hey it’s Stephanie with the ranchers Homestead welcome back to the channel this time of year is when I tend to do a ton more baking we aren’t rodeoing um during the winter months we do a little bit here and there but we’re not in any form of a series or anything like that so we’re home a little bit more and.
We’re just indoors and I’m not bringing stuff in from the garden and trying to put that food up so it just seems to be the time of year that I bake a lot and um that is really fun the girls love having baked goods around all the time however it’s not so fun um to your insides when you are overdoing it with sugars and sweets so I am always looking.
For ways to have some form of a sweet for them um but not overdo it and be eating sugar constantly so we had a lot of sweets over the last couple weeks I would say you know with Thanksgiving and pies and cookies I’m my whole family here here so we decorated um Christmas cutout cookies all of that so we have had a lot of sweets so far so I wanted.
To fill my cookie jar and and um they’re out working cattle and so I thought it’ be a nice little surprise so I’m going to make some molasses cookies that are glutenfree and typically you would add in Sugar I’m going to actually add in coconut sugar now this is still a sugar so I say this all the time when you’re trying to avoid sugar then you just need.
To avoid sugar um but if you are trying to find um different substitutes for sugar coconut sugar has a lot of vitamins and minerals in it that is really healthy that are good for us and so um it does bring a different nature however it is still sweetener and any sweetener that is overdone is not going to be good for us it is going to spike.
Blood sugar it’s going to do all different things so you just need to be mindful of that if you’re taking the same amount of sugar intake that you normally do and you’re just substituting it for a natural sugar like honey maple syrup coconut sugar all of that you’re really not doing your body any justice so um yes those sugars the morning.
Natural sugars are probably better for you in some way than normal cane sugar they are still a sugar to our bodies and so we need to be mindful of how much we are taking in and not overdoing it so I have a cup of butter here that I’ve set out on the counter that I’m just softening right now and I’m going to use my stand mixer to make these um molasses.
Cookies up over here I just made up another batch of my allpurpose gluten glutenfree flour blend for this recipe you’re going to use a gluten-free allpurpose flour blend and um it’s good to find one that you like and that works well for you so this is mine that I make up it’s the most like cup for cup um I share it in my digital cookbook the.
Recipe there I don’t have it on the blog um but it is the most like that it is not dairyfree because I do put dry milk powder in it but if you were to buy a allpurpose gluten-free flour from the store I would recommend cup for cup Better Batter is a good one and I even like Bob’s dreadmill um they’re one to one baking mix so in the past back when.
I was young I didn’t care for their baking mix quite as much it was real grainy they’ve since changed the flowers that they use and things like that because gluten-free flour Blends are just that it’s a blend of different flowers and starches and so you have to pick the one that is best to your taste bud and that works best in all of your.
Recipes I find c cut Better Batter and Better Batter are the ones that do the best um Bob’s dreadmill 1:1 does wonderful as well now um and I just make my homemade one because it has all the flowers that I use in my Breads and so I buy those in bulk already so it’s easy for me to just make those up if you’re interested in that recipe check out my.
Digital cookbook and I’ll link that in the description okay I went ahead and took my one cup of butter that pot’s hot and I melted it on the stove and now I’m just kind of letting it cool a minute off of my stove top so it doesn’t continue to get hot and I’m going to add it to the bowl of my stand mixer if you don’t have a stand mixer you can do this.
In a regular bowl and Spoon I just use my stand mixer for everything so I don’t have to sit there and stir everything but you could definitely do this with just a bowl and Spoon so I’m going to pour my melted butter in there I’m going to go ahead and do one cup of coconut sugar if you don’t care and want to use can sugar sugar you can do that but some.
Kind of a granulated sugar and then I’m doing a four a cup of molasses this is just black strap molasses and then I’m going to add one egg and turn my mixer on and mix it all up okay now I’m going to go ahead and add in my flour I’m going to add in two cups of glutenfree allpurpose flour if you don’t need to be glutenfree you.
Could just use regular flour D this is only a half a cup all my cups are in the dishwasher so I’m doing four of those scoops and then I’m going to do two teaspoons of baking soda a half a teaspoon of salt and then you’re going to want to add in some really yummy spices so I have cinnamon.
Ginger this one’s not in a pretty jar cloves ground cloves all right I’m going to do a half of the ground cloves half of ginger that’s a half teaspoon sorry and one teaspoon of cinnamon now you’re just going to turn your mixer on or use a spoon to mix it.
All together okay so the dough is all mixed together and now at this point I’m going to take it and stick it in the refrigerator for 1 to 4 hours this is going to firm up your dough so you can form form them in into balls so um really the recipe I had found where I tweaked it to my own liking said 4 hours.
Was the minimum I did it last time for an hour and I didn’t have a problem with that um you just want your dough to firm up a little bit so I’m going to stick this in the fridge and I’m going to let it get solid a little bit more solid and then we’ll go ahead and roll them into balls and get them baked all right so it has been oh it’s probably been about 2.
Hours and I kind of felt my dough and it’s definitely hard and come together um I went ahead and started my oven at 375° and now I’m just going to take a scooper here and this is just one of those cookie Scoops I’ve got on Amazon a while ago and I’m going to roll it into a ball now I’m trying to stay away from.
King sugar right now so I’m just actually going to do these without rolling it if you wanted to do them like the traditional molasses sugar cookie then you can um actually take this ball of dough and roll it in some granulated sugar and that would everyone they’re very delicious that way too but I’m staying away from that so I’m just doing.
It um without rolling it in the sugar and I’m just going to put each individual cookie and I’m kind of flattening them in my hand just slightly so they’re a little puck and I’m putting them about an inch and a half to 2 inches apart on my cookie sheet and I’m going to seill my pan here and then we’ll get them the oven they’ll.
Bake for about 10 to 12 minutes okay so the timer went off and I’m taking them out of the oven I’m going to give them a minute to cool here on the pan before I used the spatula to put them here on the wire wack to cool all the way through I could have actually made them just even a little bit smaller.
These are going to be nice big cookies um for those that are outside working cattle when they come in to warm up and have a molasses cookie I hope that this was helpful for you gave you another idea of what um you can do as a Bak good in the winter time a gluten-free baked good and to minimize the sugar on it and um make sure to like And subscribe to.
