Good morning everybody. Welcome back. Today’s video is for my Tuesday video, but I am filming this portion on Monday because I am going to make banana bread for breakfast for the morning, but I’m going to go ahead and make it today instead of having to wake up and worry about it in the morning because I have.

Time today. So, we’re going to make banana bread, but we’re going to make it gluten-free, and I’m going to double it and make two instead of just one. So, I’m going to go ahead and tell you the recipe as is. Just know I’m doubling all the ingredients because I just decided to do this. I don’t have uh room temperature butter. I have mostly melted.

Butter. So, one stick of room temperature butter. Let me get all mine out of here. This is a mess. Preheat the oven to 350. So you do one stick of butter and 3/4 of a cup of brown sugar. And you beat this together. It says to beat this for 2.

Minutes. Now we’re going to beat in four eggs. Add a teaspoon of vanilla. 1/3 cup of sour cream or Greek yogurt. I’m using um coconut milk yogurt and four bananas. You’re supposed to do all the dry ingredients in a separate bowl, but I’m.

Just going to mix them right on in here. So, two cups of flour. Again, I’m using gluten-free flour. So, I’m doing three cups of gluten-free and then one cup of almond flour, a teaspoon of baking soda, 1/4 teaspoon of salt, Half teaspoon of cinnamon.

Half teaspoon of nutmeg. And that’s it. I’m also going to fold in some chocolate chips. Now you bake this on 350 for 30 minutes and then you pull it out, cover it with.

Foil, bake another 30, 35. So 60 65 minutes total, but cover it halfway with foil. So I’m actually going to let mine sit for about 20 minutes before I bake it just because it’s better with gluten-free flour for it to sit there. Otherwise, it turns out kind of gritty. I am going to go ahead and put it in the dishes. I’m just not going to bake it.

Quite yet. Yeah. I I said football. Yes. So, here is our banana bread ready for the morning.

Which is weird, but um neat. So, it’s going to be almost 90° today, so it’s going to be really warm. Um, we’re going to just My only plan today was to get bread made and to do school. That’s it. We’re going to be gone most of the day tomorrow. Um, I think tomorrow I don’t know what’s gonna happen with filming because I have to.

Take my mom to the doctor and then Ila has a doctor’s appointment and then we’re gonna go grocery shopping. So, I’ll see what gets filmed tomorrow. If there’s not a video, there will be one the next day. Um, I’ll just have to see how the day goes and what I can get filmed and things like that. It’s going to be a really busy day. Um, and it’s.

The kids wanted leftover spaghetti. So, I am working on making spaghetti for them and I’m going to give them some fruit to go along with it. So, there is lunch today. Very simple. Now that we’re finished with lunch, we are working on school. So Everly’s working on history now. And today she has math skills. More of math than actual history.

Today. Now we’ve moved on to spelling for Miss Everly. All we have left today for school is reading for Ila. I mean for Everly and Wilder. So right now we’re going to work on our art. Hello. What color or what shapes are these? Ila. Little and big. Little and big. Yes.

With him. So, I copied his for her so she could do it. Everly gets to make an animated marshmallow like rocket shooter thing. So, we got her shooter done. Cannon and she’s making a face on her marshmallow now to shoot it. Yeah. So, here’s her thing so far. The other Here you go.

Watch. Pull it back and then let go. Oh, yeah. You got to pull it back real hard. Real hard. There you go. Now let go. Oh man. All right. Here we go. Whoa. So, we went over to my parents house for a little bit. The kids always beg to go over there. Like every day they beg. So,.

We went over there. We did our reading over there. So, Wilder row with my dad, Everly Red with my mom. But, we are home and now I’m going to go ahead and marinate our shrimp. So, I’m just going to use avocado oil, which I need to get more of, and fajita blend, and just make, you know, put them together and then toss the shrimp in them and let.

Them sit until dinner. So, it’s only 4:30 now, so I’m just going to sprinkle some of this in here. I need to also cut up our onions and peppers. And then, like I said, I need to go get some more avocado oil. I might have some up here, but I’m not sure yet. So, we’ll put it in.

Here. Do this. And hope this doesn’t leak cuz I’m going to shake it. That didn’t work as well as I was hoping, but There we go. So, I’ll just let those marinate for about an hour. I’ll probably start cooking about 5:30, which is perfect.

Um, but I’m going to go refill this bottle real quick. So, I’m going to do a sheetpan dinner. So, sheetpan fajitas. I’m just going to throw peppers, onions, and the shrimp on there. bake 400 for about 13 14 minutes. Um, and I’m going to get my griddle out and heat up the corn tortillas on that while those are cooking. So, I need to get a cutting.

Board and she I’m going to um avocado this avocado oil this and put some of the blend on it and mix these around a little bit. So, this is going in the oven 400. I’m going to set a timer for 13 minutes and see what it looks like. So, I’m just cooking up these corn.

Tortillas and then dinner will be done soon. I got toppings. We only have one avocado. We have the We have this one thing of guacamole, the last of the lettuce, some red onion. I need to go grocery shopping, so we’re going to get it done soon. And our last bag of chips. Here is our sheet pan nachos. So simple.
