If you love coconut, you’ll find an irresistible treat in the Impossible Coconut Pie. This delightful dessert can be tailored to fit various dietary preferences, allowing you to choose between all stevia, all sugar, or a combination of both. The recipe features a unique aspect: it creates its own crust, making it not only delicious but also easy to prepare. With the right balance of ingredients, you can enjoy a coconut pie that is both satisfying and adaptable.
The recipe includes simple components: three eggs, a quarter cup of melted butter, vanilla extract, gluten-free flour, baking powder, and a mix of stevia and sugar. To enhance the flavor, unsweetened coconut flakes are added along with a creamy mixture of milk, which can be adjusted using heavy cream and water. The preparation is straightforward, involving whisking the eggs and butter, combining the dry ingredients, and finally stirring in the coconut before baking to a golden perfection.
