Hey everybody welcome back if you’re new here hi I’m Mercury and today I am feeling super in like the holiday spirit the winter spirit I I whatever you want to call it and it makes me want to bake it makes me want to bake and I am in the mood for gingerbread now if you’ve been with me for a while you know there’s a lot of.

Things that I I can’t eat I’m on a restricted diet I follow what’s called an ibda diet which is a diet that I follow to help manage Cron disease part of that is no gluten part of that is no refined sugar that doesn’t mean no sugar but it’s not processed sugar so basically I could have honey and I can have fruit all the all the other sugars.

Kind of off the table so it makes it very interesting for me to try to find snacks and desserts that I really like and let me tell you gingerbread that’s a tricky one right so I think I’ve done recipe review for this recipe in the past so this is not going to be a straightup recipe review but this is more about how do I modify stuff.

What is it that I do and how do I make it cute so for starters I found these on clearance and they’re super adorable these are oven safe silicone baking sheets shaped like little gingerbread men look see they got the little bow tie yeah so So the plan for me is to modify this so instead of using molasses because I can’t have the Molasses I’m.

Going to use dates and other than that I’m also going to adjust the bake time because it’s for a loaf this recipe which when you bake in smaller shapes the time is going to need to be adjusted it’s going to got to go down so I’ll show you what you need to do to keep an eye on stuff I’m also going to put a link to the original recipe in the.

Description of the video in case you want to try it out um I’ve done it in the past this is a delicious recipe I love it so let’s get bacon so in terms of the ingredients that we’re going to need we need some eggs almond flour coconut flour honey this is vanilla coconut oil almond butter we have some baking soda dates and that’s my.

Modification the original recipe this is um molasses salt nutmeg and I like to use this whole nutmeg yeah whole fresh nutmeg we have ginger cinnamon and cloves now this recipe is really straightforward we mixx up all the dry we mix up all the wet we mix them together that’s it I will also be using.

The coconut oil to grease the little uh gingerbread men shaped pan so that way it doesn’t stick when I take them out so that’s what we’re going to do put the dries together put the wets together mix them all up so now I have all the dry ingredients in.

A bowl because I’m using a date to substitute for molasses I have two options I can turn it into date paste which is option one which involves like the food processor and I would have to make a batch of date paste because one or two dates is not going to be enough for the blades to catch it’s going to be a little.

Bit I don’t know it it it more hassle than it’s worth cuz it would be like like grade it up scrape the the side down Set It Off scrape it down Set It Off scrape it down and it would like it would take a really long time to do just a couple it’s easier to do a big batch but I’m not looking to do a big batch right now so what I’m going to do is I’m.

Going to actually instead of hand mixing all the wet ingredients I’m going to use my blender to mix the wet ingredients and I’m going to throw the date in the blender with those wet ingredients so the blade is sharp enough that it’s going to Blitz it down but it also has those other things in it to keep it moving about so that is the plan so I.

Have my blender all set up and it’s got the the sharp blades and these things really are sharp my mom actually got the same blender as me and I told her I was like be careful mom the blades are really sharp and the first thing she did was she cut her finger so when I say these blades are sharp like really be careful be really really careful with.

These so this is already set up so now I’m going to start adding my wet ingredients starting with the eggs.

Now that the blender did its thing I’m just going to pour the liquid ingredients right on into this bowl of my dry ingredients mix them all together then I’m going to grease that the little uh gingerbread shaped muffin pan um now we’re going to bake them the thing I like about this top is it has a pore spout so it makes things like this.

Really easy so we just literally pour it on in which also great for smoothies down to the last strap there we go okay I’m just going to take my little spatula it’s my bat spatula but any spatula do we just mix it up smells really good all the spices in here oh it smells really.

Good the other thing while you’re mixing and you might want to use a whisk for just this reason um sometimes you might get little like clumps of like the the flowers where they stick together and if you don’t break those up while you’re mixing um they will bake with a dry clump of flour in the middle and it’s it’s not pleasant so you always need to.

Make sure that you mix out all of those clumps cuz those are no fun that’s happened to me before I don’t like it I don’t like it you know what I’m going to get a whisk just in case this will help prevent that I like the spatula because it’ll help me scrape down the sides but I don’t want any clumps.

So let me put all this back in the bowl put that to the side there just got to mix this up real good think I got all the clumps see looks pretty uniform if you ask me pretty uniform it smells so good did I mention that okay let me grease that little uh gingerbread shaped silicone I I don’t.

