Welcome into Taylor kitchen today we are making one of the most iconically delicious desserts and people think you can’t do this in your own home it’s something you might get at a fancy restaurant but it’s actually quite simple and so wonderful easy to do I’m going to show you just a few simple steps that you will have perfect get.

This chocolate sule have you ever had a chocolate sule probably not made in your own home right maybe at a really nice restaurant um often times they won’t even do chocolate suets but it’s actually really easy to do I’m going to show you just a few simple steps um that will make sure your suets come out perfectly every time and you can use.

This technique for any type of sule dish not just sweet but also savory like a cheese sule or think in the summer if you want to do a berry sule strawberry sule whatever it might be um and I start by using these little rakins you can actually I’m going to show you to use um a teacup a small coffee cup as well but I have ramkin I will link them below cuz.

I’ve had these for years my oven is ready um and I’ve buttered the ramkin a little bit of soft butter if you sugar your ramkin actually it gives the Su something to grip and rise with so as it’s like climbing the ladder of your little Su dish uh your little ramkin so I have a little bit of sugar in here and what I’m going to do is just.

Swirl it around and tap and then the excess I will release into the next ramkin and I’ll kind of go through I have six ramkin and two teacups and we’ll see how far I get with this I’ve actually done this with coconut sugar as well um and it worked out just fine you also have that nice little.

Coarse crispyness to this around the edges that just create a beautiful beautiful Su so in here I have 12 oz of dark chocolate now I’m not using any sugar in this the dark chocolate is the only sweetness I really really like it like this and then into this 6 tbspoon of butter and I’m going to melt this in my.

Microwave catch this this is awesome okay now I need to crack six eggs I’m going to do them super duper carefully one at a time because I want to make sure no egg yolk goes into the whites or they will not whip they can’t have any fat you can do it in two shells or you can do it right through your hand like.

This getting all that white in one bowl and I can put the yolk in the other and before I go any further I’m just going to take those Whits and put it in my bowl just in case I have a mishap I don’t want to waste more than one egg at a.

Time okay there’s the last white going in and then I just need to start my beater on low and we’re going to let a lot of air incorporate into these whites this is where you really need to take your time it’s difficult to do this with a hand mixer because you have to start low slow and go for quite some time but if you do it in a stand mixer like this.

It makes it Go much easier not impossible to do it the other way also not impossible to do it by hand with a whisk but just like that and if you start it slow it gives more time for smaller air bubbles to incorporate into the egg whites so that will give you a steadier more consistent rise in your suple to my.

Whites I’m going to add a tiny tiny pinch of salt and because I don’t want to add any more sugar to this but I do want something to help it stabilize so I’m going to add two elements one of which is allulose now you can add a tablespoon of sugar if you want to I’m just trying to sck steer clear of any added sugar in.

As much as much of our food as we can so I’m going to add a tablespoon of this check on that chocolate now and cream of tartar cream of tartar is not a cream it’s not tartar sauce something that is used for tartar sauce um it is tartaric acid and it helps things to stabilize like egg whites so I’m going.

To add a half a teaspoon in usually don’t need a whole lot of cream of Tarter just a little bit will do you and I think at this point I can turn up my speed just a little bit mhm I think that that’s going to be just about perfect oh yeah all right my butter and my chocolate has melted very very well.

Together and now I’m just going to add in those eggs and I’m going to whisk this up before I start adding in the whites one of the things I love about this recipe is that you’re not wasting the yolks to use the whites or the whites to use the yolks you use the entire egg just nice and separated and.

That got super thick so we move on to the next step which you have to have a little patience for but it’s folding in all these egg whites into this chocolate mixture and start um by taking a small portion like this and then just lighten this mixture up with every little bit of the white that you add you’re going to lighten the.

Chocolate and so although I was a little aggressive with this first addition the next couple of additions I’m going to be so gentle with because as I mix this not mix fold so you want to encircle the bowl and go down and up and down and up so that you don’t deflate all the work that you just put into those egg whites that would be very sad wow another big.

Heaping portion of egg white goes in and take your time with this you don’t want to hasten it you might be tending to want to hasten it because it takes a little bit of time to fold it appropriately but this is what gives your sus a professional rise you’re not going to believe how amazing this will be when.

It’s all said and done it’s just gorgeous this is the part where I would say you need to be precious with it my precious at this point you want to whisper so it’s not to deflate the whites I’m just kidding but you know don’t want to waste any of the whites wow that’s a lot that’s great though okay I can f my.

Deltoids my deltoid is like we worked it out yesterday so it needed a rest day it’s probably like my my friends who cut hair it’s probably like what they feel like all day long you can see I have this pretty well Incorporated there’s just a few tiny tiny streaks of egg white and that’s.

Okay by me okay here we go so we’re going to fill these Sul dishes and you want to try to keep the exterior and the rim neat because if you mess it up it’s going to mess with the rise of the sule so I’m just scooping this all in here using a cookie scoop to try to get even portions and you’re going to fill.

Them all the way to the top actually so I’ll come back in here with round two for these guys all right and I’m going to do I think I have enough batter here to do one in the teacup just to show you that you don’t have to be super fluffy you’ll still get a remarkably delicious.

Dessert I will actually clean out the rest of this batter for the teacup one all right so there’s the one in the teacup totally unfancy it’s still going to be absolutely delicious now to go one extra step in these you don’t have to do this but give them a little jiggle to try to even them out as much as possible.

Without deflating it and then you’re going to take your thumb and you’re just going to go around the rim of this and that’s going to give it that kind of professional collar um that you see so often in suls I just put my thumb in there and I go around the rim just lik okay so these are going into my 400° oven for 16.

Minutes the great thing about these is that you don’t have to make them last minute like when your guests are arriving and you’re trying to get dinner on the table and you’re making these and putting this in the oven so the desserts ready as soon as we finish dinner you don’t have to do that you can make them in advance make them earlier in the day.

And that afternoon I have let them set in my fridge for 2 to three maybe as much as 4 hours and then pull them out and put them in the oven while people are eating and so when they’re done with dinner these come out you just need to add a couple of minutes if you’ve chilled your suets before baking them 18 minutes instead of 16 and they’re still.
