Gnocchi Perfection: A One-Pan Wonder for Gluten-Free Foodies!

Hi I’m Kayla Capello and this is cooking with Kayla whether you need some easy 30 minute dinner recipes if you need to be gluten-free or eat dairy free or you just want to learn more about cooking at home this is the podcast for you every week I talk you through an easy recipe.

The ingredients you need to make it and how to make it allergy free today we’re going to be talking about this easy 30 minute nooki Skillet I really love an easy recipe I like a dinner recipe that’s done in 30 minutes I like it to have minimal ingredients I like it to be little effort I hate coming home from work or after a long working day and.

Thinking shoot like now I have to stand in the kitchen for like 2 hours cooking this really intense meal or I have to go grocery shopping and look for all these ingredients that I’ve never heard before what if I don’t use these ingredients in another recipe you know 20 ingredient recipes I’m sure are delicious they are just not for me I want it easy I want it.

Quick and I want it to make minimal dishes I hate doing dishes afterwards and this noi Skillet is definitely hitting all the marks for me this noi Skillet is a combo of fluffy noi Rich tomato sauce it’s bursting with Italian flavors you know it’s bright there’s components of creaminess there’s components of fresh bright vibrant.

Vegetables it’s basically nooi which you can choose between between cauliflower or gluten-free and Yi it’s mixed with fresh tomatoes or tomato sauce I love adding in some vegetables so here I use some fresh spinach instead of using heavy cream since I’m lactose intolerant I love using dairyfree cheeses also love using fat-free cheeses when I want a low.

Fat dish so for this recipe I skip the heavy cream and I used rotta cheese instead I know if you’re Italian and you’re listening this you’re definitely going to come at me for the difference between ricot and rut I am from New Jersey and for the sake of this being like super simple and super easy I’m going to keep saying ricotta oh my gosh.

I feel like you guys are going to kill me for this okay so I used ricotta cheese but you can also use the dairyfree version so let’s talk about the pros of this noi Skillet first of all it’s made all in one pan you’re not boiling the pasta in one pan and then switching it to another pan for the sauce or heating up the sauce separately.

Than the vegetables it’s literally all in one Skillet together which is part of the reason I love this recipe it also takes less than 30 minutes to make and creates minimal dishes if you hate doing dishes like me this is the optimal recipe you are only going to have to clean the one Skillet you Ed to make this meal any kind of forks and knives.

You used any spoon you used to serve this and then the individual dishes you don’t need four different pots and three different pans and a sheet pan and an air fryer and this is like super easy it is literally all cooking in one pan for this recipe it is a vegetarian recipe and easy to make vegan dairyfree but if you want to add a protein to this you.

Can always add chicken I love adding gluten-free chicken cutlets to this you can also add some gluten-free meatballs I also love serving this with fresh herbs and parmesan cheese on top you can always use dairyfree parmesan cheese if you want the ingredients so first you’re going to start off you going to want a little bit of oil for this recipe I used.

Olive oil but I also highly recommend avocado oil for this recipe too any oil that has a high smoke point because you don’t want the oil for the nooi I used the cauliflower gluten-free nyoi from Trader Joe’s the first time I made this recipe and then the second time I made this recipe I used regular gluten-free nooki that was not frozen the Trader.

Joe’s one does come Frozen so ideally you’re throwing it into this recipe Frozen and it’s going to thaw and cook with the sauce but if you’re using a regular gluten-free nyoi and it’s not frozen you are going to throw it into this recipe so the sauce becomes actually like what it’s boiling in so think if you use gluten-free pasta you.

Would normally boil it in water and then mix it with the sauce but for this one you’re actually going to add it just already to the sauce so it’s almost like a no boil pasta idea if you don’t like noi if you don’t have noi can’t find gluten-free noi you can absolutely absolutely make this recipe just with gluten-free pasta my favorite.

Gluten-free pastas are the ones made from chickpeas or the ones made from brown rice flour so bonsa is a good one jovil I also like a lot of their products I also buy the brown rice pasta from Trader Joe’s because it’s easy it’s gluten-free it’s made with minimal ingredients and those are just my go-tos like every single time for the sauce you.

Can choose between adding a can of fresh crushed tomatoes you can add a can of unseasoned tomato sauce and add your own seasoning you can use a jar of already made tomato sauce a lot of times that comes with seasonings of its own so you’re going to buy like a tomato basil marinara sauce or a garlic tomato sauce and you won’t have to add.

