From Plot to Plate: Whip Up Wholesome Delights with Fresh Harvest!

Welcome back to the Padilla family Homestead today I am sharing with you a quick and easy and delicious meal um I have had more requests for these um this is just something that uh we whipped up for my friend and I and basically we have odds and ends coming in out of the garden that are left over or that we have sitting in the freezer.

Um this could be leftovers from grocery shopping or whatever so I have a cast iron pan with some avocado oil in it and I had a half an onion I chopped up and I popped in there and I have some uh red bell peppers and a few green um it was a few green na aenos so they weren’t spicy and I had two pieces of okra that we had gotten from the garden um all of those.

Things take longer to sauté so I always start with those um and then when I’m about ready to put in the zucchini I put in um like six or seven green beans that were chopped up stirred that up and then this is one large medium large zucchini um it’s really only a few things so a half an onion um maybe one.

Bell pepper um then it was like two na aeno Peppers um two pieces of okra like seven green beans and a zucchini and then I add some salt and some pepper I’m not adding any other herbs this time and I’m just sautéing until um it’s fork tender you really want to make sure your onions and your.

Peppers are pretty softened before you put in um your green beans and your zucchini because the salt once you add in the salt right here it’s going to help draw the moisture out of all of these vegetables and that means that they are going to cook down a lot faster um which is good I realized I needed a little bit.

More avocado oil so I popped that in and I just keep um stirring and I I have a lot more rest time in between here that you don’t see um but that is the gist of um what you do you just let it heat up um till the zucchini is fork tender and then you’re going to serve it up um with this meal today so I didn’t want just this um it was definitely a.

Higher uh vegetable content um a lot of times I’ll have more of a protein with my meal but today’s I did not do that so I really try to balance Savory with sweet with salty with an acid um all of those things I’m learning that’s what helps me um feel like a meal is complete and so this kind of gets.

That savory saltier bit um and it’s bright and it’s color ful and it’s beautiful and it’s got different textures in um the dish so I decide that I’m going to chop up um a tomato and um both my friend and I ate half the tomato and we drizzled some dark balsamic vinegar over the tomato and I just did big chunky pieces and then I got a scoop.

A good heaping scoop of um sauerkraut that has it’s roasted garlic sauerkraut that we had bought at Harps which is a local grocery store and so I made sure to serve that up um I could have sprinkled this I should could added some fresh basil I didn’t have that right here um I could have sprinkled it with some flaky salt.

On top of the Tomato I didn’t do that um my friend was making some bacon cuz she wanted a little bit of protein with it um so we tried out this new bacon from this um new place that had it on sale and it was okay it wasn’t my favorite but um we did that so we had lots of veggies we had the acid from the tomatoes and the balsamic and then we.

Had the kind of Funk from the um sauerkraut and the fatty and the meat from the bacon and that was it I hope you enjoy we’ll see you on the next video
