Hey guys I’m Stephanie and this is Steph stove and today we’re making cookies and these aren’t any cookies these are pean coconut praline cookies just delicious and the best part about these cookies they’re no bake recipe so let’s get our stove top going and make these wonderful pean coconut praline cookies here we go all right for our recipe here we’re.
Going to be starting it on the stove top this is just a medium saucepan here and to this we are going to combine this is half a cup or one stick of butter and we are going to turn our eye on medium heat until our butter is completely melted now once our butter is completely melted then we’ll need to come back and add some more ingredients so let’s give this.
A minute or two to get it completely melted and we’ll be right back all right our butter is just melted and it’s almost starting to get to a boil state so I’m going to kind of tilt it up move it over and I’m going to stir it around just because I want to be sure that all of the butter is completely melted so we’re completely melted at.
This point and now we’re going to add some nice little addins for our cradling portion of it so at this point again I’m just kind of stirring because I don’t want it to Splatter back on me or anything and obviously you wouldn’t want it as well so I’m just stirring that together this is is half of a cup of light brown sugar we’re going to add to.
It and swirl our brown sugar around to make almost a caramel is type sauce and I’m just lifting this up cuz again I don’t want this to bur or come back and then to this as this is incorporating I’m going to add I’m going to do this rather slowly my brown sugar left in there get all that.
Out I’m going to very slowly stream in this is about 1/4 of a cup of milk so I’m going to very carefully add this kind of stir as it’s going in again stream it slowly milk added in and we’re going to cook this until it almost comes to a boil I’m going to continue stirring I have not.
Adjusted my temperature I’m still at a medium setting and again we are going to stir this we want all of that brown sugar completely dissolved and Incorporated and continue to stir this till we get almost back to a bowl we got a little bit of boiling starting right now so I’m going to continue stirring.
Cuz again I want everything coming together nicely don’t want any clumps got that nice little bowl coming almost a full Bowl here we go now we got us a nice little bowl coming there we go I’m move me a little choing pop over here to the.
Side all right now that we have this bowl going you see it’s just kind of raising up and it’s thickening here this go for just about a minute all right we got it about a minute so I’m going to take it off the heat and I’m going to move it over to the side let me move you over all right we got it.
Moved over here to the side and now just kind of Stir It just a little bit you can see the bowl will stop and that is perfectly normal so we’re going to add half of a teaspoon a vanilla extract get a little bit more no big deal stir this around make sure your.
Vanilla is incorporated smells delicious and we’re going to add two one cup of shredded coconut mix that together two cups of chopped pecans now you can chop your peans if you wanted to and I just purchased chopped PE hands because I didn’t want these extremely small and you can see they’re not really.
Tiny but the perfect size that way you get a good bite in there now mix these up want everything coated it’s kind of almost like we’re making German chocolate frosting here said these are going to be cookies guess I could call these German chocolate cookies all let’s get everything mixed.
And everything Incorporated well we need a little dash of salt so I use my little snowman there just to kind of cut the sweetness and you can use sweetened coconut you can use unsweet coconut I think mine was sweetened coconut all right let’s set this aside for just a minute let me go get a cookie sheet and.
A scoop and we’ll be right back all right as we get ready to scoop these out I’m going to be using just a um this is a 3 tblspoon cookie scoop and look at that isn’t that pretty just beautiful so I’m going to give it another good stir make sure everything is together and then we’re just going to go in with our.
Scoops grab a nice scoop and I’ve got on my cookie sheet here that’s lined with a silicone mat and we are just going to scoop these little Beauties out now you could do these smaller you could use these larger the choice is really up to you now at this point they are just a.
Little soft and what we’re going to do after we get them all scooped out we’re going to put these in the refrigerator for these to set up M delicious all right look at these now all we need to do is put these in the refrigerator and let these set up and.
We’ll be ready to eat them so let me pop these in the refrigerator all right now our cookies have just come out of the refrigerator and they’ve been setting up for about an hour or so in there and you can see they’re nice and firm if when you have them in there and you see that that they’re a little soft just take a spatula and kind of pry the edges and.
Just Mound them back up and leave them in there just a little bit longer and they will set up nicely now these do need to stay in the refrigerator they cannot stay out because they are softs but I’m going to look at look at this one look at that isn’t that good this is.
Delicious oh good M it reminds me so much these little cookies or I call them cookies Loosely of just the topping on a German chocolate cake that’s exactly what they they remind me of cuz there’s no flower in there so they’re glutenfree and you can enjoy those if you have a gluten allergy now if you have a nut.
