Mediterranean Magic: Mouthwatering Greek-Inspired Salmon with a Twist

hi friends my name is Kim welcome back to Healing Place Cottage welcome back to my kitchen I am so happy to have you with me today today we’re going to make a quick recipe from lower your blood sugar cookbook I think we’ made a recipe out of this already um we’re going to make brick style salmon salmon was on.

Sale um this full fillet of salmon is normally I think $12 and it was on sale for $6.99 so I got some and I cut it in half and it did have the skin on so I took the skin off because I’m not a fan of that so the first thing we’re going to do is put some olive oil in the pan and we’re that’s happening we’re letting the pan.

Get hot and we are going to add one and 3/4 cups of diced tomatoes drained and I have those so we add those to the pan and add six pitted black olives coarsely chopped and I have sliced black olives I now have sliced back black olives on the floor.

So we will give those a chop and I apologize if the lighting is poured today I my battery and the remote that works my overhead light and ceiling fan um is out and I can’t find a switch on the light to turn or yeah to turn it on manually so uh next we’re supposed to use four pitted green olives coarsely chopped so we will I got those and what.

I’m going to do because obviously I didn’t use all of them I’m going to go ahead and put these in Ziploc baggies and freeze them because I’m sure that I will have another recipe that will call for them and I am a huge fan of all the olives add those.

And one tblspoon of Capers rinsed or yeah rinsed and drained I did that and two cloves of garlic my garlic has not been staying fresh and I think maybe it’s because I do all of this cooking right here next to it and it’s a lot of heat um so I’m going to have to figure.

Out a way to put my garlic somewhere else but that’s accessible and we need black pepper it calls for parsley I don’t have uh fresh parsley I may have some dried parsley I do add a little bit of that so we added 1 and 3/4 cups of tomatoes.

Six black pitted olives coarsely chopped four green olives coarsely chopped 1 tbspoon of Capers rinsed and drained two medium garlic cloves 1/4 teaspoon of black pepper and it calls for lemon juice how much lemon juice 3 tbsp oons of lemon juice that’s probably 3 tablespoons and then we want to bring it.

To a simmer stirring frequently simmer 5 minutes or until reduced by about 1/3 so we’ll let this do it okay it says to move our sauce to the side and then add our salmon to the pan and we’re going to let this cook for about 15 minutes or until it’s flaky says to spoon the sauce over the.

Salmon I missed a step it said to cover it so we’re going to cover it now that I’ve lost 70 lbs um I have bought shorts and I’ve actually worn shorts out in public which I haven’t done in I would say probably 30 years not 30 years maybe 25.

Years and um I wasn’t self-conscious at all and um just really wanted to share that with you because that’s a big milestone for me okay I think our salmon is done I have a piece right here in the pan I am going to try it straight from there get some olives tomatoes that is awesome that is I mean it is.

Absolutely awesome I love olives so if you like olives this is a perfect dish for you it gives you the different um tart um tastes of the olives the Mellow of the ripe olives the tartness of the um green olives and the lemon juice the tomato and the garlic it just all Blends together beautifully and it really is delicious and really is good for us let.

Me give us our uh nutrition information so in a 4 oz fillet and half a cup of sauce you have 310 calories 20 G of fat but this is good fat remember we’re eating salmon so that we can raise that good cholesterol um up for me the cholesterol in this is only 60 Mig so that’s good uh.

Carbohyd hydrates 8 G so it’s low in carbs fiber 3 G sugar 3 G and protein 24 G so I think we have a winner here I will absolutely make this again I will eat this either with salad or with a little bit of rice it is phenomenal and um it cooked itself I didn’t even have to turn the fish because we covered it and all I had to do was cook it so.