Know what to call it that’s why I keep like slowing down when I say it it’s like is it a muffin tin is it a little cake sheet I I don’t know the little gingerbread thing I got I’m going to go grease that easiest way to grease anything if you’re using coconut oil take a little little scoop of coconut oil to the side paper towel and you sort.

Of like wad your paper towel up and you get a little bit of the coconut oil a little bit of the grease and then you just smush it in there for lack of a better term you just smush it around um if you want an alternative would be if you melt the coconut oil you can take like a silicone brush and brush it around also.

But this works fine but if you it is important that you grease it cuz otherwise it’s going to stick especially these little details like the uh the little buttons and the little bow tie like that those are the places where like batter will love to stick so you definitely want to make sure you’re getting a little bit of oil.

In those spots especially but just a a good once over good on over okay it is well greased you could tell by how shiny it is and I’m just going to put the batter in I don’t want to overfill it I don’t want to fill it all the way up CU I don’t know how much rise I’m going to get this is going to be a little bit of an experiment in.

That sense and I am sure I have to do more than one batch so we’ll see how much fits in this and I’m going to do it in back pches now at this point I want to go back to my spatula going to position this a little bit better and we’ll go plop trying to make sure I get enough in without going overboard and always add more it’s.

Harder to take away so I’m trying to underfill so I can add to it rather than overfill and then be in a situation and I like focusing on just filling up the body portion and then I will get the extremities on my next pass this is how I am at so far I’m going to give it a little shaky shake that was actually a really good.

Way to to get that to spread around I thought I was going to have to poke at it no that worked really well I highly recommend the little shaky shake just topping it off a little bit here cuz remember it might run and I don’t want to go overboard with gluten-free cooking the rise always feels so unpredictable to me so some.

Gluten-free recipes like the way you put it in the oven is the way it comes out in terms of Rise even if it has a leavening agent and then there’s other times where it surprises me and it has rise and I’m like oh oh wasn’t expecting that okay so I’m trying to so I’m trying to give it a good fill without going too much.

Which I think is like this I think it’s like this so I’ll give you a close-up so you could see how much like lip I left so you can see here there’s about I don’t know qu of an inch lip that I left to the top of the the mold and now I’m going to bake it so the original recipe because it’s written for a loaf has it supposed to bake for 40.

Minutes I’m going to start checking it at the 20 minute Mark and I’m going to use a toothpick method to check for dness and if you’re not familiar with the toothpick method it’s kind of what it sounds like you take a toothpick and you poke the thickest part so it’ll be like the center and if it comes out clean it’s done if it comes out wet or.

There’s like batter stuck to it it’s not done yet and it needs more time so we’re going to use the toothpick method to check to to check for dness and again because these are so much smaller than a loaf I’m checking it at the halfway mark okay so the timer just ding oh they Rose they definitely Rose okay got a little toothpick here and we’re.

Going to do the toothpick method and I go poke not done so you could see it is still quite quite moist a lot of a lot of dough still stuck so it needs more time and we’ll give it another 10 minutes I may check it again at 5 minutes just to be safe so I don’t burn them but I have feeling 10.

Minutes is closer due to the amount of moisture that’s still stuck to that toothpick time for a recheck okay got my toothpick going in the center oh yeah look at that it came out clean they are done so I’m going to let those cool down then I’m going to flip them out onto a cooling rack so I.

Can at least demold them and get the next batch in and we’ll Bake Off the other set so the second batch is out of the oven they’re looking good here they are here’s the cooled off batch and they are so cute with their little bow ties and their little buttons they came out looking great so from here there are a few different options one is to just.

Enjoy and have them as is another one icing if you wanted to do like a quick icing that like is still refined sugar-free but not a buttercream you can use coconut butter and what you do is you like melt it in the microwave like just a little bit at a time like 5 seconds or 10 seconds and you check it and you stir it until it’s like melty.

And then you just drizzle it you can put a little honey in it and you you drizzle it right on top you know or chocolate you could do a chocolate drizzle yeah yeah you could do that a lot of options and I mean if you want to do like a buttercream you can do a buttercream that’s okay too it’s just for me that’s a lot it’s that’s too much that’s that’s.

Excessive y’all honestly I think I’m going to leave mine as is because tomorrow for breakfast I think I’m going to have little French toast made out of these little uh gingerbread men I think that’s my plan but I can’t not taste one of them right okay I’m going to have to take a little gingerbread man put him on.

Taste perfect Ginger bready goodness and it is ginger bready not Ginger cakey if you wanted it to be more cakey you have to add a little bit more sweetener to it but for gingerbread especially cuz I like to make French toast it’s perfect it’s perfect it’s just the right amount of sweet it’s got a good amount of those spices the.
