hi guys it’s CED here and today I’m in my kitchen um I’m normally creating film Journal spreads or talking about classroom paper and planning and other a bunch of other things but today I’m here to share with you another passion of mine which is cooking today we’re going to be making.
Rosemary oyster mushrooms which has been my go-to recipe as an appetizer or a side dish um and yeah let me know if you guys like cooking videos or food videos one thing that you should know about me is I am vegan and gluten-free I’ve been vegan for 8 years and I just became gluten-free in January because I was diagnosed with Hashimoto hyperthyroidism.
Which is an autoimmune disease which affects your thyroid and your hormones and your gut it’s so many side effects that I don’t even know about yet because it’s a new diagnosis one thing that has helped me for sure is is being Glu andree I’ve been spending a lot of time just creating recipes and being inspired by.
Some on pinest I’ll definitely leave the link of the one that inspired me to make today’s video all right so these are the ingredients that you’re going to need of course the star of the show are oyster mushrooms I recommend to go to your local Asian market because they usually give you more quantity for around the same place so I definitely recommend.
That of course you’re going to need olive oil this is my olive oil of choice it’s the graza I think that’s how you say it a zizzle extra virgin olive oil fave um I have salt pepper I’m going to use molden salt and just Brown pepper um I also use a little bit of.
Garlic salt cuz I love garlic you can even add some garlic but I I don’t really do that this is like the lazy easy way to go I also when I’m feeling fancy at a little bit of truffle oil you can get this at Target actually everything that I’m mentioning right now you could get at Target maybe not the mushrooms cuz my local Target doesn’t.
Have that um Rosemary you’re going to need some fresh Rosemary um you could also get dried and kind of combine them you’re going to need a lemon knife cutting board and a pan I already prepped some mushrooms I washed them um I know some people say shouldn’t wash mushrooms but actually the water does help with the marinade.
So yes one thing to note like I mentioned before you will need to marinate this and the longer that you do the better it will taste so yes um one thing that I will also say is I like to add the lemon here and cook it with it um but yeah let me show you guys what I do to prep this part so the first thing I do is to prep.
The oyster mushrooms I make sure to give them a good rinse and then I chop them up into different parts I don’t use a knife I just use my hands to break it apart and I put them in the pan now I am starting to add the ingredients to the mushrooms so now that the mushrooms are on the pan I add a.
Little bit of olive oil to get it started I just drizzle back and forth as you’ll see here and then I’m going to add the pepper salt and garlic salt just by eye I don’t have specific measurements I did want to be fancy today and add a little bit of truffle oil because I feel like it gives it a really nice flavor but that is up to you.
To decide if you would like that next I’m going to add some freshh Rosemary and I like to cut some of the Rosemary into smaller pieces so that it could cover all the mushrooms and I also keep the stems and some of whole pieces.
In there because I like to make sure I have enough even actually sometimes more than I need because I really like the Rosemary flavor that it gives the mushrooms after giving the mushrooms a nice little mix I like to cut up lemon and I cut them into Forts and I put them right into the mushroom pan because we will be cooking them to get really nice.
Flavor there’s something about lemon with rosemary mushroom mixed together the acidity gives the mushrooms a really nice flavor and it’s to die for and here’s what it looks like we’re going to wrap it up in tin fril and throw it in the fridge so it could be marinated the more time that you leave it in the fridge the better it will taste so it’s.
Up to you if you can wait that long I’m actually setting this up during breakfast time so I can have it for dinner once you’re ready to cook the mushrooms take it out of the fridge put it in the air fryer set it to 425Β° for 30 minutes and check in on it periodically like every 5 to 8 minutes minutes and then turn it until there are.
A beautiful brown color you take the mushrooms out of the air fryer they should look something like this I did end up having to add a little bit more time in the air fryer to get them really crispy I served them with fresh lemon I hope you enjoyed this video let me know if you want more cooking videos thanks for watching.
