Gluten-free Carnival Ears π: A Festive Twist on a Classic Treat
Hello everyone! Today we prepare delicious gluten-free carnival ears . The ingredients we are going to need are: gluten-free all-purpose flour, powdered sugar, anise, water, butter, grated lemon and orange peel, white sugar, a pinch of salt, an egg and psyllium. In a bowl we sift the gluten-free flour together with the psyllium. Psyllium will give the dough elasticity so that it can be worked better and stretched without breaking. We reserve the flour… In another bowl we put the water, the butter, which must be melted but cold, the anise, a pinch of salt, if the flour you are using does not have salt, the white sugar, the zest of the peel of half a lemon and the zest of the peel of half an orange, which we will have previously.
Washed very well, and about 30g of beaten egg. I use size L eggs and it is half an egg. We mix everything with the manual whisk and immediately we can add the sifted flour, little by little. We stir with the whisk vigorously, so that the flour is integrated, and we add it in small quantities. When I have already added it all and it is difficult to mix with the whisk, I continue stirring with very clean hands and, when it is completely mixed, I flour the counter. , I pour the dough on top and add a little more flour, just until I can handle it well without the dough sticking to my hands. I work it a little, it doesn’t take much time, I form a ball and let it rest for between 30 minutes and an hour covered with the same bowl upside down. In the meantime, if you like the recipe,.

After the resting time has passed, we clean the countertop well and, now, we grease our hands with oil and also grease the rolling pin and the countertop so we don’t have to add more flour. We make a churrito with the dough that is thick enough so that we can break portions that are more or less the size of a walnut, we round each of the pieces of the dough, we stretch it with the rolling pin until the dough is very thin and, Being very careful not to break it, we lift it off the counter and fry it in a frying pan with enough oil that we already have hot and, immediately, with a toothpick or the handle of a wooden spoon, we shape it. of ear pressing from the center of the dough towards the edge of the pan.
We hold the toothpick a little until the dough no longer returns and we let it brown on both sides. You have to be very careful not to burn them because they fry very, very quickly. If necessary, lower the heat or remove the pan for a few seconds. We are putting them on a plate with kitchen paper so that it absorbs the excess oil and, later, we will transfer them to a tray so that they do not reabsorb the oil. When we have them all fried and they have cooled, we spread them all out and pour sugar on top. With these quantities I have gotten 12 ears. Look what cool little ears they have turned out. I encourage you to prepare them because they are very easy to make and have a delicious flavor; and they are crispy and tasty.
