I’m making a sponge cake for tomorrow now sponge cakes have always been what my mom does my mom does them really well um but it’s really funny because like growing up whenever we were cooking recipes and it said you know sift the flour and fold the flour in um my mom would be like oh you don’t need to do that so you know we wouldn’t and then.
And every all the recipes turn out fine but then of course one time when we tried doing a sponge cake and it says SI for flour and fold it in and we didn’t do it and then my mom’s like no no no for sponge cakes that’s like the one recipe where you actually need to do it all really gently so that it keeps all that air in um yeah so that it’s nice.
And fluffy so obviously my first SP sponge cake was a fail but um so I’m going to try very carefully to do this one so I’m going to start with four eggs I’ve got my stand mixer here and I’m going to put the egg whites in the bowl here and the egg yolks in here so I’m going to beat the egg whites first so four egg whites into the stand mixer.
Bowl so that’s four egg whites in there and four egg yolks in my bowl they were actually really tricky to split and one of my yolks split just in time I was able to get it out of me so I’m just going to use the Whisk attachment and whisk whisk them until they are um nice and.
Like what’s the saying like when Peaks form so they’re going to increase in volume and stiffen that is what they look like at the moment so that is nice and stiff so now that the egg whites are stiff I’m going to add one cup of sugar but I’m actually.
Going to add it while I’m beating it so bit by bit so I’m going to close it and then just open the little side bit here and go pouring in the sugar so one cup of sugar so that’s the egg whites and the sugar it looks very much like pavalova um and now I’m going to add the egg yolks I think I’m going to add them like bit by.
Bit again through here just to try and keep as much air as possible in the sponge cake so that’s changed the color it’s looking a lot yellower now with the egg yolks I’m just going to use a spatula to make sure everything of this is all very combined before adding in the.
flour okay so for the next bit now it’s the flour this is where we just need to go really gently so that the air stays in the cake sponges are nice and fluffy also going to sift the flour so um 1 tpoon of baking powder and one cup of plain.
Flour this is glutenfree plain flour as well that’s all gone through really nicely glutenfree flour is generally like quite soft so um it’s not hard at all to put it through the sifter so I’m going to use my spatula to fold the flour in just very gently I.
Want to combine while not um bursting all the air bubbles so that way the sponge will be nice and fluffy when it’s cooked I was find the problem with folding is like trying to make sure that all like everything is mixed in really well while not over.
Mixing so I can still see there’s some flour chunks in there so I got to keep going a little bit that looks mixed to me I’m just going to add in 1 tablespoon of boiling water mix that through and then it’s ready to go into the pan and into the oven so I’m going to put it in this pan.
I’m just going to um oil the sides and the bottom and I’m not going to like scoop it in roughly I want to go nice and gently to get the keep the air bubbles this is ready for the oven for half an hour really hoping it turns out really.
Well so I’ve got the sponge here so I’m going to decorate it cuz sponge is always better when you do it the day before um so I’m going to get it all ready for tomorrow night so first I’m going to cut it into two I just need to make sure because it’s going um that’s word it’s kind of concaved that where I’m slicing.
Is going to be below that point so it’s probably going to be end up being lower than halfway I’m just going to cut through now I’m going to flip the top over it’s actually there we go pretty easy to do ah so I can see there’s like a little.
Bit of flour there that must not have been mixed in fully when I folded it in but that’s okay so I’m going to put the cake in the plate in which I’m serving it because I don’t want to move it once I have decorated it so the first thing that I’m going to do to make sure that it’s not dry is to put some juice on it so I’ve got some pineapple.
Juice make it kind of easier to measure so I’ve just got a box of pineapple juice and with a spoon I’m just going to put the juice around the cake and it gets absorbed and it just makes the cake so much yummy ass like it’s not dry it’s nice and moist so I’ve put lots of pineapple.
Juice on here I’ve got some cream I’m actually using lactose free cream but I’ve got 300 mL of cream and I’m just going to whip that and then going to put that in the middle along with some strawberries I’m actually going to put some pineapple juice on the top as well so this is the base and then I’ve got the top just down here I I put a little.
Bit of juice on just because I do like like it can be quite dry um and I just feel like this tastes always so good but if you put too much on and the whole cake gets soggy then I won’t be able to put it onto the actual cake again so not H okay going to whip this cream cream is nicely.
Whipped before putting that on I’ve got some strawberries I’m going to chop up because I’m going to put cream and strawberries between the cake layers so I’m just cutting the white tips off and the green leaves and just going to slice it like.
that use a spoon to put the cream on can decide whether to do cream between and cream on top or put more cream between and then sprinkle icing sugar on top I’ll have to see how the cream goes.
Just going to cover as much area as I can with the strawberries I’m not going to worry about it looking like beautiful inside no one’s going to see this cuz it’s all going to be chopped and I’m going to put the cream on top of the strawberries and just make like a really big cream middle.
Bit bit of extra cream in the middle probably helps it stick on actually the top so that’s good okay um so this is ready for the fridge overnight and then tomorrow we just do the final touch it so I’ll put some spring um some I will sprinkle some icing sugar on it and decorate it with a.
Few more strawberries and it will look amazing so yum
