Hi friends. Well, it is a gorgeous day today. The sun is out. It’s shining. It’s a little warm. Not too warm. I think it’s around 10° or so, so it’s still a little cool and there is a breeze in the air. It’s a little bit windy. Um, but I’m hoping to get outside.

Today. Um, and take advantage of the nice sunny weather. Um, it’s heavy pickup next week. Uh, so I want to get start getting some of the bigger items that you can’t put in garbage bags to the road. So when they start coming next week, I’m not chasing down the road after them. There’s story time. If if you’ve been with me for a while, you.

Know that story where I missed um a table that needed to go down and I forgot to put it down to the road and I heard the truck coming and by the time I grabbed it and then got to the door, it was starting to leave and I’m running out the road and it’s in the morning and I hadn’t changed. I was still in my pajamas in leopard print pajamas running.

Down the road in my subdivision going, “Wait, wait, wait, wait, wait, wait.” and they stopped and put the put the table on. So, u yeah, if you if you’ve been here for a while, you’ve heard that story. So, anyway, it’s next week and uh so I want we have a few things because we’re moving um Christmas tree, some other little bits and pieces that I’m.

Hoping to get gathered and put them out to the road. Um, if the wind goes down and it’s a and we’re allowed because they have burned different restrictions, so I’ll have to check it after two o’clock. But if we’re allowed, I’d like to um we have some papers that need to get burnt. And we do have like a fire pit thing with a cover on it, but you’re.

Still not allowed to burn in those um if there’s um fire burning restrictions and that. So, um, and I’m not going to do it if it’s still kind of breezy like it is today, just cuz it’ll get pretty big, the flames and things like that. Anyway, um, but this morning it’s Good Friday, so we are doing kind of a meatless day today. Well, I am anyway. Uh, but, uh,.

We’re going to do brunch in just a little bit. It’s more like lunch now because it’s 11:30, but my husband’s out filming right now. So, when he gets home, it’ll probably be 12. um soapy after that. And we’re going to do um some gluten-free um waffles. And I’m actually just going to use a mix. It’s one of these mixes I’ve used before.

Um but by Dune Dune Carin. I have I’m not sure. It’s a family-owned company out of Prince Edward Island, Canada. And they do really good mixes and um and everything I’ve made has turned out really well with them. I am still learning my way around gluten-free baking and how things work and cooking is that as well if you seen my last.

Video. So, um it’s good for when you’re first starting out trying to make that transition and you don’t know all and and we’re also um getting ready to move. So, I don’t want to buy all the ingredients in. We do have some one to one flour, but um I might probably see eventually down the line uh to kind of make my own flour one to one blend to.

See if I could make it any cheaper. Um I don’t know, it might not be. But um but anyway, so I am just going to make this pancake mix and turn it into waffles. And we’ve done this u multiple times. It makes about six waffles. Um so that’s enough to feed our family. I will, we do have some bacon in the refrigerator, about four pieces or so. Um, so I am.

Going to put them in the oven as well, so the boys can have that with with theirs. I’m just going to do the waffles. Um, and we have some bananas, too, if we want to eat that as well. So, that’s what we’re doing kind of for brunch with uh and then for supper tonight, uh, I’m going to make uh some macaroni and cheese, gluten-free.

Macaroni and cheese. So, um I’ve made this many times. I think we’re just going to do regular mac and cheese that I normally make. Um and then I might add some buffalo sauce. I don’t I’m not sure yet. I know the boys like the buffalo sauce. Kind of kills me, but anyway. And I’m also hoping to make some uh gluten-free chocolate chip cookies.

Today. Um, I going to just use the the recipe that I normally use, but then uh sub in the uh gluten-free flour blend, one to one blend, and hopefully we’ll see how it turns out. My flour blend is a a rice flour blend. So, I’m hoping to learn how to do oat flour blend as well to see if that makes any difference in the.

Baking. You have to excuse me, I keep coughing. Um anyway, so uh yeah. So I’m hoping we’re going to go make the waffles. I’m going to do some chocolate chip cookies and then I’m going to do some uh mac and cheese, gluten-free, and uh then hopefully get outside in the yard and get some stuff done there. And uh we’ll see what else we get into.

Today. Hey. Heat. Heat. N. Heat. Heat.

So, I was just down in the basement to grab the old Christmas tree, but it is at the back corner. So, um Rob is in an edit right now and once he finishes those videos, he’s going to help me move the huge boxes and everything that are out of the way. Um cuz we’ve started packing obviously all our stuff. Uh so I.

Can get that old Christmas tree down and out and put it down to the road. So, I’m going to go outside now and my neighbor is out mowing the lawn. Um and I’m going to start uh pulling a few things that need to go to the road from outside. Pick me up. Tell me.

Pick me up. Tell me. Hey, tell me up. Hey.

So, supper’s all done and we’re going to take advantage of this sunshine. We’re actually headed out. We’re going to go vote because it’s the first of the advanced polls, first day of the advanced polls. So, we’re going to get our voting done and then we’re going to probably go for a walk and then I’ll be.

Coming back to make some chocolate chip cookies. So, we’re home now. It was a lovely walk and we got our voting in. Um, I have the cookie dough now. So, I’m just going to get it onto the cookie sheet, put it in the oven, and bake it up cuz we’re going.

To head any moment now um into the living room and we’re going to watch a movie for family movie night. I can’t wait for these to cool off to try. So, I’ve never had a gluten-free.

Chocolate chip cookie, so hopefully it will be good. Mhm. So you can see that. Yeah, it has a really good texture. Putting it in the You can see it’s still wet. It hot. Putting it in the um fridge for a little bit to have it cool and and kind of um harden up a.

Bit, I think totally helped in the whole process. But yeah, it’s uh it’s pretty good. You can tell it’s gluten-free cuz you I can there’s kind of that little bit of a grittiness taste to it that um comes in some gluten-free stuff, but it doesn’t taste bad at all. It doesn’t uh taste bad at all. I think it actually for the first time turned out pretty.

Good. It turned out pretty good. So, I’m going to finish this off. We’re going to go watch a movie. So, I want to thank you so much for joining me today. Uh stay safe and be well and I’ll see you in the next video.
