One intriguing recipe involves creating vegan minced meat using textured vegetable protein (TVP). The process begins by soaking 300g of dried minced soy in hot water with spices like Ras el hanout and smoked paprika. After draining and rinsing the TVP, it is sautéed in olive oil until browned, followed by the addition of flavorful liquids such as low sodium soy sauce and tomato sauce. This method not only provides a hearty base for various dishes but also allows for customization according to personal taste preferences.

Another delicious option is a miso glaze that can elevate roasted vegetables. By whisking together ingredients such as olive oil, maple syrup, light miso paste, and spices, you create a flavorful coating for vegetables like sweet potatoes, mushrooms, and zucchini. Cooking meals from scratch every day is great but what’s even better is having time to do the things you love or just rest i have a meal prep here that can work for everyone whether you’re an amateur or advanced cook and at the end of the video I’ll show you how I combine the meals let’s start with a vegan egg salad in a deep bowl I mix almond yogurt.

With nutritional yeast turmeric black Indian salt himalayan salt and dried dill i add dijon mustard but if you’re not a fan you can skip it or add less i mix everything well making sure it’s consistent then I move on to the first egg substitute firm tofu which I dry well and then cut into small.

Cubes i mix them into the sauce until most of the cubes are covered in sauce the second egg substitute is silk and tofu i love combining them together because it feels like an interesting mix of soft and firm i do the same with the silk and tofu i love adding fresh chives and dill.

Sometimes spinach or green onion i mix everything well but gently without mashing the silk and tofu too much i transfer it to a sealed container and store it in the fridge it can last up to five or six days next I move on to preparing ground meat which I make from TVP which are dried soy I soak for about half an hour.

With seasoning and hot water this time I use slightly larger grains than usual so it’s better to soak them for at least an hour next I prepare a sweet potato and vegetables with miso i make a sweet umami glaze with miso maple syrup salt spicy paprika olive oil rasal hanut and zatar which I added last.

Minute i sliced the sweet potato in half and brushed the inner part place each sweet potato with the brush side down and bake it in a preheated oven at 200° Celsius for 40 minutes until they soften and a fork can easily be inserted sweet potatoes will be.