Extra seasoning so you can totally buy any kind of Jarred tomato sauce that is your favorite and then this recipe will really take on those flavorings of your favorite sauce the other option is you can crush your own tomatoes I know sometimes my garden is like overflowing with tomatoes whether it’s tomatoes on the vine cherry tomatoes heirloom.

Tomatoes any fresh tomatoes will work here too what I like to do is cut them up into smaller pieces and then throw them in a pot with a little bit of olive oil and a little bit of garlic and just really let it cook down for a long time like low and slow once it’s already cooked down then I get my immersion blender in there and I just blend it to.

The consistency I want so I’ll blend it a little longer if I want it to be really smooth smooth and creamy and delicate really smooth flavor but if I want more of a rustic chunky it feels like I actually made it from the fresh tomatoes I’ll immers and blend it just a little less so it still keeps some of its texture the next thing we’re going.

To talk about here are the cheeses so to bypass the heavy cream option but still make this a creamy dish I use dacotta cheese but you can also use a vegan sub I know there’s ones made from almonds out there there’s ones made from coconuts any of those will work if you are not dairyfree but you don’t like this type of ricotta thick cheese you.

Can also use any kind of goat cheese you can use any kind of shredded mozzarel fresh mozzarel sliced on top you know any dairyfree cheese you want to use here is totally fine I like to use a creamy one here because it’s literally taking place of the heavy cream it would be so delicious to have that mozzarella flavoring so if that’s your favorite.

Cheese definitely use that as as well and if you like that cheese in addition to the ricot cheese please by all means add both I’m totally down for it sometimes sprinkle parmesan cheese on top or a vegan substitute it can either be shredded it can be grated Parmesan cheese whatever kind of cheese you want to add on top especially while you’re.

Serving it you can use any cheeses for the vegetables in this I chose to use baby spinach I chopped up the baby spinach so it was in really fine pieces and I added that but you can also use fresh spinach that isn’t chopped you can use frozen spinach you can use Kale either fresh or frozen basically anything so you can get your vegetables.

In here I like to add a green vegetable because it almost makes it feel when you mix basil into a Ricotta and then you layer it in a lasagna it gives me like that same Vibe but any kind of vegetable will work right here if you want to add a little bit of fresh cauliflour if you want to add peppers and onions anything will work I just used fresh spinach and.

Then for the seasonings fresh basil fresh parsley I dice it up really fine I sprinkle it on top and mix it in with the sauce I’m also sometimes adding a little bit of minced garlic and then on top I’m just adding fresh herbs to add that extra flavor the fresh herbs I like to use are parsley and basil but you can really switch it up however you want if.

You want to use oregano if you want to use any kind of green onions literally any seasoning you like in this would work great if if you’re using dried seasoning I love to look for either a pizza seasoning an Italian seasoning or a garlic and herb seasoning one that’s already mixed for me and then all you have to do is buy that one seasoning.

Packet or pouch and this meal is good to go I cannot stand a recipe that uses a 100 different ingredients so if I’m buying like a bushel of fresh herbs and then I’m also buying dried oregano and fresh parsley and fresh basil but I also need x y and z I’m going to get frustrated and it seems like dinner is a lot harder than it really needs to be so.

Make it easy for yourself like buy those seasoning packets the pizza seasoning is like a really fun way to make this almost like a pizza flavor so you use some pizza sauce the pizza seasoning I mean you can even throw turkey pepperonis on top of this to make it Pizza noi Skillet the Italian seasoning is more of a basil and oregano forward.

Idea it really makes this dish burst with Italian flavor and Italian dried herbs and I always think that reminds me of like our trip to Italy and like all the delicious tomato sauces I had there garlic and herb is another one of my favorites anything with garlic I’m So Into if you don’t have a garlic and herb seasoning you can also add fresh garlic.

Minced garlic any kind of garlic you want powdered garlic I just think extra garlic in this is going to go a long way and then for a spicy twist I love adding red pepper flakes on top you can add chili flakes you can even drizzle a little bit of hot honey on top if that’s more your Vibe so let’s talk about how to make this recipe gluten-free.

Dairyfree like I said I use gluten-free nyoki for this I specifically use cauliflower and Yoki but regular gluten-free Yoki Works totally fine you can also use gluten-free pasta for this whatever your favorites are I also recommend if none of those options work you can break up lasagna noodles that are gluten-free and do more of a.

Deconstructed lasagna with these same ingredients just more of like the no bake gluten-free lasagna sheets that would work fantastic as well for the tomato sauce if you are dairyfree you just need to make sure that you are buying a dairyfree tomato sauce if you’re buying those Jarred sauces a lot of the times they already have parmesan.

