Deliciously Crunchy Coconut Oat Cookies – A Vegan Twist on Classic ANZAC Biscuits
Hello everyone welcome back to another vegan and gluten-free recipe episode on this channel today we’re heading far far away from the United States all the way down under and making this batch of Anzac biscuits before I dive in I want to give a quick shout out to Bob Hanks one of my subscribers for putting Anzac biscuits on my radar for those of you.
Watching from Australia New Zealand the UK and other commonwealth countries you probably need no explanation about what Anzac biscuits star but specifically for my American viewers I want to take a quick moment and just give you an overview of these biscuits we would call them cookies here in America the word Anzac is actually an acronym it stands.
For Australian and New Zealand Army Corps which fought in World War I so where the biscuits come into play with this Anzac Army Corps is there were mothers girlfriends wives loved ones who wanted to send food over to their boys who were fighting one issue that they had to consider was that they would be sending food on ships to make it all the.
Way over to the area of fighting as you’d expect the ingredients of an Anzac biscuit are very nonp perishable the soldiers could enjoy their Anzac biscuits that had been prepared by their loved ones several weeks prior there’s eight ingredients I’m using to make these vegan and gluten-free ANC biscuits and seven recipe steps I linked the.
Recipe that I’m following down in the description box if you’d like to follow along with me at home and make some of these Anzac biscuits yourself let’s first go through each of these eight lovely ingredients going into the Anzac biscuits one by one super quickly first up we have 1 and 1/2 cups of rolled oats 1/2 cup of coconut flour traditionally.
Anzac biscuits have desiccated coconut instead of coconut flour but personally I really don’t like the texture of desicated coconut it just has always bothered me but I do love the flavor of coconut and I can talk toate it as flour instead of the desiccated form so that’s why I’m using this coconut flour there’s also 1 teaspoon of pure vanilla extract.
1/2 cup of sliced almonds 3 tbspoon of extra virgin olive oil 3 tbspoon of pure maple syrup traditionally insc biscuits have what’s called golden syrup or treal but I decided to have maple syrup instead it’s just my sweetener of choice 1/4 teaspoon of baking soda to help the Anzac biscuits rise when they’re baking in the oven and finally 1 and 1/2.
Tblspoon of water now let’s go through the seven steps of this Anzac biscuit recipe for step number one I’ll take the 1 and 1/2 cups of rolled oats and pulse them down in my food processor which I have all ready to go right here I’ll pulse the rolled oats down for about 20 seconds until they’re looking like a nice coarse oat flour for step number.
Two I’ll add the remaining seven ingredients all into this food process if I can I mean hopefully they’ll all fit if not I’ll just do it in batches I’ll pulse the mixture down until everything is looking well combined for step number three I’ll use a tablespoon to scoop out rounded cookie dough balls and I’ll put those onto a lined baking.
Sheet which I have already to go on my stove top I’m hoping to form about 20 Anzac biscuits in this batch we’ll see how it goes there might be a little less there might be a little more doesn’t have to be exactly 20 for step number four I’ll I’ll use a fork to flatten down the cookie dough balls on the baking sheet for step number five I’ll.
Take the baking sheet with the Anzac biscuit dough balls place it into my oven and bake the biscuits for about 20 minutes at 320Β° fight for step number six I’ll remove the baking sheet from the oven once the Anzac biscuits are all done baking I’ll place it on top of my stove top and let the biscuits cool down for about 30 minutes and finally for.

Like many of you know I love texture in my food and this has plenty of it I’m getting some of the rolled oats that didn’t completely pulse down in the food processor I really love when the Almond exterior is still visible it does add some nice brown color to the cookies and these particular cookies are very lightly sweetened I think that if you’re.
