Deliciously Free: A Day of Wholesome Gluten-Free Eats!

For over 10 years from 2009 until 2019 I took photos of absolutely everything that I ate I had a Blog called the actor’s diet and it really helped me change my relationship with food I suffered from binge eating disorder and a little bit of anorexia and when I started to document what I ate and it got very boring.

Showing the same Foods over and over and over again it really helped me change my attitude about food and the most important thing was that it helped me feel at ease with food I did mention this in a recent video about how I don’t like to cook anymore and how things have changed.

Since the pandemic and since I was diagnosed with Celiac years ago um that food just isn’t interesting to me anymore and it’s part of why I no longer do food videos as much I thought I would prep a Thai curry situation like I have I have I have t Tai curry paste and I have I have coconut milk and I have big bag of rice.

And yeah just thought I would whip something together for tonight but while I do that I thought first I would walk you through a typical day of what I eat so yeah let’s get started the day starts with breakfast and I actually eat this sometimes for breakfast lunch and for dinner always.

Have oatmeal um I think I have a video from the pandemic where I actually perfected my microwave oatmeal recipe and I much much much much much prefer Savory oatmeal to Sweet oatmeal these days and when I have it for dinner I often add broccoli or cauliflower to it but for the most part I’m just straight up Savory oats with a little bit of.

Turmeric and salt and pepper and it is delicious so that is breakfast and I’m going to go wash some rice rice got to get the rice cooker where’s that rice cooker I keep everything up here now some nights I don’t have oatmeal for dinner and on those nights it’s usually something either I’ve cooked myself or it’s from a restaurant that I know that.

Is celiac safe and despite Los Angeles being so like gluten-free friendly I find that there actually are aren’t that many Celiac safe places like people really make a big deal about cross contamination which you know like for me I would rather not get glutened and be sick for days two cups of cow Rose rice are in.

Here I’m going to wash this while I continue talking to you although May that might be an annoying sound and I’m going to turn on the right cooker and I’m going to check to see if that sound was super annoying yeah okay that talking over the water was not working for me and I can not even lean.

On my sink without falling over maybe this was a bad idea to be cooking something whilst talking about what I eat in a day but I’m going to continue I’m going to power through um basically what I was saying was that I often bring energy bars with me to restaurants just in case I’m not able to eat what’s on the menu.

And I also love to eat them just as snacks and double them up as meals sometimes so I have a few favorites quest bars like regular quest bars but I really really really like their hero type which have like a crispy middle and a and a candy coated top they’re delicious my favorite one is the cookies and cream version I also really love.

Love built bars they taste like candy bars to me and they also come in these versions called Puffs which have like a marshmallowy filling which are also really delicious but they’re not quite as dense so when I’m a little bit hungrier I I don’t know psychologically these just fill me up a little bit better than normal ones not all of them.

Are gluten-free so definitely check the label while I’m here I eat one of these every single day it’s just roasted seaweed snack I sometimes get a Korean kind from Hmart but these I just have on bulk delivery from Amazon and it’s very easy so yeah sometimes I will eat those bars along with some fruit as lunch after my oatmeal for breakfast and then.

Sometimes I will eat some fruit and either I don’t know like some tuna with some with some toast or I really love these uh let me show you this company veggies made great makes like egg white frittata and these like flat egg whites and sometimes I’ll eat like a few of these with some fruit or I’ll eat one of these with some bread some more.

Gluten-free bread the glutenfree bread that I love is called carbonaut carbonaut and uh when I toast it up it like falls apart almost always but I also really love there’s a bakery called Super Bloom and you can order from the might still have a discount code with them going to put this back hold on also wanted to add that Trader.

Joe’s pumpkin pie spice Bagel really really really good so yeah that will usually be lunch I start making the rest of this this soup if you watch the other video you’ll know how hard fought and appreciated this plug is oh I did want to say that another thing that I eat a lot of which which I don’t eat right now.

Cuzz it’s very cold is I make um protein ice cream with my ninja creamy uh I often like to just whip up I mean that’s like a whole other video in and of itself like there’s a science behind all the ninja creamy recipes but usually I will use either like a plant-based milk some protein powder a little bit of pudding mix or some xantham.

Gum and I will add in some fruit sometimes we’ll make ourselves little pints of high protein ice cream or sorbet I think recently one of the best ones was just like fruit juice with some xantham gum and uh we definitely add like monk fruit sweetener to sweeten it up cuz when things get Frozen They’re not as.

Sweet and we also have like a fun little toppings bar let me show you yeah this is our toppings bar and it’s basically like just dried fruit and nuts kind of like um you were in Yogurt Land or Menches or one of those frozen yogurt places but uh not chocolate chips and sprinkles I’m really just going to be using Pantry.

