Today I am going to show you how to make keto cowboy casserole. I absolutely love one dish meals. You just throw everything together in a casserole.

Then top the cheddar or colby cheese, whichever one you’re using, with 4 oz or around one cup of shredded mozzarella or Monterey Jack cheese. I’m using.

Bake at 350° for 25 to 30 minutes or until the cheese is fully melted and bubbly. You want to let this sit for about 5 minutes. After 5 minutes, cut the casserole into your desired size pieces and place them on the serving trays of your choice. You serve this warm. If you do have any leftovers, allow them to cool to room temperature. Then store them in an airtight container in your refrigerator for up to 5 days. I have.
Not tried freezing this, but I’m pretty sure it will freeze fine. If you do choose to freeze it, cut it into individual serving sizes before you freeze it.
