Crab cakes are on the menu of almost every restaurant out there but how do you make them at home especially for food restrictions if you can’t have egg dairy wheat any of that stuff well I got you these are grain-free dairyfree uh glutenfree crab cakes and they are winners let’s get to it one of the difficult things with crab.
Cakes especially when making them for food restrictions is how to bind them together typically you’re talking egg breadcrumbs um you’ll have maybe some Parmesan cheese in there but if you’re dairyfree and grainfree and egg free well those aren’t really options so what we’re going to do I’m going to use some simple Mills almond flour crackers uh.
These I’m going to Blitz up in here and turn them into our breadcrumbs which will be super helpful and then this is my trick I use this as a binder for so many things chicken nuggets meatloaf whatever anything that you need to B bind together this is a white flesh sweet potato baked cooled down this is really going to help hold.
Everything together first we’ll start with the crackers I’m going to use just this whole bag I may not end up using that many breadcrumbs for these probably won’t but I like making them and I have them on hand because I use them in a lot of different ways so we’ll Blitz those up until it resembles breadcrumbs that.
Is perfect perfect breadcrumb consistency now let’s start assembling the crab cakes first we have some thyme and just some green onions these are three green onions trim off the white ends and then we’re just going to chop all right I’m going to go till I have about a half a cup this into our Bowl now.
Time um to get the leaves off that’s the only part we want you just pull downward and then those leaves go in three to four sprigs of time now I have two types of crab meat here I have a crab cake blend which includes jumbo Lump Lump and just claw meat and then I have one of just the claw meat so I’m going to start.
With the container of claw meat this is one cup 8 oz that goes straight in to that cup of claw meat we are going to add our sweet potatoes so I’m just going to peel this off the measurement of it of it does not need to be exact it’ll be fine this has been baked in the oven for um about 45 minutes until soft.
All the way through and then cooled to room temperature till it’s you know just completely soft okay this is a great time to add some seasoning because the claw crab meat is already pretty shredded um we want to mix it together as much as we can here.
Um and it almost becomes part of our binder we’re also going to season it well so that it can evenly distribute throughout the rest of the claw meat um and the lump uh crab meat we don’t want to break those bits up you don’t want everything to be shredded so we work this first bit of crab meat a little bit more cuz it’s already shredded and then.
We can be more careful with the rest of it for the seasoning um you can use Cajun seasoning I’m using my house seasoning here Cajun seasoning you’ll probably do about a tablespoon total uh maybe two teaspoons but do that to taste grab another glove mix that together now the rest of.
This crab meat We’ll add that in this is one lb and you can see there are larger pieces here that if you can keep them intact do so be a little bit more Ginger with this okay our breadcrumbs that we made I’m going to start off just with about a/4.
Cup I have mashed potato flakes in with that and we will mix that together carefully until uniform in texture I’m going to let that sit for a little bit in the meantime I’ve got a pan back here that I’m going to turn on to low heat get it starting to heat up and the oven is on 375° on the convection setting for cooking the crab cakes I’m going to use.
A mix of duck fat and graza Sizzle olive oil this is better at a higher temperature to our pan here we’re going to add about 1/4 cup of duck fat and then 2 tbspoon of olive oil I have here about A3 a cup to a half a cup of potato starch which for frying when you’re grain-free potato.
Starch is superb it gets real crunchy and uh I just love it very very much we’re going to add a teaspoon of our seasoning we’ll just spread that out okay so we’re going to take a good portion of this we’ll press it to together and form it into our cake shape you want it to be about an inch thick maybe 3 in around I’m actually.
Going to just take some of our breadcrumbs press it down on one side flip press it down on the other right into our Pan Once you can start to see the brown happening around the bottom then we’ll flip and after they’re all flipped it’ll go in the oven to finish cooking while we make our.
Sauce those are in the oven 375 they’ll be in there for probably about 10 minutes so we’re going to make our sauce real quick this is kind of like a rulade I don’t go like as in-depth as aulad sauce it’s like an easier version we can say we’re going to start with some manic a thir of a cup I have one garlic clove we’re going to grate that Grill those.
Pickles but I’m just using the liquid from it it’s okay if some of the dill gets in there we’re going to use about two tabl spoons I would say Tabasco sauce this is going to be about a half a teaspoon who to Shear this will be a teaspoon then salt and pepper to taste just a good pinch of that W this looks so good smells delicious.
Let’s plate one up amazing time to taste and I’m really excited about this that is so good I love it so much really tender the sweet potato it adds that sweetness but it does not like read sweet potato at all the flavor on it is incredible.
