Decadent Delights: Crafting Flawless Gluten-Free Peanut Butter Bliss!
Hello you guys today I’m going to show you how to make my incredible amazing addictive best ever gluten-free peanut butter cookies these aren’t your average one note peanut butter cookies they are better when I served them to my family they deemed them the best peanut butter cookies they’ve ever had so let’s get into it and I’ll show you how to make.
Them we’ll start by making what I call the peanut butter fudge chunks I’ve got one cup or 240 gram of peanut butter in a small bowl here and I’m adding to that a half a cup or 100 G of refined coconut oil and I’ll just microwave them together for 30 to 60 seconds or so or until the coconut oil is completely melted I’m using refined versus.
Unrefined coconut oil because I don’t want the flavor of coconut in these cookies you can use unrefined but you will have that flavor of coconut okay I’ll just add a half a cup or 63 G of powdered sugar to this and mix it through I’m going to actually switch to a whis now so I can get a nice and smooth.
Texture all righty that looks good I’ll just grab my very small baking sheet this is actually a an eighth baking sheet or 6 by 9 in you can have a larger one I just have these very small ones and I’ve lined it with parchment and I’ll just pour this right in and even it out a little and I’m going to pop this in the freezer for 15 minutes this is.
Kind of like making your own Magic Shell y’all it’s like the same concept now we can get on with making the cookie dough I’m going to add a cup or 226 G of soften butter to my mixing bowl y’all can use a handheld mixer for this I just always have my KitchenAid on my counter and it’s so much easier to just break it out than it is to go find.
My handheld mixer I’ll Whip this up brief just to get it nice and smooth and I’ll add to that a cup or 200 g each of granulated sugar and brown sugar the combination of these two sugars makes these cookies extra soft extra chewy extra fudgy which is what I really like and we’ll beat that up for about 2 minutes until it’s nice and.
Fluffy all right that’s perfect I’ll go ahead and add in two large eggs that are room temperature make sure all of your ingredients are at room temperature guys it makes them emulsify so much better into the dough okay now we’ll add in a whopping 2 and 1/4 cups or 540 G of smooth peanut butter not the natural stuff y’all like.
Skippy or GIF or something like that is the best to use for this and then this is one t tablespoon of vanilla extract and I’ll just mix these through quickly okay now I’m going to add in 2 and 13 cups or 327 G of Kim’s gluten-free all-purpose flour blend and also 1 teaspoon each of baking powder and baking soda as well as a half a.
Teaspoon of kosher salt no need to pre- whisk them just dump them in the bowl oh my gosh try to add these into the dough my flower went everywhere y’all I forgot sometimes when I’m using this stupid scraper blade it’s great for not not having to stop and scrape the dough but then it flings the flour everywhere so be careful if you have one.
Of these scraper blades all right the dough is done now I just grabbed my peanut butter fudge from the freezer and this is what it looks like when it’s solid it’s just one big solid chunk and I’ll just break this into irregular chunks and I got this idea after I had a Minnie Mouse bake shop peanut butter cookie at Disney.
World many many years ago and I loved them that was like the best peanut butter cookie I’d ever had and I’ve been trying forever y’all forever to make those cookies just like what I remember they’re not quite just like it but but they’re actually I think better I haven’t had them in years because I can’t they don’t make them gluten-free.
But I’m telling you these cookies are the bomb so I would say they are better than Minnie Mouses y’all okay now we can add these to the cookie dough and we’ll just fold them throughout some of them may break up and that’s perfectly okay they’re going to get all Ooey and gooey in the oven anyway all right I’ve got my baking.
Sheet line with parchment and I’ll scoop out pretty substantial scoops of dough this is a/4 cup or 2 oz scoop and I’ll put a link up for this um they are huge I’m only putting five cookies on one sheet tray because they will spread out pretty significantly they’re ginormous cookies y’all like I said I’ll take a fork and I’ll just cross-hatch them just.
A little bit no sugar necessary on the outside there’s plenty of sugar on the inside um don’t smash them too much though you want them to be at least a half an inch thick or even a little thicker and we’ll just bake these at 350f for exactly 10 minutes remove them from the oven and let them cool at least 10 minutes and then take the entire.
Sheet tray with the cookies and put them in the fridge to let them set and here you have it y’all the best peanut butter cookies glue glutenfree or not they are almost like a cross between like a cookie and fudge they’re soft they’re a little chewy a lot of fudgy and with an enormous amount of peanut butter flavor not just a hint of it y’all make them.
You will not regret it enjoy
