Today we are making homemade granola bars to start get yourself out a large bowl we’re going to take 1 cup of almond butter and today I’m making blueberry granola bars I’m borrowing the recipe from Love and lemons their version of these granola bars originally is a chocolate chip peanut butter peanut butter.
Chocolate chip granola bar which is really good and I will leave that linked as well but I wanted to share another option we’re also going to add in 2/3 of a cup of honey most homemade granola bar recipes I see are for peanut butter chocolate chip and that’s just a staple you often have those ingredients in your house or.
At least I do and and honestly sometimes I get bored of it we’re going to add 1 teaspoon of vanilla extract I have homemade vanilla extract right here and I’m going to add a heaping half teaspoon of kosher salt if you’re using table salt or fine sea salt for example I would do a/4 teaspoon else these I think will be.
Really salty next because I am doing blue blueberry granola bars I have the zest of one lemon and I think this is about a teaspoon you can always add more lemon and blueberry just go so well together and I think it will really add some brightness to these granola bars go.
Ahead and give those ingredients a mix together so my almond butter is UN sweetened if you are going to make the author’s original recipe the peanut butter chocolate chip ones I would use unsweetened peanut butter smooth peanut butter but unsweetened because if you use sweetened peanut butter along with all of this honey these are going to be.
Really really sweet so another wonderful thing about granola bars is you can alter the recipe to suit your taste or you can use whatever ingredients you want I think I may have done cashew butter if it was an option but I was just shopping at Aldi and they just had almond butter so that’s what I went with I just didn’t.
Think peanut butter and blueberry is what I wanted for these granola bars okay so once this these first ingredients are mixed together well we’re going to add 2 and 1/2 cups of rolled oats rolled oats not quick oats I have about 2/3 of a cup of dried blueberries I’m just using the bag that.
Aldi sells you can use something similar and then our original recipe calls for 3 tablespoons of papitas or pumpkin seeds I don’t have those but I had chia seeds so I’m adding 3 tbspoon of chia seeds I think those can be optional but again it just adds the papitas would add a little bit of a different flavor and texture the chia.
Seeds you won’t notice so much except maybe they’ll get stuck in your teeth um but they do add some additional nutritional value to your granola bars so go ahead and fold everything in get everything well mixed together make sure you don’t have any big clumps of your almond butter mixture and you.
Have no dry oats just hanging out and work this together until it comes into kind of a big ball of Oats so once you have everything mixed together it doesn’t quite look like a ball of cookie dough for example but you can see that none of your oats are dry anymore they all have some.
Almond butter on them and before I put this in our pan I kind of want to give it a taste test just to just to see what we’re working with here want to make sure I have a little bit of blueberry I’m very glad I added the lemon zest it really brings out the flavor of the blueberries if anything I.
Would add a little bit more lemon zest but these are still good where they’re at you can use your own discernment okay go ahead and get yourself out an 8 by8 baking dish I have mine lined with parchment paper and pour your granola bar mixture right in and then we’re going to press our oat.
Mixture into our pan really well and if you want to use the bottom of a glass or I have metal measuring cups I’m going to press my granola bars in and level you may need to spray the bottom of whatever you’re using the fat from the almond butter will usually help not.
Things get too stuck don’t be afraid to put some muscle behind it we want our bars to stick together once we’re done so these need to sit in the fridge for at least an hour these old-fashioned oats need time to absorb the moisture and help bind These Bars together I keep going back to the.
Chocolate chip peanut butter bars but I will leave the ingredients for that recipe Down Below in the description because I used more blueberries in this recipe than I would have chocolate chips if I was doing peanut butter chocolate chip but I’m going to pop these in the fridge for about an hour and then we’ll be right.
Back all right it has been an hour it’s been over an hour here we have our granola bars as you can see I lined My Pan with parchment you don’t have have to these aren’t super sticky but as you can see it made it easier to take them out of.
The pan to cut and you can cut them into nine or eight or however big you want them to be whatever size you want them to be I’m going to attempt to cut them into 10 but while I’m doing this what combinations of flavors do you think.
Would be good in these granola bars I was thinking maybe go back in there I’m not a big nut in my sweets person but I was thinking Maple pean using maple syrup instead of honey and then putting peans in place of of the blueberries and I would still use almond butter for that one maybe cranberry with the almond.

Heavy that’s good I would use possibly even less honey I might do a half cup cuz these are pretty sweet so again the beauty of a granola bar you can alter the recipe to suit your taste but these are really nice and again the one teaspoon of lemon zest brings freshness I would double that maybe triple that next time but these are dense and Hearty.
