Indulgent and Wholesome Flavors in Every Bite!
Hello friends welcome back to my channel this is Batel from Mattel’s kitchen and today I am super excited to be back with a new pancake recipe for you guys and this time we’re going to be making a super indulging and healthy vegan blueberry oat pancake which is so.
Delicious and very very impressive if you want to make a really nice breakfast or brunch for your loved ones or for your girlfriends or even for yourself if you want to incorporate more blueberries into your diet very very special very very comforting I hope you’re going to give this recipe a try all the measurements are going to be in the.
Description box below or my website thekitchen.com okay guys let’s get started to begin we’re going to make our oat flour which I’ve sh so many time on this channel but here I’m going to make it one more time so into a high-speed blender we’re going to dump our old fashioned oats and we want to grind it.
Once or twice until we get a really really fine texture you can also buy oat flour from the store if you wanted to we’re just going to check that there no any lumps or any chunks and we’re going to put it to the side in the meantime we’re going to make our butter milk which is very easy we want to dump into a plant milk that we have over here.
We have soy milk we’re going to add apple cider vinegar we’re going to add the zest of the lemon which could be added later but before I’m actually cutting my lemon I like to zest it for easier results so to this milk we’re going to squeeze our lemon as well you can either use just apple cider or lemon juice but I’m using both today and that.
Is going to create some sort of like a buttermilk with a really nice and light Tang that needs about 10 minutes so we’re going to put it to the side and now we’re going to actually start making the pancake themselves so we are going to mash half of a banana or if you want you can also use applesauce instead the banana should be ripe and.
Nice into a bowl we’re going to dump our oat flour and to that we’re going to add almond flour as well we’re also going to add aluminum free baking powder and a tiny pinch of pink Himalayan salt we’re going to mix those dry ingredients to combine and now we can start to add our wet ingredients we’re going to start.
With the mash banana and we’re going to add our buttermilk as well we’re going to give it one Final Mix just to combine everything and we’re going to add a tablespoon of coconut oil just to enhance the flavor flavor we can also add a little bit of vanilla extract and we’re ready to mix everything very very well with the Whisk very important to.
Really use a good whisk so we don’t have any lamps and we need everything to be very thoroughly combined we’re going to add our fresh blueberries and I also love the combination of chocolate chips as well which are totally optional but I just love the sweetness and the tanginess from the blueberries we’re going to let.
This batter seat for about 5 to 7 minutes and you’re going to notice that it really drinks most of the moisture so if you need to you can always add a little splash of milk to make the batter a little bit more thin we’re going to oil our pan and we want to use a medium high heat and we’re going to scoop those pancakes with a.
Measuring cup I’m using four a cup over here and we’re going kind of like to pile those pancakes so we’re going to do a about two or three in a pen and very important is to let it sit until we really see bubbles that are forming before we flip them otherwise they’re just going to fall apart so the magic here is just patient we’re just going to.
Wait and we’re going to see that the pancakes are also starting to Ooze from the juice of those blueberries which is extremely delicious so even if your pen is getting a little bit dirty you can wipe it along the way we’re flipping those pancakes and they’re ready to be transferred to a serving plate they’re best best when.
They’re warm because the blueberries are really bringing all these amazing juices and here you have it a really really indulging and so delicious pancake that has this really amazing flavor from the lemon from the banana from the blueberries themselves and we are going to add a little bit of maple syrup which is optional but here you have it a.
Really nice breakfast or brunch that is so elegant and so nourishing the oats are really really filling and what I love about this recipe is that it makes me eat so much more blueberries without thinking about it just in a different form I love that it is so fluffy and Airy and very very light and at the same time you feel.
