Proper activation of the sourdough starter is crucial, involving the addition of rice flour, water, and a sweetener, allowing it to sit in a warm environment overnight until bubbly.

During the proofing stage, the dough should rise only slightly, about 1.5 to 2 cm, which can take up to six hours depending on the ambient temperature. This is different from traditional yeast dough, as sourdough requires a gentler approach to judging readiness. Baking should occur in a preheated oven at 220°C for about an hour, ideally with steam for a tender crust. For a thicker crust, the lid can be removed after 45 minutes to continue baking at a slightly lower temperature.
