Mastering the Art of Tender, Flavorful Braised Chicken – A Gluten-Free Delight!
Hey everyone welcome back in today’s video I’m going to show you how to make bra chicken this is a French stewed chicken that is brazed in red wine and it is fall off the bone tender and juicy and this was just so perfect for a cold rainy day so along the way I will show you a couple different swaps and methods you can use um um if you don’t have some.
Of the ingredients on hand feel free to swap it out for whatever you like or have so here’s the recipe um and to start we are going to generously season some chicken thighs with salt and pepper um both sides I patted them dry first and then just went to town with the salt and pepper next we are going to add our chopped bacon into a preheated Dutch.
Oven or oven safe pan um this is a one pot recipe so we’re just going to do everything in the same pot so after your bacon is cooked and crispy we are going to set it aside and then we’re going to uh add in our chicken thighs we’re going to do skin down first um we want that skin to get nice and golden brown.
And crispy and this is going to ensure that the chicken stays nice and juicy and tender and it also is going to impart a lot of flavor to the end result so once your chicken is browned we’re not going for fully cooked at this point just browned we’re going to set it aside on the same pan with our bacon and then we’re going to add in our veggies so we.
Have our carrots and celery and then we’re also going to add in our garlic and onion and I apologize I somehow forgot to film that part um but once our veggies are sauteed for about 2 minutes we’re going to deglaze with our wine now if you don’t have wine you are free to swap it out for your liquor of choice whether it be Brandy whiskey or bourbon.
Just as long as you make sure it’s gluten-free if you are gluten intolerant um and we’re just going to let this deglaze so we want this to cook down so that all the alcohol is released and um we’re going to do that until the liquid has reduced by about half um so it’ll take about 3 to 5 minutes here you can see it has reduced um and then I’m going.
To add in about half a can of tomato paste this just adds a lot of richness to the Dish and also helps um thicken the stew as well so here I’m just going to let it caramelize for about a minute or two and then I’m going to add in a tablespoon of brown sugar this is going to cut all of the acidity that we have going on from the wine and from the.
Tomato paste um and it’s just going to create a more well balanced and rounded flavor profile so next I’m going to Salt and Pepper um I always like to Salt and Pepper in layers um in seasoning layers because it just adds more flavor um and you can really taste the difference in the end result as well so after we’ve done that I’m going to add.
Two cups of chicken stock um and if you are interested I do have a video on my channel of how to make your own chicken stock simply from scraps from your kitchen um so feel free to check that out um so once our liquids have come back to a low boil we’re going to add our chicken and our bacon back in and then we’re going to.
Give everything a good stir make sure everything is well Incorporated and then we’re going to top with some aromatic so I’m using freshh Thyme and rosemary um you can use whatever you prefer whatever is your favorite this is what I have on hand um I cook with th and rosemary all the time pun not intended and then I’m going to.
Add some fresh lemon zest this is just going to brighten it up a bit um and then after we’re going to put the lid on and throw it into the oven at 300Β° for about 45 to 50 minutes until the chicken is tender and then after that we are going to separate the chicken so we’re going to remove the chicken and the sprigs of.
Thyme and rosemary and we are going to thicken our sauce to make that um like thick gravy so um we’re going to use a cornstarch slurry which is part water and part cornstarch I have 1/4 cup of water and 2 tblsp of cornstarch you want to make sure you uh mix that very well before pouring into your liquids because if not you will have some clumps so.
We’re going to mix it really good pour it in and give it a really good stir and you can see it start to thicken and then at that point your stew is done you go ahead and add your chicken back in and we topped this with some creamy mashed potatoes and I garnished with some more fresh lemon zest and some chopped parsley and that is it it was so.