Ingredients for this soup and I’m not following any actual recipe but I will be using some of this curry paste that is brand spanking new I don’t want to make too much stuff going to add some ginger rinse all garlic paste wow looks really disgusting in there um actually I should plug this in and I can use like.

The sauté feature to start to bring these flavors out let’s get a little spoon I love these wooden spurtles and just get in there and actually let me get some liquid in there I wanted to add a little bit of tamari I have like a billion of these little tamari packets from when we went to Japan and I thought I was going to be.

Just like whipping them out of my bag and I never did I never needed to so I’m just going to add some tamari to that oh yeah it’s definitely a little sizzly in here M smells good I’ll just add in some of this coconut milk wow that’s so pretty sorry the lens is getting very steamed up I this bag of frozen spinach I’m just.

Going to plop it right in there chop frozen spinach quite Frozen already making a mess so the last thing I’m going to add is this firm tofu now I could press this and drain this and do all of that but um I’m as you know extremely lazy so I’m not going to do any of those things I’m just going to cut it up and add it straight into the.

pot one of these days I will do pressure cooker but not today well while that cooks I’m going to clean but first I have to show you the other things that I eat in a day so um we covered breakfast we covered lunch we covered dinner and then after dinner I like to just snack I I do nothing but.

Snack so some of the things I like to snack on are raw carrots I love portabella mushrooms I like to have them along with a cup of miso soup that I’ll put together I just finished actually my bottle of miso easy which I love and I settled for maybe I didn’t settle but I haven’t tried this yet this is called minute Misa which is very similar and.

What I do is I combine like a teaspoon or a tablespoon of this with some kimchi juice and it is delicious I’m not sure if this is going to be delicious but with the Miso easy it is delicious here is the kimchi I also snack on kimchi like straight up and I only buy kimchi that’s from the Korean market I’ve tried to buy versions of it.

From Whole Foods or other places no don’t don’t do that if you if you don’t have to don’t don’t do that another thing that I snack on a lot along with all those things puffed corn cereal now you may be like wait are those Corn Pops yeah they’re kind of like Corn Pops they’re kind of like.

Poporn they’re not like popcorn in the sense that it’s not like shaped the same but it’s pretty much the same I mean it tastes the same they’re unsweetened puffs of corn I just eat bowls and bowls and bowls of this like I would say I probably eat like four bowls of this while I’m like watching TV in between my um miso and all those other.

Things in fact I eat it so much that that I don’t know if I should even show you this but above above my counters where I have extra storage space I buy an in bulk and I just have a lot of it I’m not going to show you my my stash my husband calls in my scroll stash but I will show you the easy access box that I have here as proof that I am completely.

Obsessed yeah so here’s my easy access box it contains extra roasted seaweed and multiple bags multiple bags of the arrowhead Mills organic puffed corn cereal and yeah I’m I I can’t show you what’s up there I can’t show you because it’s it’s embarrassing it’s embarrassing.

I mean all this is embarrassing but that is particularly embarrassing is that it is that what I eat in a day along with a ton of diet soda and hot water um yeah that’s basically it I think you can see why I choose not to share food content anymore given that like I used to be somebody who was like eating sandwiches around the world and just like exciting.

Things like noodles and pizza and and all these like really sexy desirable foods and now I’m literally eating unflavored popped corn I’m actually not ashamed of it it’s just I can’t take the criticism that I know you’re all thinking or maybe some of you are thinking but eating this way has helped.

Me just sort of wipe the Slate clean when it comes to obsessing over what I eat and what safe to eat for me as somebody with Celiac who does not like the effects of gluten they’re they’re terrible they’re really terrible and so I would much rather not have to deal with that and not have to deal with all like the mental chatter of what am I.

Going to eat is it going to fill me up is it going to be satisfying am I going to gain weight from eating this like that’s something I just have to be real with like that I don’t want to be perceived as somebody who cares about how much I weigh because I used to do so much body image activism I still consider myself a body image.

Activist but it’s difficult when your relationship not only with food but with your body and your aging body comes up it just is different and Society is different and people judge and so I hope this was helpful for anyone who has like a lot of chatter in their head it’s.

Been interesting because I’ve been reading a lot or hearing a lot I try not to read too much about it actually I’ve been hearing a lot about OIC which I’ve been trying to not uh read or listen to and um something that keeps coming up is that like part of it shuts off that side of your brain that I was just talking about the side that gets really.

Titilated and excited by food and and it makes you a really boring dinner guest dinner date person to cook for person to cook with person to watch cook but that said you know it’s helped a lot of people and I not that I’ve taken it but I feel like I have like OIC brain a little bit from all these years of adjusting how I eat I just don’t care.
