Hello and welcome back to the Yano bite YouTube channel if you are new here my name is Christy today I have the perfect summer recipe these are so easy this involves no baking it just has to set up in the fridge this is like a thre layered dessert with a shortbread kind of cookie crust a date caramel in the center and then the top layer is this.

Hard Chocolate shell so let’s waste no more time and get started so you’re going to need almond flour coconut flour dates coconut oil maple syrup vanilla chocolate chips and salt and the only special equipment if you even want to call it that it’s going to be a food processor and your microwave and I’m going to do this in an 8×8 glass dish.

We’re going to want to make the base layer of this dessert bar which is going to be a no baked shortbread kind of cookie crust I’m going to use the food processor for this so I’m adding in 1 cup of almond flour and 1/2 cup of coconut flour then I’m adding in my coconut oil and a little bit of maple syrup for some sweetness if you want to.

Use honey instead you can totally do that as well so I’m just going to pulse this in the food processor until it is all combined and you might want to open up the food processor and kind of scrape down the sides as you go if you have to it will look crumbly but if it has the right texture you can actually squish it and compact it together and it will.

Stick so I’m going to press this cookie crust all the way along the bottom 8 by8 glass dish with some parchment paper and make sure I get it packed in there really good edge to edge but it doesn’t have to be perfect because we’re going to layer this up with what is next our date caramel this is also going to be made in the food processor so I just.

Rinsed it out it’s not perfectly clean but it’s totally fine you’re going to need to soak your dates before you make the caramel so I’m just putting all the dates that I have left which is about 11 of them into a bowl covering them with some water and then microwaving it for 2 minutes I’m just letting the dates sit and soak for a little bit while I.

Measure out my other ingredients but they should be soft enough so go ahead and put the dates in the food processor and then to this I’m adding a little bit of coconut oil and a tiny pinch of salt and I’m going to pulse this in the food processor and this is going to take a little bit longer than the cookie crusted just because it is a lot thicker.

And stickier I also have some of the reserved soap liquid that the dates were in it’s pretty much just like a really sweet syrupy water at this point and I’m going to add that a tablespoon at a time to loosen this up a little bit I think in total I probably added about 3 tablespoons of that and after a few rounds of this like scraping down the.

Sides adding a tablespoon it is finally smooth and all I’m going to do now is just spread this over the cookie crust and try and smooth it out so we’re down to the final layer which is super easy all it requires is melting some chocolate and pouring that over the top so I have here some 72% dark chocolate that I’m going to do most of this.

Chocolate and then I’m going to add a little bit of semisweet in there but the dates are super sweet already so you don’t need like milk chocolate or anything too too sweet here so I’m shooting for about a cup of chocolate it might be a little bit less then I’m adding like a spoonful of coconut oil so I’m going to take my over to the.

Microwave and microwave that for 30 seconds and then stir it together and pop it back in the microwave for another 30 seconds until it is totally melted and smooth the most important thing is that you don’t want to burn your chocolate it might even look like there are still some solid chocolate chips in the mix but as you continue stirring it.

Around the leftover heat in the glass and from the other chocolate will melt whatever still left once you’ve got the chocolate spread all over the bars again you can go ahead and use a spatula and just try and smooth it out as best you can you can definitely just leave it plain like this but I feel like I want a little bit of texture in these bars so.

I’m going to put some nuts that I have in a plastic bag along with some coconut and just use the water bottle that I drink out of to break them up and get them like little crumbs and then I’m going to sprinkle that over the chocolate while it is still melted so that way they stick in there so now I’m going to take these over to the fridge.

For however long it takes for it to solidify and then we’ll check on it later and slice these up okay that came out of the glass really easily so I think it’s ready to cut now it’s up to you how you want to cut these if you want to leave them in bars more like a Twix or a Snickers you can obviously do that but I’m going to cut these into.

Squares so they’re a little bit more like a snack size these look so good and they’re held together pretty well I’m really impressed with how the cookie crust has held together even though it wasn’t baked and the date caramel has set up really nicely it’s not like squishing out of the edges and I must say even though it’s optional I really.
