welcome friends to my kitchen Ben as we go through Thanksgiving and we G to have a lot of leftovers I thought I would show you uh something that I do when I have extra leftover um turkey and have a lot of vegetables and things going around the house I’m going to make turkey pot pie.
Or if you don’t have turkey you can substitute for Chicken but I’m going talking because we’re going into Thanksgiving and we always going to have leftover turke and we don’t know what to do so that’s what we do that’s what I’m going to do with leftover turkey in here I have uh celery carrots onion and leaks um I like the leaks it gives a.
Different flavor to the whole um pie this is not a pie it doesn’t have a crust if you want to make a crust you can’t I’m not making no crust this is turkey pod pie with biscuits we put biscuits on top which I need to get out of my refrigerator so I have here my marqua I have here potatoes cubed potatoes and then I had.
Leftover butternut squash throw it in my turkey add leftover mushrooms for my stuffing I’m going to do it parsley garlic I need some corn starch but you can also use your leftover um gravy you can add into this I have some heavy cream I have some homemade chicken stock this is some bacon fat that I’ve been reserving in here um I’m going to use.
That instead of um oil to Brown the vegetables salt pepper and then some time so as we approach that Thanksgiving which is coming up this is one way of getting ready of those leftovers and especially of the turkey and you can make all this and put it in containers and put it in a freezer and then assemble when you want to to make it or.
You want to bake it you can even put in tin foils do everything and then just throw the tin foil in the any oven and you bake it and you have dinner in no time make everything at once if you have a lot make all at once assemble freeze it and it’ll be ready when you want it so I’m going to move all this to the counter and I’m going to show you how I.
Make it to my pod I’m going to put some bacon fat and if you don’t have Bacon Fat just use olive oil that’s fine I just happen to have it and it gives a extra flavor so why not make do it when I fry bacon I put the fat in.
Here so anyway so we’re going to let this melt okay my Bacon fat is all melted and I’m going to add all my vegetables all my marqua my celery my carrots my onion and my leak okay and then my.
Mushrooms I’m going to put a little bit of uh salt so help to draw the water just a pinch it helps the water to come out of the vegetables and soften the vegetables faster this is ideal even if you have other vegetables any vegetables you want to use um you can put any kind of vegetables in here green.
Beans so as I said this is one way that I do when I have all those leftovers um from um from Thanksgiving and I’m going to do another recipe later on with that kind of using the same idea but instead of the the biscuit on top if you have.
Leftover um stuffing put the stuffing on top and bake it get rid of that stuffing but anyway so we’ll let this uh vegetable soften here maybe about 5 minutes and then I’ll show you this is my homemade uh chicken stock or.
Stock um and I have a video already showing but I have too much of this fat I’m going to get rid of it I don’t want all this fat and once you put it in a freezer salot of F and it makes it easy to add my garlic now and I’m going to add some um thyme I probably have about a teaspoon in here.
I’m going to add it all if you have fresh add fresh I don’t have no fresh time this time and the vegetables are already getting softer and to this now we’re going to make um the sauce the thicken and I need this to be glutenfree so I’m using corn starch cornstarch has no gluten so if.
You want to make gluten-free instead of flour to make um stuffing I mean gravy or any thick in any sauce you use um uh corn starch and I’m going to mix all this and mix all that corn starch with that those vegetables that way it eliminates any lumps.
Okay and I’m not putting no more salt if you’re not using homemade chicken stock or stock you can put a little bit of salt but I’m going to try see because I put some salt in my stock and I want to make sure how it is so making your own stock this is the difference it’s gelatin and like I said I have a video.
Already showing how I make my stock and uh this is one good flavor uh stock it’s not water it is Flavor this is all flavor in here I’m gonna add a little bit of water to rinse that this is what I do save for all my stocks I have here the celery the pieces that you discard that you’re not using the onion peels I have.
