hey there it’s Stephanie with the ranchers Homestead welcome back to the channel and we’re going to do a talking video today so this is my tip to in my oldfashioned kitchen the gluten-free Edition this is where I just do a talking video more on knowledge and different things that have to relate.
With gluten-free cooking from scratch in your kitchen so um some I know I have a lot of gluten-free followers and over the last 34 years or so that I have ate gluten-free um I have gained a lot of knowledge in just this area and how to make things right because cooking from scratch gluten-free can be challenging but it doesn’t have to be so today what.
We’re going to talk about is how you can take a regular recipe and make it glutenfree now there are a few things that you need to know when you’re looking at a recipe everyone always thinks especially when they’re new going to a gluten-free is the flour and of course yes that is where the gluten is the gluten is in flour but what people.
Don’t understand is that they use flour or wheat as a thickening agent in a lot of other things so the first thing thing you’re going to look at is the flour when you’re looking at a recipe if it’s calling for an allpurpose flour as long as you get a good gluten-free all-purpose flour you should be able to substitute one for one so if it’s one.
Cup of allpurpose flour you can go ahead and substitute it for one cup of gluten-free all-purpose flour here’s where it gets kind of tricky and you’ll have to jump back a few videos I can link it in the description on the different gluten-free flowers that I always have on hand and the different gluten-free flowers that you’re going to.
Want to use not all gluten-free allpurpose flowers are the same and so depending on which flour you use will depend on what kind of product you’re going to get and so because of that you want to make sure that you’re getting a really good gluten-free allpurpose flour I like cup for cup I also like um Better Batter and I also lately have liked.
Bob’s rad meal one for one flour I used to not I used to think they were kind of grainy but actually they have really stepped up their game and I do like it currently probably for the last two and a half 3 years I have made my own homemade gluten-free allpurpose flower blend I have that recipe shared in my digital cookbook which I can link in the.
Description and that flour is the most like cup for cup so I never have had a problem um with any product turning out right when I use cup for Cup in a recipe so I wanted to to make a flower that was most similar to it that would actually be cheaper and so I did that mostly because a lot of the flowers that are used in my allpurpose flower blend are.
Also used in my bread recipe um which I use in multiple different recipes and turn into different things so that’s why it is more uh cost- effective for me because I’m already buying those flowers in bulk then I just add them all together and make an all-purpose flower so the first thing you’re going to look at is the flower now if you did not have.
A good all-purpose flower blend you could build a FL FL and you could do you’ll need a grain flour and a starch and you can definitely do that but depending on what you’re doing you’ll need to add some kind of a binding agent and so I do have a video out on binding agents and when to use them if you have a good allpurpose gluten-free flour you.
Are going to already have the binding agent in it so it is nice to have that now let’s talk about if you’re looking at a recipe that does not have flour in it so um let’s see here let’s talk about maybe like teriyaki chicken so you have this recipe that you love your family loves but the teriyaki sauce that you normally Buy has wheat in it so you can.
Do a couple different things there are good homemade versions of Teryaki sauce out there or you can get a gluten-free teriyaki sauce and I’m trying to think the one that I get I get on Azure standard I’ll have to link it in the description cuz I can’t think of the brand right now but you can get a regular one and then all you have to do.
Is use the right sauce and the whole dish is gluten-free another trick when you’re talking gluten-free is um like my scallop potato recipe what makes those glutenfree that wouldn’t make them ordinarily gluten-free is I use an all-purpose flour that’s gluten-free instead of regular allpurpose flour so when you’re.
Looking at recipes I guess what I’m trying to say in this video is don’t throw out all your recipes if you’re new to gluten-free don’t throw out all of your your recipes like well I can’t make that anymore I can’t make that a lot of times they’re so easily adaptable and your whole family will love them for instance my gluten-free reron recipe um.
You can make that so easily gluten-free with and serve it to everybody and nobody would even know the difference so all it is you’re going to change out the pasta so you do the whole recipe just the same and I can link it I use gluten-free spaghetti pasta in it you can use just um whatever one you need but if you need to be gluten-free make.
Sure you use gluten-free pasta and the whole recipe’s Chang so you don’t need to throw out all of your recipes just because you have to eat gluten-free now they most all recipes are so easy to be adaptable look at the different ingredients and then you’ll just have to tweak a little bit where it says to use allpurpose flour make sure to use a.
Gluten-free allpurpose flour if it has things like a different salad dressing or um or a sauce or something like that that you know has wheat in it then nine times out of 10 nowadays you can find one or make one homemade that can be to your liking it is very very easy to do if you are struggling with what flowers to use and where to go make sure to.
