Hey everybody welcome back if you’re new here hi I’m Mercury so today I am I’m home it’s chilly out but I’ve been making a lot of soup and when I make a lot of soup I tend to have some things on hand like carrots and I don’t know if it’s just me and like where I live but when they sell carrots they sell like a whole big bunch.
Of carrots they don’t sell like a little thing of carrots and I always have way too many carrots that I need for the soup and then like if I don’t I I there’s only so much soup I can make at a time because because I don’t have a lot of storage so I like can only freeze a little bit of it yada yada yachty long story short I.
Need to do something with all these carrots and I’m not like a Bugs Bunny kind of person I don’t like raw carrots so figured Let’s uh let’s find something to make them taste yummy I went online and I found a recipe on bakerita which which is like one of my favorite recipe websites everything I’ve made from them comes out good so I have very high hopes.
On this for some carrot muffins um we’re going to do them they’re they’re good for ibdaa I’m making one modification to make them ibdaa compliant other than that they should be good to go so these recipes if they are not already paleo they’re usually pretty adaptable for Paleo K Whole 30 um they’re pretty adaptable there’s a.
Lot of overlap so there might be some substitutions needed to make it right for each specific diet but they’re usually pretty close usually pretty close so let’s go make some carrot muffins so here is our ingredient lineup in no particular order whatsoever we have our carrots honey is the substitution got some almond milk.
Applesauce oat flour nutmeg almond butter this is coconut oil salt vanilla baked soda another substitution it also calls for baking powder but so I’m going to use extra baking soda and I’ll use a little bit of um apple cider vinegar then I have flax meal this is walnuts and almond flour let’s get cooking this recipe is actually really.
Straightforward mixing up the the wet ingredients mixing up the dry ingredients mixing them together pretty simple pretty straightforward so let’s do it I’m having one of the those situations where the the cap doesn’t want to come off so I have one of these grippy things we’ll see if this.
Works ah yes excellent these grippy things it’s like super simple but so effective love it so now that I got the batter all mixed up I have these if you’ve seen me make muffins or anything in the muffin tin already you know how much I love these these are a silicone baking like.
Muffin uh muffin wrappers basically right like cupcake wrappers and they’re they’re like dishwasher safe and microwave safe these are awesome I love them and basically you take these you have your muffin tray and you just go plop right like right in and you just line your your muffin tray with these but because they’re the silicone they’re.
Like nonstick they’re super easy to clean it just it makes this process so much easier these these have been like a muffin game changer for me so definitely recommend the uh the silicone uh little muffin little muffin liners here so those are in the oven for for about 20 minutes and we’ll come back and check.
On them so the muffins are out of the oven and they are looking good they are smelling delicious so I guess it’s time we give them a taste right let me I’ll grab this one and we’ll go taste it so I got my little muffin Let’s uh let’s give it a taste so we’ll peel back the the silicone it’s still very warm so I’m going to use the the muffin thing to.
Hold it we’ll give it a try it’s good it’s good it’s it’s not overly sweet it’s not underly sweet I like it I like it it’s not and the carrot is very mild I’m I like carrots to like Flavor things but I’m not a huge carrot fan I like this I’m not overpowered by the carrot it’s just a mild carrot flavor and it’s really.
Quite delightful I like it if I would make one change I would add some raisins to it I would give it a little little ju with the raisins a little extra pop or a little extra sweet and like I know it’s not a cupcake right like it’s not supposed to be too sweet but I feel like a ra some raisins in here would be a.
