hello silly Bakers welcome back to my channel for those of you who are new here my name is Nene and I love to create healthier recipes my focus is higher protein higher fiber and great healthy fats so this recipe is dedicated to all the kids and parents out there that are getting ready for back to.
School I wanted to offer you a nutritious uh muffin recipe that you can make in I would say five minutes it takes about 5 minutes to make and it’s in the oven about 15 to 20 minutes I can almost guarantee that you have all of these ingredients in your pantry and in your fridge um this is a chocolate chip muffin recipe but you can definitely.
Replace the chocolate chips with blueberries if that’s what you wish um these are going to be far far healthier than what you find in your grocery store there’s protein there’s fiber and there’s some healthy fats um there’s also uh some additional fruit in there uh that I snuck in uh just for a little additional sweetness uh because I did.
Not add very much um sweetener in this recipe and I chose to use maple syrup but you can use whatever sweetener you like um this recipe you can make in a bowl or you can make in a blender because it does require o flour so if you have oat flour you can make this in a bowl but if you only have rolled oats you can throw everything except for your.
Chocolate chips in a blender um and uh just blend on high for about 2 minutes and it’s ready then you’re just going to transfer that to a bowl add your chocolate chips fold them in um and then throw them in your oven so um the recipe uh is for 12 muffins there’s about five grams of protein per muffin about three grams of fiber per muffin and also some.
Healthy fats um I had two kids test these a few days ago and my girlfriend got back to me and said that they devoured them so that made me really happy um the I added some flax seed in there okay now I added enough so it is not detect I promise uh give it a try if you have the flax seed throw them in I can almost.
Guarantee you that your kids will not taste it so why don’t we make a healthier Greek yogurt chocolate chip muffin add silicone liners to your muffin tins uh 12 total you can use two muffin tins or you can use one that’s completely up to you you can also use paper liners here I’m going to grab a large bowl.
And a whisk in the bowl we’re going to add two eggs 1 cup of Greek yogurt this is 0% Fat Greek yogurt it’s lactose free 1/4 cup of a mashed banana 1/4 cup of pure maple syrup you do also want to add one teaspoon of vanilla extract and 2 tbspoon of melted butter.
Good quality butter if your Greek yogurt is higher in fat you can omit the butter and you want to whisk all of that together you can also use coconut oil instead of the butter I’m not a fan of using any vegetable oils um in my recipes um you could try olive oil unfortunately I just haven’t tried it so I just think butter has a better flavor.
For muffins just mix everything until it’s smooth we’re going to add 1/4 teaspoon of cinnamon you could go up to a half a teaspoon if you like 1/4 teaspoon of salt half a teaspoon of baking soda and 1 teaspoon of baking powder I like to add my leavers uh to my wet ingredients just so I don’t need a.
Separate Bowl to uh mix my leaving agents with my flour when I do add my leavening agents to the wet ingredients I want to ensure that it is mixed through very very well next we’re going to add oat flour 2 cups you can replace up to a cup with almond flour if you like we’re adding 2 tbspoon of ground.
Flax seed just for some extra nutrition and we’re going to give that a mix just until it’s combined next we’re going to add our chocolate chips this is a half a cup of mini chocolate chips that I’ve coated.
With a about a half a tablespoon of oat flour this will actually help prevent them from sinking to the bottom while they’re baking and we just want to mix that through until again it’s just combined a trick that I have learned is when you are working with muffin batter that letting muffin batter rest for at.
Least 10 minutes really helps create this really beautiful Dome on your muffins while it’s baking so I would say Let It rest for 10 minutes and while while it’s resting is now the time to preheat your oven to 350° f using a small ice cream scoop I’m going to divide the batter into these 12 liners so it’s actually almost exactly.
Two of these Scoops per muffin liner now it’s time to bake we’re going to bake at 350 for about 15 to 20 minutes until they are golden and your toothpick comes out clean they smell delicious enjoy our healthier Greek yogurt chocolate chip muffins thank you so much for watching.