The hard the hard pieces from the the leaks carrot peels the butternut squash peels I put it in a Ziploc bag and now I’m going to throw it all in a freezer when I half enough to make stock I throw all this and it makes the most delicious stock so anyway so now I’m going to mix all this and I’m going to add I’m probably a.
Cup of water add this I’m not going to add at all cuz I I can see I have enough liquid in here okay then I’m going to add add my potatoes and my um butternut squash and I’m going to add all that into.
This and I cut them all about the same size you want all this kind of the same size so it cooks faster and I’m going to let this cook in here first until those potatoes almost cooked because when you put them in the oven that that way you’re not cooking too long in the oven you done most of the cooking in here I’m going to try.
This um to see if it needs more salt not much a little bit but not much o that flavor is so good so maybe about 3/4 of a teaspoon and just a little bit of pepper and now I’m going to cover this and let all those flavors um blend and cook all those the potatoes I’m going to put the rest of.
The water so you want just kind of enough water to everything to be loose not tight okay I’m going to put the lid on and I’ll check in about 10 minutes okay friends it’s been 10 minutes and my potatoes are not cooked all the way but they’re almost there so now we’re going to put some.
Cream I’m going to just eyeball it I’m going to put maybe 34 of a cup okay and if you see you need more you add more and we’re going to add all that turkey whatever left over most of it that left over here is the breast so that’s what we’re using everybody likes the dark.
Meat okay so now we mix all this and you can assemble these individual perfect I have a half a cup of parsley fresh parsley add that to it and I’m going to add a little bit more milk I mean heavy cream so maybe a cup and a half.
Total and then I also have frozen piece I like to add frozen piece you add whatever you want at this point you can add anything you want oh so maybe a cup a piece they’re still frozen and then I’m going to taste again for salt here I’m making a mess and then we’re going to let this.
Come to a simmer and if you see you need more sauce or more juice add more to it it is so good I’m going to add a little bit more salt just know I have a lot of potatoes half a teaspoon it’s better to add less than add.
More and then with the cream it kind of made it sweeter and this is the perfect consist y that I want so I’m going to let this bring to a boil again and then I’m going to show you the next step okay friends my turkey H pie is done and now I’m going to put in these containers so I this small one I’m going.
To freeze it for us these are for my son for my sons I’m going to take it to them so I’ll freeze them when um I go see so anyway so it’s just for the two of us so I know more and less what we need it and you got to leave space because we’re going to top with um the biscuits uh one of these I’m going to.
Make glutenfree cuz it’s from my son he’s a glutenfree intolerant so I’m going to make one of those and here I got rid of all those veget vegetables and the turkey that I’ve had left over from Thanksgiving so you do this with your.
Leftovers I said if you don’t even want the biscuits I’ll I’ll have to try that because I haven’t done it yet but I thought it why not instead of biscuits put your dressing on top and be your topping how good would that be I’m going I have to do some of that we don’t have no more dressing left over so that’s why I’ll have to do another.
Time and you know what your kids wouldn’t even know your husband your family members wouldn’t even know that that’s left that’s leftovers so all right this is my gluten-free biscuits I have a video already of these very easy so I’m just going to top it on top kind of shape them so they can.
Fit that way it makes it easy to make a topping and then if you have little pieces I cut them to fit the edges so everything gets covered and like I said you do everything in one sitting do all of it and assemble all at.
One okay these probably fit I’m going to cut one and half maybe six and then cut one in half and here you have it and then when you need it just brush them uh take them out you can take them the day before to thought out brush some.
Egg or some heavy cream and you’re done and roll out your biscuits if you’re going to make it individual if I had to make individual ones roll out your biscuit gets and then it fits right on top of your individual you do the best you can doesn’t have to be all covered and this one is for us so now.
I’m going to bake this one and I’m going to freeze these for my sons you can use egg a egg wash but I’m just using uh heavy cream to brush the top to get it golden that’s it I’m going to do to all of them that way they’re all done um when they want it they just put it in the.
