How’s it going folks Irish Baker abroad Chris over here in Denmark this evening you know I’ve been out in the garden today and uh this has been on me mind been kind of working out what to do I want to make some soda bread some uh gluten-free soda bread so the blend I’m going to go with here I’m going to go with some uh buy I’m going to go with.
Some potato flour potato starch some uh fine cornmeal and some rice flour some white rice flour okay I’m going to stick the full amounts in the description in the post all right I’ve got some uh bicarbonate of soda some baking soda I’ve got 3/4 of a teaspoon and I’ve one teaspoon of baking powder just want to give it an extra lift uh.
I’ve never done this this is just a theoretics let’s see how it turns out I’ve got some salt here I’ve got one teaspoon this quick save here probably don’t need to it’s just to kind of uh incorporate that um baking soda baking powder evenly distributed throughout the flour it’s going into a mixer so I.
Probably don’t have to do this but I’ll do it anyway better safe than sorry as well the bacon at this I’m going to give it some steam I was thinking though get some steam some heat give it a good kick start now we’re going to turn the temperature down and finish it off bake it.
Through this is different to a yeast bread now so we’ll see how it goes got our Mixing Bowl here and I’ve got 350 mL of Buttermilk I’m we have to add a bit more I don’t know let’s see how it combines how it absorbs that liquid I’ve got 2 tablespoons of psyllium husk ready just mix that around.
We let this absorb some of the butter milk just leave it there for a few minutes all right this is absorbed some of that celium husk I’m going to add two egg whites to it just to add a bit of volume bit of lightness a bit of sugar to it as well this is optional this is going to help with a bit of flavor and add some color to it.
We add our flour Blends today we go this will be more liquidy at the start once it continues to mix and absorb it will ticken up a lot of people are saying you shouldn’t over need soda bread remember there’s no gluten in this that’s the reason why we don’t over need uh soda bread we don’t get that.
Gluten all activated and tightened up you know just chewy red we don’t right start off slow and generally generally start off slow and then increase the speed okay I’m going to mix this for about 5 minutes until it’s nice and.
Smelled that’s ground see right you need a bit of gluten-free flour I’m just using a bit of Booky put plenty on let’s get some flour on top too this to a bowl Lo and easy.
got a tray here some parchment paper though here we go P we flour on top let’s stick with Traditions let’s do across and let’s let out a few fairies right okay into the oven Ro here we are.
At the oven welcome to the oven uh we’ve got it up here on 250° C got our bread turn off this fan we got our boiling hot water here wear the glove or something I’m Just Deadly at this I’m going to bake this for about 20 minutes then we’re going to turn the.
Heat down to 200° C and then uh we’re going to bake it for another 25 30 minutes or so I’m going to use a thermometer just to be sure and I’ll stick everything in the description under the YouTube video or in this post on Facebook all right uh this by the way it’s a pure experiment swear to God I’ve never done this in my life uh I’ve never.
Researched gluten-free soda bread either I’m just kind of thinking what how things would work how uh how if you make certain things together uh what’s going to come about um so we’ll see we’ll see the result it’s looking very decent in the oven and um you know we’ll check it when we cut it open we want to let this cool completely normally I just don’t.
Have time uh I want to get this out this evening this this video and I don’t want to get in too late all right but uh it’s nearly done and then we’ll check it out okay so this has had 40 minutes now I’m going to check it out like I I did say 50 minutes but you don’t know it’s an experiment so 96.
97 98 so that’s done let’s take it out there we go look at that look at that for the result look at that that’s it everyone could be a part of St Patrick’s Day next year have a gluten intolerance there you go you’re sorted right I’m going to let this cool.
Down and then uh I’m going to slice it open we’ll have a slice you know the taste as well that’s very important of course it’s not all about beautiful good looks but look at that all right glue and free okay I’m going to let it cool down now that was 40 minutes total uh 250° C bit of steam 20 minutes we Tor it down to 200° C and.
We baked it for the 4 or 20 and uh so it’s perfectly cooked inside there shouldn’t be any any messing about there any Gess or any sess uh nness all right okay we’ll check it out all right right well here we go that’s it folks I couldn’t let it cool completely don’t have time it’s slightly warm but uh we’re going to cut it open.
Now we’re going to check inside all right let’s check out s it Savage at a perfectly cooked through slice Soder bread glutenfree Soder bread perfect this is all meaningless of a taste.
Got let’s have a look little crunch there lovely it’s perfect it’s perfect there’s nothing too overpowering or salty or anything perfect amount of salt I can taste the sugar I put in I’m getting a little bit of sweetness uh it’s lovely I like it if.
