My wife and I enjoy watching Gordon Ramsay’s cooking shows while in Las Vegas to catch a concert we had dinner at Hell’s Kitchen and it did not disappoint the food was fantastic I had sea scallops The Beef Wellington and sticky toffee pudding however because my wife was glutenfree she couldn’t have the beef wellington.

She had the lobser rizoto and F minion instead because of this I wanted to see if I could make a gluten-free version of The Beef Wellington and I think I did a pretty good job and here it is the first step we’re going to take is we’re going to shape the Beef Tender Loin and we’re going to be using uh stretch.

Wrap to do that so we’re going to take our first piece and lay it down here and we want to shape it into like a round ball so we’re going to roll it one way and this wrap this around so we can kind of form it into the final product can if you can just imagine like.

A round like a round baseball so to speak so we have two individual servings just like that then we’re going to go ahead and chill these in the refrigerator so they kind of hold their shape the next step is to prepare the mushrooms so we’re going to add a little.

Bit of olive oil into a frying pan to fry the mushrooms and the whole point is to turn the mushrooms into a paste now these are not fresh mushrooms these are actually canned mushrooms so we’re going to kind of do this a little bit on the cheap and we’re going to add just a little bit.

Of salt a little bit of pepper and just a pinch of thyme and we’re going to go ahead and stir this and reduce this down until there isn’t any more moisture and so that once everything is dried out we can put it into a blender or a kitchen.

Aid to a food processor and turn it into a paste the mushrooms are pretty much cooked and they’re done and ready to be processed into a paste just like.

So the biggest problem with beef wellington and being glutenfree is to puff pastry now it is possible to make puff pastry that is gluten-free but it’s quite complicated and it takes a lot of time so the pastry going to make is like a modified uh pie crust recipe that I often make and I’m making half of what I normally make for a pie crust recipe so.

The regular recipe actually calls for three cups of flour one teaspoon salt one cup of shortening and one cup of uh soda like Sprite or seven up now because we need a savory uh crust on this I’m just using regular water so I’m cutting the recipe in half so I’m using one A2 cup cups of gluten-free flour I’m using a half.

Teaspoon of salt a half cup of shortening and a half2 cup of water so I’m going to go ahead and add the flour and the salt gives the a quick little stir and we’re going to add the shortening and we’re going to go ahead and chop this up and we’re going to add the half2 cup.

Water and we’re going to go ahead and lightly stir this up then we’re going to put down two pieces of Saran wrap that are going to overlap each other about about two or 3 in just like so then we’re going to go ahead and put our dough in the center since we’re making.

Two beef wellingtons we’re going to take our dough and we’re going to divide it in half Smash down our dough just a little bit they’re going to take another sheet and cover that up and then we’re going to roll this out then we’re going to take the top sheet that we put.

Down and remove that off the top now we’re going to be constructing this backwards now this is our uh beef tender loing so if you take a kind of if you take a look at this you can kind of see how much pastry we need and how much be Tender Loin I mean this could have been almost any particular size but because these are single serving pieces we kind.

Of have more pastry than we really need and so we going to think that we’re going to wrap this up and over so we don’t want to have too much pastry so we’re going to have to trim some of this pastry and as we wrap this over we’re going to have some extra pastry on the sides so we’re going to have to kind of like deconstruct this.

And make this into a box where we’re going to have some fold joints hopefully that will make some sense so I’m going to take a butter knife here and I’m going to score this with some V shapes here where we don’t want to have overhanging or overlapping pastry so hopefully this will make some.

Sense when this folds up that way we don’t get double the amount of pastry on the sides so I’m going to put this aside so what we’re going to do next we’re going to take the Pudo ham we’re lay that down on top have a nice even cting the Pudo ham then we’re going to get our mushrooms put a layer.

Mushrooms on top of the ham you got to remember this is the top the edges are going to be the bottom so this is like got to remember underneath this is the top and that’s where the presentation is going to make the difference next we’re going to sear the loin.

About 30 60 seconds then we’re going to take the meat after it’s been rusted place it in the middle there then we’re going to gather up the sides it kind of turn it all the way over you can kind of see how that’s going to look like once we’re all done.

We’re going to then mold everything to the me inside and you can kind of see why we we trim the sides of this because it’s going to end up looking like a rectangle you can kind of see how this is in a nice little packet now we’re going to put that aside I’m going to lay down several layers of.

Plastic wrap unless you have some really industrial kitchen braid wrap I can put down three layers something will be nice and strong and I’m going to put this in the center and gather everything up nice and tight I’m going to twist.

This to hold it holds its shape so this is the top of our Beef Wellington this is the bottom I’m going to put a little wire tie not a wire tie but little twist tie on the back of this and this is going to go in the refrigerator to chill so it holds it shape a little bit.

Better these are my beef Willington after they’ve been refrigerated they’re a little bit more firm and can be handled a little bit easier without falling apart next we’re going to go ahead and coat these with a egg wash there two eggs and one tablespoon water with a dash of.

Salt now if this was puff pastry we could score them and really make a nice little design but because this pastry is so delicate we’re not going to score them but we can gently just imprint a design on here I’m just going to roll this knife blade across it without actually cutting it too deep make a simple crisscross.

Pattern I’m not going too deep into this like so so this is all ready to go into the oven maybe give you a little bit closer look at this but this is going to go into the oven for 15 to 20 minutes at 400° and and then we’ll let it rest and we’ll add this to the rest of our dinner this is a beef Willington right out of.

The oven now one thing about gluten-free pastry doesn’t Brown up very well you can kind of see it’s a little bit Brown and you can kind of see a little bit of the egg wash there so we’re going to go ahead and cut this in two and take a look at the cook inside and I’m hoping this is rested.

Enough to do this so let’s take a look at that and that is medium rare just how it should be so go ahead and I’m going to go ahead and plate this and we can take a look at the final but oh that looks good that came out really nice so we have the beef wellington.

Here on top of some garlic mashed potatoes then we have some asparagus and then we got some sauce for the Beef Wellington and I’m going to hold off on my wife just to make sure she likes the sauce so there we go Beef Wellington and.
