From Gluten-filled to Gluten-free: My Journey to Better Health

Hi guys welcome back to my channel it’s Valerie here the Henderson house and I’m telling you about my glutenfree journey today is my Olive and feta sourdough gluten-free sourdough bread so good to tell you my gluten-free story today because I get a lot of questions.

Like why did you go glutenfree Valerie that’s one of the biggest things I get asked all the time let me tell you my glutenfree story my issues with gluten started the moment I was born all right how do you know that I know that because one my mom told me all of these things about my health as a child as an infant little child and the things that.

I struggled with and how her as a as a mom she learned she was learning new things all the time so my mom uh right so I was born in 1991 they didn’t have Dr Google right Dr Google wasn’t a thing and so she couldn’t just look things up um all the time like we can’t WR literally at our fingertips she had a research and just live life and figure.

Things out I was the only of my mom’s seven kids I was the only one that was induced so pin and some other thing painkillers and stuff were used for my mom and I was the only one I was early um the only one that was induced and literally from the moment I was born I had.

Problems and I had a sensitive tummy U but my mom will tell you she just didn’t know better back then she didn’t have anyone telling her that she needed to cut out Dairy and gluten and things like that to help her baby she didn’t know those things back then right she should have anyone telling her those things but my gut was literally from the first week.

Of my life KY my parents remind me all the time that I was the longest year of the their life right but as a baby I struggled with chronic like The Chronic yeast infection started when I was a baby guys okay so my gut was not happy as a baby and I started have I got thresh as a baby then as a little girl I suffered.

From chronic yeast infections all the time and I didn’t understand those things right I didn’t you know I was a little girl and then I suffered from what’s called keratosis Polaris looks kind of like a rash okay that’s keratosis Polaris I suffered from that for years I as I grew up I.

Got horrible acne I struggled with inflammation gut problems I hormonal issues so as I got older more and more things started exposing themselves in my health and my mom was really good she like learn learned things every kid like every kid she started she learned new things I just assumed you know when I was little.

I was just this more inflamed little girl like having like I was just chunky right I just assumed that’s what I was and I was always self-conscious about it um and then as I became an adult I went to college I just you know I didn’t care about my health I didn’t care about my body I didn’t take care of myself my mom would tell me all the time to make.

Changes but I didn’t listen was stupid so it wasn’t until after college where I’m struggling with all these health issues from hormones to inflammation to gut problems to skin problems like my acne was so bad I had to wear so much makeup to cover up my acne 25 I went to the doctor and I was like I.

Just needed some answers come to find out that I had a lot more problems going on than I realized at 25 I had precancerous cells in my cervix I I was told basically by the doctor that I would most likely be infertile if I didn’t start making changes to my life and be put on she was either like you can be put on x amount of this.

Medication birth control whatever but you may never have kids and I was like well I don’t want to do any of that I want to make changes in my life so so that was kind of my wake up call was when I was 25 had all these health issues horrible hormonal imbalance like my hormones were so bad like my my.

Thyroid my adrenal like it was just so bad I was only 25 granted my body had gone through a lot and had literally just never really valued stey my body well and then that changed so 25 started making changes and so in the beginning of 2017 I cut out gluten and it was the.

First time I had ever just stopped I was like cold tur didn’t touch it and within months guys within months maybe even less than that like I started seeing changes like the first thing I started noticing was my skin U my Kos little Polaris um that’s started going away uh and I had deal with that my whole life and so at that point I was almost 26 at.

That point and I was really like I had never been able to not get rid like I didn’t know how to get rid of it I thought it was just my skin like all my hormonal issues cleared up my cervix healed up everything healed up and within a year I went back to my doctor for like follow-ups everything was gone everything was healed I had.

Done other things but the first thing that I changed was cut out gluten and it was within the first few months that I saw my body drastically change like the inflammation of my face and my joints um because I would always feel like iny and pain because I was so inflamed and the gluten was a huge proponent of that um my gut health got.

So much better um my skin got better my Eczema went away my keratosis Polaris went away I never I have never had another yeast infection since I stopped eating gluten ever like so gluten so many people are suffering from gluten intolerances not just like I don’t have Celiac okay I don’t have Celiac people who have Celiac is different or a weed.

Allergy that’s different gluten was literally the source of so many of my chronic problems so many of my chronic problems and so if you’re watching this and you’re looking for answers for just some things in your lifestyle or even your kid maybe you’re trying to figure out why your kid keeps breaking out with eczema or has this.

Bumpy thing on their arm or just really suffering from inflammation or gut problems cut out gluten just don’t give it to them it’s so it’ll change lives to just like not eating gluten is just so good for you but learn to make it yourself I learned and I taught myself how to cook and to make and B my favorite gluten-free foods and.

Guess what I love it I make my own gluten-free sourdough bread and it is delicious and it’s this fermented yummy good food for my gut and I have a master class on that if you want to learn how to bake Wen free sourdough it’s wonderful and making gluten-free food doesn’t have to be hard for real ing ingredients you can make good delicious.

The inflammation the pain there were so many things as a kid and as like a teenager and as a young adult they were just so embarrassing and like I felt like they were embarrassing but I didn’t know that I could change them and then I didn’t want to listen to when people told me I needed to change my lifestyle I didn’t want to to listen to what they.
