel like yeah that’s GL it’s gluten-free like there are certain foods that people don’t realize are gluten-free because maybe they’re kind of like correlating like gluten with um you know starchy types of carbs and things like that like I was at a function once where they gave me like a loaf of whole wheat bread because they.

Were thinking that gluten is only in white bread so there’s that like kind of like white starchy like carb type thing you know people don’t realize that rice is okay things like that so in the beginning being able to shop someplace that literally literally labels everything that has their name on it that has the Wagman’s name on it as.

Gluten-free if it is is is very very helpful especially if somebody else is doing the shopping for you that maybe doesn’t know so all of that kind of comes into comes into play so I hope that I was able to um answer this person’s question a little bit I felt bad because I can’t imagine.

Having eaten this way for like a long long time and just really not feeling well granted there are times when you know I don’t feel great or like I said I’ll eat other things that also don’t agree with me and I’ll have a problem and I’m sorry you’re hearing my little sweet doggy behind me going again I’m not sure if you can hear that through.

This microphone but you might be able to so if you hear weird weird noises in the background that’s what it is but yeah so hopefully that answered her question a little bit and like I said there’s so many things that can factor in to why you might still not feel well even though you’ve you’ve gone gluten-free there is um there is a um a doctor on.

YouTube I believe I believe he’s like a naturopath am I saying that right naturopath and a chyo proactor I believe and his name is Dr Osborne um and I can see that some people might view his content as a little bit controversial because he goes into this whole other aspect of being glutenfree and goes into this whole.

Thing where his view is that there are other grains that actually contain gluten like that we are told to avoid wheat barley and Rye like those are the three that they always tell you to avoid if you have celiac disease or you need to avoid gluten and then of course they’ll tell you avoid oats unless they’re like certified gluten-free and.

Purity protocol and all of that but he goes further and says that there is actually gluten in these other um grains and that people with Celiac and gluten issues need to avoid them and I find it very interesting because if you take the time to watch the content that is that he has put out on this you will hear that he actually.

Has a lot to back up the claims that he has making and interesting point is that if you look at the different grains like wheat barley and Rye you’re going to see that gluten is the protein in wheat but when you’re dealing with like the barley and Rye there’s like other proteins involved that aren’t necessarily called gluten I might not be getting this.

Totally straight but um but if you’ve ever seen this you probably know what I’m talking about so maybe this is correct that some of these other uh grains do actually have gluten in them but in a different amount and they’re not the ones that we’re told primarily to avoid so it’s very interesting because this is always evolving and you.

Could find out one day that they say hey you guys got to avoid this too or that you know as time goes by um but he says that out of out of all of these like quote unquote glutenfree grains that like white rice I believe it did he say all Rices or just white rice I I I think it was white rice is probably the one that gives people the least um amount of.

Problems and I find that interesting because I find that to be true that if I eat white rice that I can get away with that but if I do like corn or some of the other um what is it like sorghum I seem to have a problem when I have products that have sorghum in it that’s another gluten-free grain so to speak so he kind of like had a point so check him.

Out keep an open mind and especially if you’re somebody that is struggling even after going gluten-free and you know for sure that you’re not getting gluten and all of that check him out and see what he has to say because I found his content very very interesting and as somebody that suffers from sensitivities Beyond just the gluten containing.

Products it really really made a lot of sense to me so again his name is Dr uh Peter osor I believe you can find him on YouTube he’s got a really big Channel there he does lives all the times all the time with people asking him questions in the chat and whatnot so check it out um if anybody has any questions for me as always if you’re on.
