If you’ve always been nervous about the idea of making your own glutenfree pastry at home don’t be because this recipe is the failsafe recipe you need in your life I make this glef free pastry all the time I’ve demoed it in front of thousands of people and if I can do that then you can certainly make this at home all my gluten eating.
Friends and family love it it only needs five ingredients and we’re starting off with the dry ones first of all I’ve got plain gluten-free flour and I’m adding some zanth and gum and just mixing that together with my hands now if you’re making a sweet pastry you can also add a bit of Casta sugar and you can add spices like cinnamon or grated orange.
And lemon zest if you’re making something like minc pies or Sweet Tart once you’ve done this it’s time to add in the butter now my top tip is to make sure the butter is super cold if you’re making this on a hot day you’re going to need to keep this pastry chilled because keeping it cold is the key to having a gluten-free pastry that’s easy to handle.
And super simple to work with now you can see I’m just using my fingertips to rub the butter into the flour mixture I really wanted to develop a pastry recipe which is made in the same way that I remember making normal gluten Pastry as a child and so I made sure this recipe can be made the same way by using my fingertips if you struggle with this you.
Can use a food processor instead that is not a problem at all and now I’m adding in some beaten Egg and I add a tiny bit of cold water again make sure it’s really super cold and start to mix this together with a fork now this is going to come together quite quickly as a kind of claggy dough and that’s when it’s time to just get in there with your.
Hands and again if you struggle with your hands you can still do this bit in a food processor and it should bring the mixture together nicely and you just want to keep working this St now because we’re using gluten-free flour you don’t have to worry about overworking the pastry because normally that’s because that affects the gluten in the bake but.
Obviously there is no gluten in this pastry so it’s not a problem the main thing you need to worry about is the mixture getting too warm but don’t worry if it does get sticky because once it forms a nice smooth bowl of dough we are going to chill this in the fridge for at least an hour if you want to you can make this the night before and you can.

You can roll it out now I’m just using a well flowered work surface and you can see the pastry is rolling out really nicely it’s so easy to handle but but you can put it between two sheets of cling film if you find this stage difficult especially if you’re rolling out a larger bit of pastry for something like a pie or kiche it will just help.
You handle the pastry a bit better now I do have an old video on my channel which I’ll link in the description for this one where I use the cing fill method where you can just see how that works and now for this bake I’m making a kich so I’m going to Blind bake the pastry if you’ve never done this before it’s basically a step where you slightly bake.
The pastry case to make sure it’s nice and hard and avoid those annoying soggy bottoms so I’m just going to overlap the pastry slightly on the lip of the tin and then you’re just going to use your fingers and then a rolling pin to kind of push it back so that we don’t have too much shrinkage and once this pastry case is ready I’m going to Blind bake it.
So I’ve got my oven nice and hot I’m going to pop a sheet of baking paper on top of the pastry and I’m going to fit it with baking beans if you don’t have these you can use rice or you can use dried lentils anything that’s going to weigh that pastry down spread these out and then bake it as per the recipe instructions and you can see here it’s.
Partially cooked but this just means that when I put in the wet filling here is my salmon and broccoli kiche filling which I’ll also link down below you won’t get that kind of Soggy Bottom on the Pastry as it cooks and it’ll be nice and crisp on the bottom now this pastry is honestly so easy I really urge you to give it a go if you’re struggling with.
