You’ll need about 600 grams of russet potatoes. Peel and cut them into small pieces. Rinse the potatoes, then transfer them to a pot and add water until they’re just covered. Season the water with 2 tablespoons of salt and boil the potatoes until they’re fork-tender. Drain the water and mash until the potatoes are nice and smooth.

Allow the potatoes to cool and transfer them to a large bowl. Now, let’s add the vegetables! We’ll start with 200 grams of corn kernels for some crunch. 50 grams of shredded carrot for a touch of sweetness and a boost of vitamin A.