Cheese mixed into it so you want to make sure that if you are buying one from the store that already has ingredients in it if you need a dairyfree one buy a dairyfree one I know that Rayos has a sensitive stomach marinara that is great for if you’re trying to be dairyfree but also cut out any kind of onions onion powder garlic garlic powder it’s really.

Great for sensitive stomachs and I buy it sometimes when I’m not having the best stomach day but I still want this dish if you don’t need a dairyfree one you can always buy any kind of a four cheese tomato sauce a four cheese marinara sauce any kind of sauce you want just make sure if you have dietary restrictions that you’re buying a sauce.

That follows a dietary restriction I know some tomato sauces have extra flavoring in it so you want to make sure any of that extra flavoring is also gluten-free if you’re dairy free you can also skip any of the parmesan cheese on top you can honestly skip the ricotta cheese if you want as well if you skip it but still want that creamy goodness.

Feel free to add coconut milk into the sauce you can add a little bit of oat milk just something that’s a dairyfree milk that’s going to give you a little bit of that creamy texture theide aidea here is not we are not just creating pasta with red sauce like that’s tired it’s true it’s been done so you really want to elevate it with a creamy.

Component here but if it needs to be dairy free if it needs to be cheese free you know you have so many options to pick from so let’s talk through the exact directions for how to make this easy 30 minute yoky skillet recipe the first thing that I did was I heated a little bit of that olive oil up in a skillet I had it on medium heat just to.

Be able to Brown the cauliflower just a little bit of oil just to be able to Brown the cauliflower and Yogi I used cauliflower Yoki for this recipe and it came Frozen but even if you use regular nooki I think part of my reason for loving Yoki is that it really has a lot of texture so it’s crispy on the outside it’s soft on the.

Inside it’s pillowy it’s light you don’t want it to be falling apart and moist and wet really that mushy flavor you want to sear the outside so when it’s cooking in the sauce the inside is Fluffy but it’s not mushy I cooked the cauliflower and Yoki in the oil for about 5 to 7 minutes on medium medium low and once I saw that the outside was.

Browning I added my can of crushed tomatoes and brought it to a simmer after it was simmering added some of my seasonings to it so if I’m adding minced garlic if I’m adding fresh basil fresh parsley and I’m not just serving those seasoning on top you really want it mixed in especially since the crushed tomatoes I added were not already.

Seasoned you want to add it here to allow for all of those components to warm together cook together and really Infuse the crushed tomatoes with whatever seasonings you’re added after you add your seasonings I turned it down to low and I added all of my fresh spinach anything else you’re adding peppers onions cauliflower that can all.

Be added here as well because you want to give it a chance to cook down with the sauce so it has that sauce flavoring but it’s not burning that’s the idea here you’re low slow cooking this keep the top on that will keep the moisture in make sure everything is added together and you’re mixing it together you want the vegetables the seasoning.

The tomato sauce the tomatoes and the noi to all be mixed and Incorporated together once that’s done I let it simmer for another 5 to 7 minutes before taking the top off and I added my cheese in little pouches all around the skillet so I’ll add some to the outside Circle and then in the center I’ll put like even a bigger dollop of it you’re either.

Adding your ricotta here you’re adding your shredded mozzarella here you’re adding your fresh mozzarella slice this here basically whatever cheese you’re adding make sure just don’t throw it all on top in like one big Heap make sure you have little bits sprinkled all around the dish so when you’re taking like one big spoon to serve it you have.

A little bit in every single piece you’re serving if you want to add salt and pepper I did I love that salt and peppery taste on just the top layer after this was done I put the top back on it and you can either leave it on the stove top or you can put it in the oven just to be melting the cheese so the cheese is the same temperature as the.

Sauce it’ll go pretty quick basically like 3 to 5 minutes is really all you need here and then once you’re done and the cheese is the same temperature as the sauce the nooi the vegetables are cooked down if you have spinach the spinach is wilted and cooked down you can remove it you can top it with any fresh basil fresh parsley if you’re.

Adding a little bit of Parmesan cheese on top and you can get ready to serve it I love serving this dish with some glutenfree garlic bread on the side I have served it with a side salad a tomato mozzarella Capri salad would be a really fun dish to serve this with as well basically anything you would serve normal Italian food with if you guys.

Love garlic bread definitely think that’s like Top Notch for serving this recipe with so there you guys have it it’s an easy 30 minute one pan meal you have minimal ingredients I mean literally it’s things you probably already have in your pantry to make a simple pasta dish but you can just translate it into this dish to make it a.
