Today we’re making a cast iron cherry cobbler, gluten-free, but you can also make it with regular flour if you want to do that as well. It doesn’t have to be gluten-free. Here are the ingredients I’m using. They’ll also be in the description below. Feel free to.
Pause here and take a screenshot so you can follow along, too. This is my cast iron pan that I have. It’s a 12Q one, so it’s kind of big, but you can bake this in a regular pie dish or baking pan or whatever. The cast iron just adds a little pizzazz and is super fun. We’ll start by tossing our cherries into the cast iron dish. Use two cans of.
Cherry pie filling. If you want to make this a different flavor, just use a different flavor of pie filling, but I love cherry. Then you add a little bit of almond extract to bring out all that juicy goodness. I love almond extract. It seriously smells like a bakery. Then just spread all your.
Filling around as evenly as you can. Mix almond extract in there well and get a separate bowl to make the topping. The topping, the cobbler topping is super simple. Just flour, sugar, a little butter, and baking powder for that golden biscuit-like crust. Start by putting 1 cup of flour, 1/2 cup of brown sugar, and 1/2 cup of white sugar in a.
Bowl. And then add a little bit of baking powder, and some cinnamon sugar. Again, I’m using gluten-free 1:1 flour, and I love the Bob’s Redm Mill one. But if you’re not gluten-free, you can make this with regular allpurpose flour as well. If you are using gluten-free flour like me, just make sure to use a high quality one:1 flour.
That has the proper amounts of zanthan gum. That way, it binds correctly. Now, don’t be afraid about that cinnamon sugar. Go all in. Add as much cinnamon sugar as you’d like. I added even more after this. All right. Now, we’re going to cut in the butter. If you don’t know how to cut in the butter, it’s super simple. You’re just going to basically.
Slice it like so. And then you can use a pastry cutter to smush it up. You can use two forks or you can use a whisk or just your hands like I’m doing. I found that my hands worked better. But basically to cut it in, you just kind of mush it all up in there until you get little p-sized chunks. It should be thick and lumpy and.
Kind of sandy just like so. Next, I’m going to show you how to make some buttermilk. You simply take a half a cup of milk and then 1 teaspoon of vinegar and just mix it all together. And then boom, homemade buttermilk. Or you could just use storebought buttermilk, too. But I didn’t have any, so I had to improvise.
But that’s all right, folks. Now, we’re just going to pour that buttermilk in and mix it all up into the cobbler dough. Don’t stress about making it perfect. Cobblers are meant to look rustic and homemade. That’s part of their charm. It should start looking kind of lumpy and thick like so. And that’s how you know it’s.
Perfect. Next, I’m just going to take my spoon. And I’m not worrying about the mess because again, they’re supposed to look nice and rustic. And just put globs of the topping over the pie filling. Not all of it needs to be covered. You can let some cherry peek through like so because it will spread out. Like I said, it doesn’t have to be.
Perfect and there should be just enough filling to cover about all of it, but you want to mainly get in the middle because it does spread out. Then go to town with that cinnamon sugar again. Pour it all over the top. And we’re going to get ready to put it into the oven at 375. I also sprinkled mine with some.
Granulated sugar on top. Now, my oven is preheated to 375. Watch me struggle get this in the oven. It It was heavy. We’re going to put it in the oven at 3 at 375Β° F for 35 to 40 minutes until the top is golden and the in the edges are all caramelized and bubbly. It’s a sign of greatness and the house smells.
Amazing. Let it sit for 10 to 15 minutes and then serve warm with vanilla ice cream. All right, guys. Save this recipe for your next cozy night in. You’ll thank me later.
