I think baking gluten-free mince pies is probably my favorite festive activity and in this video I’m going to show you how to make both classic minc pies and my IC minc pies but both of them start off with my easy gluten-free short crust pastry now this is really easy to make and I actually have a full video tutorial on how to make this on my.

Channel if you search for pastry there’s also a puff pastry one as well but this video will also give you an overview of how to make it so I’m stirring together my gluten-free flow some zanam gum which is really important for the texture and some sugar because I want this to be a sweet pastry and add in some cold butter and then we’re going to use our.

Fingertips to just sort of rub this together until it looks like breadcrumbs now if you find that your hands get really hot you can run them under some cold water before doing this and dry them off but I just find that the cooler you can keep this pastry the better and this is the sort of like breadcrumb consistency that we are aiming for with.

This pastry now once you’ve done this we’re going to add some egg and some cold water to the mixture now you only need very small amount of cold water and I’m using large UK eggs so if you’re in America watching this you probably need extra large ones I’m just going to whisk that together with the water and then add it to my pastry mixture and then.

We’re going to use a fork to bring it all together until it’s easy enough to get in there and use our hands now you might be watching this and thinking this looks too good to be true but honestly it is this easy to make glutenfree pastry there’s this common misconception that making pastry is going to be really hard but I think with all gluten-free.

Things it’s just a case case of trying to make things differently and not trying to bake the products the way you used to when you were able to use gluten because the gluten is what makes things really stretchy and elastic so we have to learn to work around not having that in the dough once you’ve made your pastry it’s really important that you.

To ice them so I mix up some really thick icing you don’t want it too runny because it will just get really messy trust me I’ve been there done that so you want it as thick as possible and we’re going to dollop a little bit on the top of each mince pie and just let it sort of spread out we want just enough so it stays within that pastry.

Case but don’t worry too much if it does go over the sides I let just leave it on a cooler rack until they’re all completely set and once I’ve managed to put the icing on all of them I like to finish mine off with some little sprigs of Holly now be careful because not all sprinkles are gluten-free a lot of them do contain wheat so you need to always.
