Preheat your oven to 350° line an 8×1 12 in baking sheet with a silicone baking mat or some parchment paper if you don’t have an 8×12 baking sheet just get as close as you can to the sides and set your baking sheet aside for a minute finally grate one large zucchini mine was about 14 oz place the grated zucchini on some paper.

Towels and squeeze out as much of the liquid as possible it’s okay if it’s a little bit damp but you don’t want it super wet otherwise your flatbread will never get done cooking place the squeezed zucchini in a large food processor add two large eggs 4 oz or around 1 cup of the shredded cheese of your choice I’m using mozzarella cheese.

Add 1/4 teaspoon of garlic powder 1/4 tpoon of onion powder 1/4 taspo of salt 1/4 teaspoon of pepper and 1 teaspoon of dry Italian seasoning you can change or adjust the seasonings to your personal taste pulse everything together just a couple times just until everything starts combining then process everything together for about 20 to 30 seconds or.

Until the mixture is completely smooth if you need to stop and scrape down the sides of your food processor you want to make sure everything it’s fully combined pour the mixture onto your prepared baking sheet sheet use the back of a spoon and spread the mixture in a thin even layer throughout your baking sheet try to get this as even as you can and.

As smooth as you can so you don’t get any air bubbles place the flatbread in your preheated oven bake at 350° for 20 to 25 minutes or until the bread is firm and the edges are golden once the flatbread is done baking remove it from your oven and allow it to cool in the pan for about 10 minutes so it can firm up all the way.

After 10 minutes and the bread is firm use a spatula and very carefully loosen the flatbread from the baking sheet do this carefully you don’t want to tear your flatbread then transfer the flatbread to a wire rack if the underside of the bread is still a little bit moist mine was still moist then just turn the bread over and place it back.

Onto your lined baking sheet with that moist Underside up on top then bake at 350° for another 3 to 5 minutes or until the underside of the bread is no longer moist just when you do this just watch it carefully because you don’t want to overcook your bread and then have it dry out and then you won’t be able to roll it to wrap it mine all.

Together took a total of about 30 minutes it was 25 on the one side and then when I flipped it over it was roughly around 5 minutes on the other side after you remove it from the oven then again let it sit on the baking sheet for about 5 minutes or so you want to make sure that it’s firmed up and you don’t want to burn your fingers allow.

The flatbread to cool on the wire rack completely before you use it once you’re ready to use the flatbread then cut the flatbread in half or into your desired size you can use this flatbread for wraps or sandwiches or in any recipe that requires flatbread all right we are back with my lovely little zucchini wraps aren’t they.

Pretty looking I just put some deli roast beef Colby cheese and some baby spinach in there I put a little bit of Keto thousand island in there for a little bit of a sauce but you can put whatever you want in these and use these zucchini flat brids any way you want if you don’t want to make them as a wrap you can use them any way you would a.

Flat bread but it looks good it’s rolled easily you see that it’s not cracking anywhere it’s not crumbling anywhere was very easy to roll very very nice texture nice and soft looks good and it smells good so that’s always a good sign it looks like it’s pretty sturdy it’s holding all my stuff nothing’s falling out nothing’s crumbling off of it so it.
